Creamy Parmesan Garlic Brussels Sprouts
Here I am again with another brussels recipe just hoping my family will finally ALL get on board so we can eat them more often. I think at this point everyone just tolerates my desire to eat them on occasion. These are a fantastically easy way to make brussels and the creamy garlic Parmesan sauce is super simple but packs a lot of flavor. I sauteed the everliving out of my brussels because I love when they get browned and crispy.

Chicken, Bacon, and Brussels Sprouts Mac & Cheese
There is so much flavor packed into this great macaroni and cheese! Chicken and bacon...and 3 kinds of cheeses!
I'm still working on getting my family to like brussels sprouts and I think I'm at the point where if it's shredded, they are fine. So this recipe was a keeper. Also I will say that I love the three cheese combo in this. Original recipe called for swiss but it's the one cheese none of us like, so I always replace it with mozzarella. Brussels Sprouts Au Gratin
What better way to enjoy your vegetables than roasted and served with a cheese sauce?
I'm really happy to share this recipe finally, although I have to say, I wish the pictures were better. It's hard to get pictures of anything that's got a cheese sauce and make it look halfway appetizing. However, don't let the pictures deter you, this au gratin is slamming! I personally love brussels, so I'm not sure someone who wouldn't like brussels would agree. However, if you want to try something new, I highly recommend this. I served this up at Thanksgiving last year and I wish I made it more often because it's so easy to make and...again....it's slamming!

Cheesy Smashed Brussels Sprouts
Cheese makes everything better plus these brussels are smashed and roasted. Absolutely fantastic!
Let's talk about these brussels...I personally love brussels any which way I can get them. However, my family is a little skeptical when they are whole and I thought what better way to make them than covered in cheese?! That's the trick, right? Kids don't like a veggie, add cheese. I really love the element of blanching and then smashing and roasting the brussels. It just makes for such a good side dish. I think it works so well as a side for chicken or pork.

Pork Tenderloin with Shredded Brussels Sprouts
Perfectly seasoned pork tenderloin topped with a lovely gravy-like sauce and served with a brussels sprouts side.
When we have pork, it's usually my mother-in-law's which has some mix of Italian seasonings on it and it's so darn good. I've been trying to make my own pork roast and a lot of them have glazes or bacon. I really wanted to try this recipe in particular because of the brussels. I didn't realize it had a sauce to go on top or really anything about the seasonings. I just knew it had brussels and I love love brussels. This recipe is right up there with my mother-in-law's recipe and I adore the little sauce and the brussels side dish. The caraway seeds was a new seasoning for us and we all really enjoyed it with the paprika. The sauce was mouthwateringly delicious. It paired perfectly with the pork.

Sausage, Brussels, and Parmesan Pasta
This sausage and parmesan pasta is the perfect dish to ease someone into eating brussels sprouts!
I'm trying to convince my husband and kids that brussels are the bomb dot com. It's going okay. They definitely prefer them shredded rather than whole. They really enjoyed this dish with brussels and I can't complain at all. I love pasta, so I'm up for eating pasta with my brussels if that's the way I can get them! This is also a relatively quick dish (as a lot of pasta dishes I make are) and that, of course, is a huge plus with 5 people with different things going on on any given day.

Sheet Pan Crispy Cheddar Pork Chops
One whole meal baked on one sheet pan - crispy cheesy pork with roasted baby red potatoes and brussels sprouts!
I have desperately trying to convince my family that brussels are actually delicious because I love them. So far, I think the only attempt that was mildly successful was when I made carbonara with shredded brussels. I will take them any way I can get them, but especially love roasted brussels sprouts, like in this sheet pan recipe! Not only do you get yummy brussels, but you get red potatoes and crispy cheddar pork chops too. So I mean, no complaints from me.
It's an easy recipe with a little bit of prep time, but I still ended up spending more time waiting for it to bake in the oven than preparing it or actively cooking anything. Again, no complains from me. I was happy to have a well-rounded, balanced meal (in my opinion, not a nutritionist or anything) that was simple to make and dirtied fewer dishes than it would have if I made this in a skillet.

Bacon & Brussels Carbonara
The shredded brussels in this recipe take on a much milder flavor and they are perfect in this creamy pasta!
I'm working on convincing my family that brussels sprouts are delicious. I love them and would eat them any which way. I figured that if they were shredded, Nick and the kids might take to them a little better. Plus I figured that carbonara would definitely win over their hearts...er, stomachs. I was glad to be right! Nick and the big kids did love this recipe. They actually didn't realize that it was brussels and were all pleasantly surprised and I think more willing to try brussels in the future because of this recipe. I think the shredded brussels pick up more flavor from other elements in the recipe and become a little less bitter. I personally don't mind their bitterness, but I think that was definitely one of the reasons this worked so well for the whole family.

Chicken with Bacony Brussels Sprouts
Today is the BIG DAY. Maybe. Possibly. Today, we go in for my midpregnancy ultrasound. Meaning we may or may not get to find out what the baby's gender is. My son was very cooperative at the ultrasound when I was pregnant with him, but my daughter was not - and we didn't find out until 37w 4d with her that she was a girl. So we're hoping this baby cooperates like its brother. I'm hoping for a boy, as is Matthew. But I guess we'll see :)
In the meantime, this recipe will keep the suspense at bay, right?! It's a very simple, but delicious recipe. The chicken is seasoned and grilled - so it's nice and juicy and you can pick what you want to do with it, really. I did garlic and onion powders in addition to salt and pepper. I think they'd be fantastic with lemon pepper and pair perfectly with the best part of the meal - the bacony brussels! I'm still trying to get my family to really take a liking to brussels. I've still only had them a handful of times, but I love them. And bacon really helps sway people to like things :)

Veggie & Egg Hash #secretrecipeclub

For those who don't know, Secret Recipe Club is a great little group...well, large group, of food bloggers who are secretly assigned another blog each month. Each member chooses a recipe (or more) from their assigned blog and then on the designated Monday for their group, they post the recipe they made. It's a great way to feature a new blog - really discover a new blog - and help others to find new blogs to follow. It feels good to shine that spotlight on another blogger :)
This month I was assigned to Becky of A Calculated Whisk. I was totally excited to find there was another dessert enthusiast slash cat lady who is also a teacher in my group. I love finding out there are people who do it all - it makes me just want to pick their brain and want to find out all their secrets to staying sane :)
I was very decisive this month and had to choose between two breakfast-egg-casserole type thing: Veggie & Egg Hash or Sweet Potato & Kale Breakfast Skillet. I was hankering for some asparagus and brussels, so I opted for the first recipe.
And it was so the perfect choice! The veggies were just super delicious and everything worked together so well. It was pretty quick to make too :)

Roasted Brussels Sprouts with Bacon
My family is very new to brussels sprouts...or brussel sprouts - which is it?! I'm not sure. Either way, I found out they are way better fresh than frozen and they are amazing lightly sauteed OR in this case, with bacon. Honestly, if you like fresh spinach and broccoli, you'll like brussels!
