Easy Low Carb Big Mac Salad
A lower carb version of a McDonald's staple!
I love Big Macs, but I try not to eat fast food because I find myself constantly disappointed by the quality. I'll crave a Big Mac and get it and feel like crap afterwards. I don't know if that's a "I'm in my 30s" thing or just because I don't eat a lot of fast food or if it's because fast food quality really is subpar nowadays. I digress. I love making copycat recipes at home and have made a Big Mac copycat, but I really like salad too and then I don't end up with a bunch of extra top buns. Win win!Wednesday, June 16, 2021
Bacon Cheeseburger Salad
When you're craving a bacon cheeseburger, but make it slightly healthier!
I have posted many salads at this point and may be beating a dead horse by once again explaining how I love eating salads for dinner. But I really like salads for dinner but also want them to be somewhat filling and these kinds of recipes are great for that because there are filling toppings. This one has all the yumminess of a bacon cheeseburger but without the buns. It's a great low carb option, but also could definitely work in a pinch if you forgot your hamburger buns or they go moldy or whatever. The dressing is easy and wonderful too!Monday, June 07, 2021
Chicken Gyro Salad
Gyros in a bowl - salad style!
I really love gyros and Mediterranean food. I also really love salads for dinner. Finding this recipe was kismet. I will say that the pita chips are such a fun addition but I prefer to mix them in right before serving and don't want extras in if there are leftovers because they will get soggy. This recipe of tzatziki sauce was really wonderful too! Just slightly different than I'm used to, but really great.Monday, May 10, 2021
Loaded Turkey Taco Salad
Load up your taco salad with all the fixings and a homemade cilantro lime dressing!
I've been making a lot of Taco Tuesday meals with turkey lately. Part of that is due to my hereditary high cholesterol kicking in and the other part is that ground turkey doesn't taste too different from ground beef with taco seasoning mixed in, so it isn't this huge "culture shock" of a different protein. I really enjoy this particular salad recipe because there are no tortillas to fuss with and I love salads. Wonton Chicken Salad
A quick salad recipe with seasoned chicken, green onions, crispy wonton strips, and a lovely light Asian dressing.
I adapted down this recipe from homemade dressing and wonton strips because I didn't feel like doing that tedious work. Salads can be some of my favorite meals because of how quickly they can be thrown together. I seasoned my chicken with salt, pepper, garlic, and ginger when I cooked them. I think it was the perfect tie-in with the dressing. I will say that I don't feel this is a super filling recipe so we did have ours with egg rolls.

Steak with Roasted Potato Salad
Perfectly seared steak with a lovely roasted potato salad with some light fixings.
I love how I sat down to type up this recipe and couldn't figure out what was going on. The original recipe serves up the roasted potatoes on top of the salad and you make a roasted garlic buttermilk dressing to go on top. Then the steak goes on top of all of that. However, no one will eat that style of dressing and so we ended up just serving the things separately. It still was a great recipe and I was able to top my salad with my favorite vinaigrette - I will admit that I didn't want dressing on my potatoes or steak.Wednesday, November 18, 2020
Southwest Chopped Chicken Salad
Salads are some of my favorite dinners - especially when they have all the things like chicken, tomato, beans, corn, avocado, and more!
This salad is nothing extremely unique or something that will blow anyone's mind, but it is a fantastic, quick dinner and I really enjoyed it. The original recipe came with a salad dressing, however, I'm about the only person who eats dressing in the house and depending on how busy the day is that I'm making the recipe, I'll skip making the dressing and grab the premade kind. Copycat Chick-fil-A Cobb Salad
Sometimes you crave a cobb salad from Chick-fil-A, but it's a Sunday. Have no fear, make your own cobb salad copycat at home!
Chick-fil-A is one of the very few fast food places where I'll eat anything on the menu. I like the plain chicken sandwiches, the deluxe spicy and non-spicy, the grilled club, the wraps, and all of the salads. Every single salad is so good, but I especially love the cobb salad. Unfortunately, a lot of times that I am out and want a salad from Chick-fil-A is Sunday and as we all know, they are not open on Sunday. So when Sundays happen, you have to have a good copycat recipe in your arsenal!

Salsa Verde Pepperjack Chicken Salad
Every salad should be like this with perfectly marinated chicken and lots of veggies with a fresh mango dressing - a little spicy and a little sweet!
I adore a salad for dinner and I have been enamored with many of the recipes I've tried lately including this one. It checks the salsa verde box for my husband (who wants all the salsa verde all the time) and it has spicy pepper jack cheese cubes throughout it, avocado, corn, bell peppers, and mandarin oranges. I cannot even with how awesome the combo from veggies with oranges was! We don't eat a lot of oranges because my oldest is allergic, but this was fine because I didn't have to put oranges with his salad. I really loved the mango dressing - it's yogurt based and fabulous!

Berry Avocado Summer Salad
The best summer salad with fresh berries and avocado topped with sweet poppyseed dressing!
Berries in salad is something I discovered when I volunteered in the Family Readiness Group in my husband's unit back at Fort Drum years and years ago now. The battalion commander's wife made a salad with strawberries and blueberries in it and I was blown away. It seems so silly to not add fresh fruit to salad, but I had never thought about doing that. Poppyseed dressing was something my mother-in-law introduced me to and I love the combination of berries poppyseed dressing. This summer salad is awesome because you get walnuts, avocado, and feta with it too. My picture does not show those because I forgot the walnuts and feta until I was halfway through eating it -_- But you definitely don't want to forget those!

Cheeseburger Salad with Animal Sauce Dressing
This salad is a lower carb version of the In-N-Out Cheeseburger with Animal Sauce!
In 2020, I don't really have a lot of resolutions. I'm not a resolutions type of gal. However, I am continuing my slight change in diet and I want to eat more salads in the new year. I love love love salads, but I got a few complaints from the others about salad for dinner. I think they have come around a little because of recipes like this that are a little hardier than a regular salad. I thought this one was really fun with the slider-like mini burgers. The animal sauce dressing really brings the whole thing together. We added bacon bits to the recipe because why not?!

Ultimate Summer Salad
The best part of summer is all the fresh fruits and vegetables you can combine to make a delicious salad!
The first time I saw fruit in a salad, I was a little skeptical, but decided to try it. I am fully a fruit in savory salad supporter now. Honestly, just throw a bunch of veggies and fruits my way and I'm a happy camper. This particular salad has blueberries, strawberries, avocado, cucumbers, carrots, tomatoes, red onions, and radishes. I think it was the first time my family had had radishes, which is something I ate a lot as a kid because we had them in our garden. I served my salad up with an apple cider vinaigrette, but I'm sure you could use a wide variety of dressings and it would still be fantastic. I also served mine up with some grilled chicken to make it a main dish. Without protein, it would be a wonderful side salad.

Hello, fellow internet people. So apparently the big thing now that everyone is noticing (and hating) is that food bloggers like to write stories in their posts. Fun fact: this is for Search Engine Optimization reasons. Also fun fact: I am awful at it. Sometimes I have trouble even describing the food with words other than variations of good (thanks, Thesaurus) or delicious. I say cut the food bloggers some slack with the stories and just scroll for the recipe. Cilantro Lime Chicken Taco Salad
Marinated cilantro lime chicken and homemade salad dressing really make this salad perfect for dinner!
Happy, March! I hope your month started off like a lamb because oh lordy, mine was a lion of a mess. That's not a saying, but it should be! I had a front loader washing machine malfunction that led to my drain pipe being knocked loose (although I couldn't see that was the issue) and water all over my floor. Thankfully, it took my husband all of 5 minutes to find the issue and place the drain pipe back where it needed to be. But it definitely took up a good chunk of my day worrying and trying to research.
In other March news, salad has made its way to my meal plan for the month on several occasions. I think most weeks have a salad somewhere in there because I miss them so much. I used to eat salads every day for lunch, but tend to eat leftovers nowadays. So any time I can grab a salad, I am so happy. I often eat salads when we eat at fast food restaurants (those Chick-fil-A salads are my jam!). This Cilantro Lime Chicken Taco Salad is one of my favorite homemade salads. There is a bit more of a labor of love, but it's not so outrageous that you're spending too much time in the kitchen. Honestly, you just dirty a few more dishes.
The Cilantro Lime Chicken is so amazing and the marinade really packs the punch of flavor. I really appreciate making the dressing from scratch and can say that this Baja Catalina dressing was unbelievable. In my opinion, you can't go wrong with beans, corn, and tomatoes on a salad, especially one for Taco Tuesday. The tortilla strips were just a bonus bit of crunch to the whole thing.

Mexi Ranch Chicken Salad
I love this salad with chicken, corn, beans, tomatoes, tortilla chips, and an awesome salsa ranch dressing on top!
I have been all about fitting salads into my meal plan lately. Maybe it's because of the warm weather or maybe it's because I just love love love salads! This one is slightly different than most of the recipes I've been serving up on Taco Tuesdays. It has red beans instead of black beans and there are tortillas chips for some added crunch. I also loved the mix of salsa and ranch dressing too. I'm not sure if that is how Southwest Ranch is made, but it definitely tastes a lot like it.

Strawberry Almond Chicken Salad #FantasticalFoodFight

This month's Fantastical Food Fight theme is SALAD. I'm ridiculously excited about this month's theme. It was chosen due to May being National Salad Month (in the US) and what a more perfect time than when loads of fresh produce is in season! I decided to share this salad that is easy to throw together and has blueberries, strawberries, and mandarin oranges inside it.
The chicken can be seasoned how you wish and then it's a matter of throwing the ingredients together with poppy seed dressing and your meal is ready to go.

Blackened Chicken Fiesta Salad
Juicy, flavorful chicken nestled on top of an amazing corn, tomato, and chickpea salad
I have made quite a few fiesta salads but this is by far my favorite. The blackened chicken was wonderful on its own, but it was the salad mix that really blew me away. It's not a salad with lettuce or leafy greens. It's a salad with chickpeas, tomato, and corn. I think it was my first time using chickpeas and we really enjoyed them. The salad itself was even better the next day after the flavors had married a little more.

Warm Spinach Salad
This salad is topped with hard-boiled egg, bacon, and a warm homemade vinaigrette.
I love making salads almost as much as I love eating them. I used to make them frequently for lunch, but I find now that the big kids aren't toddlers and I make more food for dinner, we tend to have enough leftovers for both Nick and I to eat during the week. So I don't have as much of an opportunity to make and eat salad as I used to. This means I am always looking to make a hearty salad for dinner.
I particularly loved this recipe because it had boiled eggs and bacon on it which reminded me of a cobb salad. I really loved the bacon vinaigrette type dressing that goes over the top. Simply wonderful. Overall, an easy recipe to make and personally I think it would be great for lunch!
