Hawaiian Steak Kabobs

Teriyaki-marinated steak with sweet bell peppers, red onion, and pineapple grilled to perfection!


This is one of my favorite grill recipes I think I have ever made. I doubled the original recipe if not tripled it because we love kabobs and grilled veggies and pineapple are the best! This was a winner, for sure. It's super simple and easy to make. The worst part is just getting it all on the skewers.

One Pot Pesto Chicken Alfredo Zoodles

This low carb one pot meal can be ready in under 30 minutes and is a lovely summer meal!


Early last summer, Nick decided to do the keto diet. He had broken his foot and wasn't able to hit the gym and did not want to gain weight since he is still in the Reserves. The only plus side to this diet from my point-of-view (I love carbs) was that Nick started eating loads of zucchini which is probably my favorite vegetable. The kids and I did not follow the keto diet, but there were nights that I fixed a keto-friendly meal so I wasn't make a variation of whatever we were eating (which could be a bit annoying at times...zucchini carbonara did not turn out well haha). This recipe is basically everything delicious - zucchini, pesto, alfredo. YUM! It's a one pot meal and can be cooked in under 30 minutes. It's a win all around!

Ultimate Summer Salad

The best part of summer is all the fresh fruits and vegetables you can combine to make a delicious salad!


The first time I saw fruit in a salad, I was a little skeptical, but decided to try it. I am fully a fruit in savory salad supporter now. Honestly, just throw a bunch of veggies and fruits my way and I'm a happy camper. This particular salad has blueberries, strawberries, avocado, cucumbers, carrots, tomatoes, red onions, and radishes. I think it was the first time my family had had radishes, which is something I ate a lot as a kid because we had them in our garden. I served my salad up with an apple cider vinaigrette, but I'm sure you could use a wide variety of dressings and it would still be fantastic. I also served mine up with some grilled chicken to make it a main dish. Without protein, it would be a wonderful side salad.

Sourdough Coffee Cake #FantasticalFoodFight

Welcome to another Food Fight! Fantastical Food Fight is a group of food bloggers who will get a theme or ingredient each month and make some sort of variation for it. It could be traditional or nontraditional and can be found in a cookbook, on a blog, or be a blogger's own creation! For more details, check out this page.

This month's Fantastical Food Fight theme is SOURDOUGH. I had this on my list of potential themes for a long time because I wasn't using my sourdough starter. I ended up starting a new starter and have high hopes that this one will go a little better. I think mine went south due to not using it and it needed to be cut down and fed instead of just fed alone. When I have sourdough on hand, it is used almost exclusively for the family recipe for sourdough coffee cake. I have found that it is actually quite similar to many recipes online, so I decided to make and share one that is similar, but not the same. To keep the family secret...well, secret.


This is definitely the very best coffee cake there is. Nothing to date has lived up to how good sourdough coffee cake is. I highly highly recommend trying it out for yourself, you will not be disappointed!

Greek Chicken Souvlaki with Lemon Rice

These chicken kabobs are perfect for spring and summer with lots of bright lemony flavor and a side of the most delicious lemon rice you'll ever have in your life!


I've been attempting to use the grill more often and that means I've been making loads of kabobs because apparently I have tons of kabob recipes saved. I was looking forward to this particular recipe due to the amount of lemon in it. I am hooked on lemon in savory dishes. I have tried it again in sweets and I'm still not a fan of just straight lemon desserts. It is what it is.

But bring on the lemon savory dishes! Especially this lemon rice recipe. I have made it multiple times outside of this particular recipe because I love it so much! I went very simple with our kabobs and did a few zucchini skewers and then I served the whole thing up with some diced tomatoes. Honestly, I wish I had had some tzatziki sauce because it would have been a perfect pairing!

Creamy Cajun Chicken Pasta

This recipe is divine with Cajun chicken, creamy alfredo-like sauce, and pasta!


Another 30-minute meal to the rescue! I seriously love pasta dishes like this one. It's a quick recipe for a busy weeknight and it's packed with delicious flavors that aren't hard to achieve. I typically have most all these ingredients on hand too, so it's definitely something that can be made on a night where I have no plans (which is very rarely, but does occasionally happen).

Happy Monday and welcome back to yet another post where I'm sharing our menu for the week. In June, I scheduled salads or a salad-like meal once a week. I love salads and I think I finally have the family sold on salads too. Except Mason...that child is the pickiest eater I have ever met. I am hoping at some point soon he'll start eating like a normal picky eater (aka spaghetti, hot dogs, mac and cheese, etc.). At the moment, it's cheese, summer sausage, chicken nuggets sometimes, freeze dried fruit, and various types of cracker/cookie foods.

Slow Cooker Parmesan Meat Sauce

The perfect red sauce for pasta night slow cooked in the crockpot all day!


I've been making many homemade red sauces over the past decade, trying to find the best of the best recipes. This is definitely top 3 and is relatively easy to make. I particularly like a lot of Italian seasoning in my red sauce, so I always dump way more than the recipe originally calls for. I loved that this sauce was chunkier rather than saucier.

Butter Garlic Herb Chicken with Zucchini

This simple chicken recipe is not to be underestimated with lovely herbs and sauteed zucchini


I have trouble finding simple chicken recipes that I really enjoy. Sometimes I feel like the ones I really really like are complicated and time consuming. This recipe, however, is simple and is very lovely with butter, garlic, and herbs. Plus it also has zucchini and I love recipes with zucchini. I ended up also tossing in some broccoli I had on hand too and it turned out perfectly. I love how quick this recipe was without sacrificing great flavors!

And here we are in June! I swear the school year flew by so quickly. My kids have been out of school for a few weeks now, so we are kind of ramping up to make it a fun summer and try and get out of the house more. I have been feeling pretty dang good. It's been 15 months now since my catheter ablation on my heart and my health anxiety has definitely lessened and panic attacks are far and few between. And that means I want to get out of the house too. We plan to start going to our local food truck area once a month. We rarely plan for nights to eat out, as I cook 6 nights a week consistently. However, I have seen a lot of really interesting foods in our local food trucks and want to try them out!
