25-Minute Spicy Ramen

This ramen has ground pork, carrots, cabbage, sweet peppers, and a kick of heat!


My family has been eating different variations of ramen lately and this one was super fun because it has ground meat and seems like it's way easier to throw together than the others (it's really not but it seems that way with ground meat). I think this is one of the first ramen recipes I've made with any kind of nuts and I really love savory dishes with peanuts - SO MUCH. So all in all, this has a really great balance of flavors and textures. And it's quick to make!

Baked Spicy Chicken Sandwiches

These chicken sandwiches are as healthy as you'll get with yogurt dipped chicken and baked instead of fried.

I've been struggling with getting things posted on here for the last few months. I hit job hunting really hard and found a full time position that I started last Friday. This is my first full week of work and I'm really excited. However, I now have even less time to do blogging, so I decided to give myself a little grace and not worry about all the extra stuff bloggers **should** be doing to make their blog better for search engines and all that. I'm just going to go back to sharing the recipes I'm making, like I did in the beginning almost 11 years ago. I still want to make them easy to print, but that part doesn't take too long.

That was a long little bit, longer than normal for me - ha! But now let me say something about the recipe today. I think this is the first time I've tried a baked recipe where you mix the dry breading with oil and usually it's buttermilk or milk and eggs for the wet part of the breading, this recipe uses yogurt. So it's overall a healthier way to make fried chicken sandwiches. The breading was so crunchy and crisp and I really loved the honey yogurt slaw!

Slow Cooker Corned Beef and Cabbage

Just in time for St. Patrick's Day, this crockpot recipe is a complete winner!


I have never had homemade corned beef before - just the dried stuff, which honestly is one of my favorite things. It's so good. I found this recipe and wanted to try it because I did not know that corned beef was a beef brisket and that it could be made so easily. It sounded like something that took days and a lot of patience to make. I've only had beef brisket one other time, so I was ready to try it again. This recipe ended up being awesome and I loved it so much. It was really easy to make and it was so tender. And with leftovers, corned beef hash, of course!

Colcannon Soup

Classic colcannon flavors of cabbage, cheddar, and potatoes in a tasty soup!


We enjoy our weekly soup nights and have begun to run out of new soup recipes to try, so it's always nice to find something different. I was somewhat aware of colcannon because I've made colcannon mashed potatoes before and loved them so dang much. I don't really get to make a lot of foods with cabbage or leeks, so I really was excited and looking forward to this one and was not disappointed at all. It's also made in one pot and takes less than 30 minutes.

Budget Egg Roll Rice Bowls

All the great taste of egg rolls without all the rolling and frying mess!


I'm all about making egg rolls without the egg roll wrapper and the not having to fry them part. That's definitely right up my alley. Same flavors, way less work. I really enjoyed that this one also had a shortcut of using coleslaw mix instead of having to chop up carrots and cabbage. I have to say that I also really like Jasmine rice, but you could use any rice that you want really. Hope you all try this and like it as much as I did!

You may notice a lot of cabbage popping up in my recipes lately. Back in the day, I was the only person in the family who would eat cabbage. Nick and the big kids just didn't like it and would grumble if it was in any recipes. Something happened...maybe it was a good recipe, I'm not sure, but now they all eat it without complaints. There's no side eye when they see me cutting up cabbage. I think we may have moved into them actually enjoying it and that makes me so happy because I LOVE cabbage. My mom used to boil cabbage leaves when I was a kid and I would happily eat a pot full. So any excuse for me to fit in some cabbage into the meal plan makes me extremely elated!

Egg Roll Soup

Just when I think I've made all the soups, I discover a new one that I just have to have. This egg roll soup is the bomb dot com. Like, who doesn't want an egg roll in soup form?! There is none of the hassle (not really sure it's that much of a hassle, but maybe time-consuming) of filling and rolling and cooking egg rolls, but you get all the flavors of it. The meat can be switched as per your liking - I went with the ground pork that the original recipe called for, but turkey, chicken, pork, etc. are all totally fine too. Or maybe you want to go with meatless. It's up to you! The wonton strips can be made homemade or if you are lazy like me, just buy them! We went with the garlic ginger flavored ones because they are SO good!

Chicken Yakisoba

Make this popular Japanese street food at home in under 30 minutes!

So I had to look up what exactly yakisoba was and found out it translates to grilled noodles and is a really popular street food in Japan. Yakisoba can use either soba noodles or ramen noodles. This recipe features ramen, which if you've been around for a while, you may notice has been getting loads of love lately. I kind of blame it on the garlic butter ramen we had recently. I crave ramen all the time now! I definitely prefer jazzing up a packet of ramen noodles instead of just making it per instructions. This is a fabulous stir fry with lots of veggies and lots of flavor. You can adjust the sriracha to give more of a kick if you prefer or a little more sugar if you prefer it a little sweeter. I highly recommend this quick meal if you're craving a little Asian cuisine!

Recently, my computer crashed when a Windows Update went wrong. I lost a lot of pictures for my recipes because I had not backed them up in a while. So I made a mad dash to try and fit in all my upcoming recipes for the blog on my meal plan. I'm not at all peeved that I had to do it because I truly enjoyed all the recipes that I lost pictures for or they wouldn't be coming to the blog at all.

This wonderful main dish recipe is made in one skillet in under 30 minutes. The tomatoes are such a nice touch with cabbage and sausage, plus the cajun seasoning is the perfect bit of seasoning needed. You could definitely add more if you wanted. It's truly up to you.

You know how there's that thing where if you crave one thing, it means your body needs something else? I wonder what it means when you crave veggies. I have eaten a salad as a snack. I have no shame. Salads are just one of my favorite meals ever. I had a salad yesterday with no meat on it, but I do prefer chicken on my salad. I love the addition of cabbage to the lettuce and all the goodies that are in this particular salad before you even get to the dressing. I'm not kidding when I say I'd eat it with a spoon. The savory factor added by the peanut butter is straight up crazy! It's funny because years ago when I got the cookbook this recipe is from...I probably skipped past this recipe thinking it was crazy to have peanut butter in a savory dish...and even crazier to put it in salad dressing. But now, I am all for it! I wish I had been a fraction more willing to try new things back then.

As I said in my recent cabbage recipe post (I believe, the cabbage soup post), I am slowing getting my family to like cabbage. Slowly, but surely. It does seem to be working. This spicy cabbage recipe seemed to really be a hit with everyone and I really appreciated that because not only is it cabbage...but potatoes and kielbasa too! I love homemade mashed potatoes and I now LOVE kielbasa (I used to not). So it's got all the makings of a delicious meal for me. It's really just a plus that everyone else enjoyed it too. Now, I will say that calling it spicy was a stretch as it is. If you had asked me 10 years ago, I probably would have agreed and said there was some heat, but I think my tastebuds would say it was very mild. I definitely will add hot sauce to taste next time to make it a little bit spicier. Definitely start out with the recipe's amount of cayenne and hot sauce and then adjust it to your liking! :)

Because St. Patrick's Day is coming up...I'm craving all things corned beef and cabbage related. In fact on Monday we had Corned Beef Hash for dinner and it was delicious. I think I have slowly gotten my family acquainted with and okay with having cabbage in meals. It makes me incredibly happy because I love cabbage. I feel like my mom made it a lot when I was a kid. When I first met my stepdad's parents, my grandma made pigs in a blanket -- what she called cabbage rolls -- and oh my gosh. I wish she were still alive to teach me how to make them because I have never found a recipe close to hers and I will never forget what they taste like even though it has been 15+ years since I have had them.

This Corned Beef and Cabbage Soup is a crockpot meal and super easy to fix. You just chop up your ingredients and throw them into your crockpot -- no precooking anything, no having to add any ingredients 30 minutes before cooking, etc.  Throw them in and let them go until dinnertime.

I was all over this week's Sunday Supper Movement event theme: Easy Skillet Recipes for Back to School (hosted by: Liz of That Skinny Chick Can Bake). I'm a mom of three - two are school-aged. One pot meals are my jam right now and they are perfect for my ever-busy Mondays.

I first had cabbage rolls when I met my stepfather's mom when I was in the fourth grade. My Gramma made the best cabbage rolls and I so wish that I had her recipe and her talent for rolling them. She passed away years ago from cancer and I miss her so very much. It is nice to have something that even comes close to her cabbage rolls that I can manage to make. This dish is as good as it will get for me to reminisce the time that I had with her.

The original recipe did not turn out for me (which is likely because of human error), so I ended up modifying the recipe and it turned out perfectly for me. I cannot get over how easy and delicious this recipe is. And the whole family loved it which is a huge plus for me because over the years I've eased cabbage into our meals little by little. It is one of my absolute favorites and I ate it a lot as a kid, but Nick was never a fan. Since I don't make it often, my older kids aren't accustomed to eating it. It's a winning recipe all around because of all of this. It tastes close to my Gramma's "pigs in a blanket" (what she called them), my family is learning to love cabbage like I do, and it's a one pot meal.

Secret Recipe Club: Oktoberfest Stew

It's time for another Group D reveal - it's been since November for our group, so Happy 2014, Group D! For those who don't know, Secret Recipe Club is a great group of food bloggers who are assigned a blog in their group secretly each month. They select a recipe or two, make it, take pictures, and blog it all on the same day. It's really fun to see who got your blog on reveal day and what they made :)

This month I was assigned to the other Group D Sarah who blogs at Curious Cuisiniere. Sarah and her husband, Tim, are adventurous souls (check out this picture of them on her about me page) and when Sarah's not blogging, she's working in a bakery (such a dream job!).

It was so hard to pick one recipe. There's the Beer & Cheddar Pull Apart Bread. Then a savory breakfast recipe of Cornmeal Herb Waffles with Fried Eggs & Bacon  - I really want to try this one soon. I love little mini muffins, so I bookmarked these Chocolate Chip Mini Muffins too. Ultimately, I chose Sarah's Oktoberfest Stew though because Nick got home

While Nick was deployed, he was missing out on Samuel Adams' Oktoberfest beer which is his favorite. So I bought some each time I went grocery shopping and stored them in our basement for when he got home. I also bought Yuengling and Leinenkugel's Oktoberfest beers too. It was easy for me to pick the stew over everything else because it used the Oktoberfest beer :) It was such a great stew. We all loved it!

Stuffed Cabbage Casserole

In third grade, I met my stepdad's parents and my grandma (miss her so much) made pigs in a blanket or stuffed cabbage rolls. I wish I had her recipe so badly, but I don't. So I've been searching for something as amazing as her pigs and this casserole comes mighty close to that. This one also comes with the amazing no-rolling step. No pesky taking forever to get dinner ready because you're rolling everything into the cabbage leaves.

My husband is not a fan of cabbage, but I think this recipe converted him a little. He kept going back for more and raving how much he liked it. :) Score one for me! Now if I could just get him to eat mayonnaise.

Classic Cabbage Rolls

I'm on the search for a cabbage roll like my grandma's - I think my mom has the ingredients written down somewhere, but until she finds them, I wanted to find something to hold me over until then.

These were delicious. The sausage and Worcestershire added a bit of spiciness and smokiness. I actually got my husband to eat cabbage - SHOCKER!

BBQ Pulled Pork & Coleslaw Sandwiches

I generally don't make a lot of pulled pork or pulled beef or pulled chicken sandwiches, even though they are one of my favorite kind of sandwiches. My kids and husband aren't big BBQ lovers. None of them would touch the coleslaw either. They did eat this recipe though - I think perhaps because I used Kentucky Bourbon BBQ sauce, which was a nice smoky rich flavor!

This recipe comes from Crumbs & Chaos, a blog that four sisters do together. They have an insane amount of great recipes that I've been wanting to try. But especially the Puppy Chow Cookies, Thin Mint Popcorn, and Chocolate PB Explosion Cookies. Okay and maybe the Lasagna Soup, No-Mess Wonton Tacos, and Baked Chicken Fajitas too. I've been following along since I started blogging and they really do have a great blog :) Go check it out!

Recipe from Crumbs & Chaos

What you need:
  • 1 pork shoulder or butt (3 to 5 lbs.)
  • 1 cup water
  • Salt and pepper
  • Garlic powder
  • BBQ Sauce {We used Kentucky Bourbon - it was great!}
  • 2 pkg. coleslaw mix
  • 1 cup mayonnaise
  • 1/3 cup milk
  • 1/3 cup buttermilk
  • 3 tbsp. white vinegar
  • 3 tbsp. lemon juice
  • 1/3 cup white sugar, plus 2 tbsp.
  • 1 tsp. garlic powder
  • 1 tsp. seasoning salt
  • 1/2 tsp. black pepper
Directions:
 
Place roast in crockpot and season with salt, pepper, and garlic powder on both sides.
Add water and a small amount of BBQ sauce into the crockpot.
Cook on LOW for 8 to 10 hours - DO NOT REMOVE THE LID!

Meanwhile, combine the dressing ingredients (mayo to black pepper) in a medium bowl with a whisk.
Place coleslaw mixes in a large bowl and pour dressing over top. Toss to combine and store, covered, in the refrigerator at least 8 hours.

When meat is done cooking, take out of crockpot and discard fat. Shred using two forks.
Drain liquid from crockpot and place meat back in, adding more BBQ sauce - as much or as little as you prefer.

Serve on buns with coleslaw on top or on the side!

      Chicken Egg Rolls

      Today is December's reveal day for Group D :) This month, I decided to do a main dish/nonsweets food since last month I did Banana Custard Cream Pie.

      My blog this month was Tami's Kitchen Table Talk. Tami is Group D's wonderful host! Her blog has a ton of great recipes. She also hosts a blog event called the Cookie Carnival - to find out more about it, check out this post.

      I had a hard time deciding between the egg rolls and the calzones. But ultimately I chose to do egg rolls because I had never made them before. It turns out that the chicken egg rolls were also Tami's first time making egg rolls too. I think that it was a very simple recipe - and it made a ton! I actually froze the remainder of the egg rolls to pop in the oven at a later time.

      What you need:
      • 1 pkg. egg roll wrappers (found by tofu - usually in the produce section)
      • 1 (16 oz.) pkg. coleslaw mix
      • 2 tsp. ground ginger*
      • 1 tsp. garlic powder*
      • 2 tsp. vegetable oil*
      • 1 pkg. chicken breasts, cooked and shredded*
      • Vegetable oil for frying
      * Tami's recipe used fresh ginger and garlic, sesame oil (my son is allergic to it), and 1 cup cooked, cubed chicken.

      Directions:
      Mix together all ingredients except the egg roll wrappers.

      Heat about 2 tbsp. vegetable oil in a large skillet. Add filling mixture and cook until cabbage is soft.

      Remove from heat and let cool for 5 minutes.
      To assemble the egg rolls for frying, take one egg roll wrapper, lay out to look like a diamond, 
      and wet edges with water. I use my finger to do this, it's easier, I think.

      Add 1/3 cup filling.

      Fold in sides to the middle.

      Then pull up the bottom.

      Roll tightly from the bottom and fold the top corner down. If it isn't sealing well, dab your finger in the water and wet the corner again. Repeat until all your egg rolls are ready. I got 20 total.

      Heat a few inches of oil in a large, deep skillet until water droplets will sizzle in it.

      Fry egg rolls in batches and drain on paper towel-lined plate once both sides are golden brown.

        BBQ Beef Sandwiches & Sweet Coleslaw

        I unfortunately got a bad batch of meat from the Commissary (go figure) and it did NOT want to cooperate, but this recipe was great nonetheless. You can find the original on My Baking Addiction! There are tons of really great recipes there. Mostly sweets, which in my opinion, makes it all the much better :)
