Sheet Pan Salsa Verde Chicken Fajitas

Slice, toss, and bake - these chicken fajitas are so easy to make!


I have made quite a few sheet pan recipes lately and I really enjoy the simpleness of them. I know doing fajitas in a skillet isn't that hard or take too long, but sometimes I don't want to stand in front of the stove and babysit a meal. I like having the option of throwing everything onto a baking sheet and putting it into the oven and having 20 to 30 minutes at least to do something else I need to do around the house. I also really love that this fajita recipe has poblanos in it. I feel like poblanos aren't used enough and they are so tasty!

I have been having trouble keeping up with the blog this past few weeks. I'm almost finished with my masters degree and this last course I'm in is rough. I have a paper to write and one more thing to do and I'll be done. I'm hoping to get back to a regular schedule after that. I'm struggling for sure with half a day of kindergarten class supervision and then finishing my class in the afternoon while I can. Anyways, here is this week of recipes!

Mexican Meatball Soup

If you've ever wanted tacos in soup form with all the toppings, this soup is for you!

In these recipes, I can find the ingredients list a little overwhelming. However, what I like to do for prep is get all the spices measured and mixed together in a bowl. I like to get all my ingredients out and separated by where in the recipe I need them. It makes it so much more efficient when all is said and done to make the recipe when a little bit of preparation is done. I love how packed full of veggies this recipe is and I think the toppings work together with the soup so well too. It's like tacos but in soup form and I love it!

Triple Layer Pumpkin Spice Pie

This no-bake dessert is so easy to make and is topped with delicious candied pecans. Perfect fall dessert!


I absolutely adore no-bake pies because they usually are pudding-based and I really love it. It's such an easy, no hassle type of recipe. This one in particular is slightly elevated with candied pecans on top. They are only two ingredients, so they are really simple to make too.

Cheesy Smashed Brussels Sprouts

Cheese makes everything better plus these brussels are smashed and roasted. Absolutely fantastic!


Let's talk about these brussels...I personally love brussels any which way I can get them. However, my family is a little skeptical when they are whole and I thought what better way to make them than covered in cheese?! That's the trick, right? Kids don't like a veggie, add cheese. I really love the element of blanching and then smashing and roasting the brussels. It just makes for such a good side dish. I think it works so well as a side for chicken or pork.

Weeknight Spaghetti Bolognese

Rich bolognese that tastes like it's been slow-simmered for hours, but is ready in under 30 minutes!


I think I've posted quite a few bolognese recipes, but I just love them so much! I've never really liked any other style of homemade spaghetti sauce. The heavy cream adds so much richness to the sauce. Also I just really love adding veggies like carrots and celery in spaghetti sauce. It's a great way to get some more veggies!

Buttermilk Fried Chicken Sandwiches

This sandwich is better than any fast food fried chicken sandwich out there!


This sandwich was one that my daughter chose from a cookbook she got as a present. I let her do the work with some supervision and she made the best fried chicken sandwich I've ever had. The seasoning in the breading was perfect and anything that is close to tzatziki is going to be an absolute winner in my book. I don't think I've ever used boneless chicken thighs before, but they are the perfect size to fit on a bun, so I see them being used a lot in the future.

Layered Pumpkin Pie Toffee Cheesecake

 It's Pumpkin Time, Y'all! And that means delicious treats like this cheesecake that's topped with a layer of pumpkin pie!

Y'all. I don't think I could be any more in love with a cheesecake recipe than I am with this one. It's got pumpkin pie. A literal layer of pumpkin pie, but it's also cheesecake. It's my favorite. I don't like pie crust, but I do love pumpkin pie (I usually just don't eat the outside rim of crust). But this is the best of both worlds because there is graham cracker crust - yum! - and cheesecake - another yum! - AND PUMPKIN PIE. Oh and throw some toffee on that too. Also, it's my 32nd birthday today and if I wasn't having a carrot cake cheesecake, I'd definitely have this cheesecake for my birthday cake.

My birthday is this week and I've looked forward to my birthday cake since last year. I have had the recipe saved since last year and I'm ready to finally have it. I don't know how on earth I'm going to make it with Mason doing kindergarten, but I'll figured it out. I may have to do some on Tuesday and the rest on Wednesday. I also get to have my birthday fall on soup night, so I picked kale soup! :)

Chicken Pot Pie Stew

This yummy crockpot stew has all the goodness of a pot pie without all the hassle of the crust.

It's soup and stew and chili season even if it's a million degrees outside. September is fall. You cannot change my mind. I really like pot pie filling but I don't like pot pie because of the crust. I love when I get the things I like without the things I don't, so, of course, I loved this stew! I was a little unsure of the Greek yogurt part, but it added a really nice, slightly sour creaminess to the stew.

Slow Cooker Shredded BBQ Beef

This beef is rubbed in an amazing spice mix and slow cooked for 8 hours before being cooked in a skillet with barbecue sauce!

I'll admit that as a family, we don't eat a whole lot of barbecue. I think it's really just Cami and I that like barbecue. But neither of us is really like super into barbecue, so it's not something I make a lot. I do get a craving occasionally and that's when I make pulled pork or beef for sandwiches. It's probably my favorite way to have anything barbecue! This recipe in particular has a really great dry spice rub that goes on the meat before it goes in the crockpot and WOW! It really makes the dish something special. Highly recommend!

Ultimate Oreo Brownie Chocolate Chip Cookie Cake

Get ready for a sugar overload with this vanilla and chocolate layer cake topped with chocolate ganache, brownies, chocolate chip cookies, and Oreos!


When my husband worked outside the home, he often brings in leftovers for lunch and ends up talking about how I cook and bake and blog. I end up doing a lot of making desserts to send to work with him. It's happened at every job he's had and I personally don't mind because I love to bake sweets and don't often make things like whole layer cakes for us. This particular cake was a sort of last hurrah before he left for his current job. I made a lot of cookies for his team, so we wanted to do a crazy over-the-top cake and ended up with this massive overload of chocolate! I didn't get a piece, but I did hear from my husband that it was super good and everyone loved it.

Homemade Apple Cobbler

Fall has arrived and it's time for the best apple dessert ever - this apple cobbler!


I tend to focus on pretty much all things pumpkin when fall rolls around that I forget about apples and making apple treats. I do like apple treats - just depending on what it is. It's kind of like how I am with bananas. I don't like bananas by themselves whole, but I'll eat them sliced. I don't care for apples when they are mushy but I'll eat apples baked into desserts, even if you still get whole pieces of baked apples. It doesn't make any sense, but I just go with it. I adore this apple cobbler and I have to admit that I am always grabbing for churro ice cream when I can find it for topping cobbler. It's amazing paired with cobbler. This one was especially good with churro ice cream and caramel sauce!

Cheesy Ground Beef Enchilada Chili

This enchilada chili can be made more like a soup or even more like a dip - depending on what you want!


I posted my first pumpkin recipe of the season on Wednesday, but another reason I'm excited for fall is that I get to share soup recipes again. My family eats soup or chili each Wednesday, even throughout the summer, but I try to be a little more seasonal here on the blog. I want good recipes to get the right attention, so it makes more sense to post soup when people want soup! This chili is more soup-like to me, but the original recipe noted to add 1/2 cup each beef and chicken broth to make it thicker or even omit the broths altogether for a dip. It has so much flavor for such a simple recipe.

Pumpkin Cheesecake Banana Bread

This combination of pumpkin and banana bread is such a treat, but the cheesecake filling really makes the recipe supreme!


I am so excited to start sharing fall recipes - FINALLY. My poor husband got off work on Monday and found all the fall and Halloween decorations out. It's still in the high 80s here in Tennessee, but September 1st is always the beginning of fall for me (even if it's technically not fall yet). I've been making pumpkin recipes already and I'm happy to share this awesome pumpkin recipe today. I think what I enjoy most is that this is sort of easing into fall treats. It's not 100% pumpkin bread, so it's a nice subtle way to start off the season. I also adore the cheesecake filling. I mean banana bread and pumpkin bread are great with some cream cheese spread, so having that cream cheese baked into it is just perfection!
