Korean Spicy Noodles
I love a good stir fry and this one has marinated beef with veggies and noodles! I think I typically do stir frys with broccoli and rice. I was unable to get my hands on the Korean sweet potato starch noodles but I definitely would love to for future makings of this recipe! The original also had mushrooms which I omit, so be sure to toss some of those in with the onions and carrots if you like them!

Spinach Dip Pasta
Creamy spinach dip turned into a main dish hit!
I made it one whole month and have posted each Monday! Go, me! I'm hoping to continue on this way for the full year. I'm in desperate need of some recipes for my meal plan that I have forgotten about. This is definitely one of those recipes. I think pretty much everyone in my family eats spinach dip and so the thought of combining it with chicken and pasta was super exciting to me. Korean Beef Bowls with Veggies
Ground beef and onions seasoned with the most delicious Korean sauce served over rice with stir fry veggies!
I LOVE little bowls like this that have loads of veggies and are over rice or quinoa. This one has this amazing sauce that really sets it apart from other recipes that I've had. Nothing else really holds a candle. You can vary the vegetables to your liking but I really liked the red bell pepper, zucchini, and carrot combo. Summer Grilled Corn Salad
The perfect summer side dish for any cookout - bright, fresh, and light!
I have some side dish recipe saved to try but I honestly usually forget about them. I tend to like to just make a couple vegetable, carb, and/or starch sides and call it a day. But I made this last summer and it is one of my favorite things ever. I love sweet corn and especially enjoy fresh sweet corn cooked on the grill. I love that this is just a ton of veggies. I think it's wild that I didn't like kielbasa years ago. It's one of my favorite things. I typically will buy turkey sausage and I'm not sure if that counts for kielbasa but I do like both. I really loved how easy this recipe was - it really reminded me of something I would have made when I was first married. 25-Minute Spicy Ramen
This ramen has ground pork, carrots, cabbage, sweet peppers, and a kick of heat!
My family has been eating different variations of ramen lately and this one was super fun because it has ground meat and seems like it's way easier to throw together than the others (it's really not but it seems that way with ground meat). I think this is one of the first ramen recipes I've made with any kind of nuts and I really love savory dishes with peanuts - SO MUCH. So all in all, this has a really great balance of flavors and textures. And it's quick to make!

Philly Cheesesteak Stuffed Peppers

I feel like I've posted a lot of stuffed pepper recipes or have been trying a lot of new stuffed pepper recipes lately and it's because I love them so much. I feel like I have been so lucky and haven't come across any recipes I feel kind of meh towards. They are all delicious. I really love this one in particular because the cheesesteak filling has a few more ingredients than I normally add and really amps up the flavor. I love the slice of provolone that goes on top and gets all gooey and melty! Now that I'm working full time, I've even begun to think of ways to meal prep and this is absolutely one where the filling could be made a head of time and just placed in the peppers and baked then.Wednesday, May 12, 2021
Hoisin Stir Fry Bowls
This stir fry bowl has loads of flavor and a spicy peanut sauce to finish it off!
Stir frys are the perfect quick meal. They have so much flavor and you can put so many veggies in them. My oldest in particular probably likes stir frys more than other Asian style cuisine simply because the veggies maintain their crunch and he doesn't like when veggies get soft and mushy. I adore this particular stir fry for it's peanut butter sauce and chopped peanuts topping. Southwestern Stuffed Peppers
These peppers are stuffed with turkey, quinoa, beans, corn, and lots of flavor!
My family probably gets annoyed with how much I love stuffed peppers, but I do! I don't really have a rhyme or reason and they probably wouldn't say anything if the peppers were cut up and I made a casserole of sorts instead. But they deal with it because I love it and I'm the one making dinner. :) I personally really enjoy this recipe because it reminds me of a crockpot quinoa recipe that I sometimes make for Taco Tuesdays - in fact, I'm making it in May. Love that there is more than just quinoa and meat.

Creamy Spinach & Red Pepper Chicken
A creamy, rich sauce with spinach, red pepper, and tomato stuffed in chicken breast topped with more sauce, tomatoes, and basil.
I love roasted red pepper recipes and jump at saving all the ones I find. This one is from Ree Drummond which means I knew I would enjoy it and the family would too. It reminds me a lot of Tuscan Garlic Chicken because of the sauce and spinach and bell pepper. I love the touch of tomatoes and basil too. A great recipe that really doesn't take too long to make. I think it's actually quicker and less hassle than Tuscan Garlic Chicken. I served mine up with loads of veggies and it was a good ole time.

Caramelized Cashew Ginger Chicken Stir Fry
Marinated chicken and caramelized cashews add so much flavor to this stir fry!
I feel like I've made a lot of stir frys over the years and continue to save stir fry recipes even if they aren't something crazy different. What was a little different about this particular stir fry is that the chicken gets marinated before lightly breaded. In addition to the marinade, you make really lovely, totally addictive caramelized cashews to go on top. I mean, these cashews are good on their own. They'd be a great snack. But they are even better on top of this stir fry.

Best Chili Ever
Bacon makes everything better including this chili!
I like trying new chili recipes and I feel like I often stumble upon a lot of "best ever" "family favorite" "world's best" type recipes and one of these days I need to do a huge chili cook off and find the best best one. I really like this one because of the added flavor the bacon adds and the added smokiness from the ancho chili powder and smoked paprika. Nothing too crazy and out of the ordinary, but a super solid recipe!

I have made quite a few sheet pan recipes lately and I really enjoy the simpleness of them. I know doing fajitas in a skillet isn't that hard or take too long, but sometimes I don't want to stand in front of the stove and babysit a meal. I like having the option of throwing everything onto a baking sheet and putting it into the oven and having 20 to 30 minutes at least to do something else I need to do around the house. I also really love that this fajita recipe has poblanos in it. I feel like poblanos aren't used enough and they are so tasty!

Copycat Chick-fil-A Cobb Salad
Sometimes you crave a cobb salad from Chick-fil-A, but it's a Sunday. Have no fear, make your own cobb salad copycat at home!
Chick-fil-A is one of the very few fast food places where I'll eat anything on the menu. I like the plain chicken sandwiches, the deluxe spicy and non-spicy, the grilled club, the wraps, and all of the salads. Every single salad is so good, but I especially love the cobb salad. Unfortunately, a lot of times that I am out and want a salad from Chick-fil-A is Sunday and as we all know, they are not open on Sunday. So when Sundays happen, you have to have a good copycat recipe in your arsenal!

Slow Cooker Roast Beef Philly Cheesesteak Grilled Cheese Sandwiches
These sandwiches are worth every bit of trouble - making them and saying the name of the recipe!
I haven't made a new Philly cheesesteak recipe in so long and this one was definitely a little labor intensive. However, I was ready for it because Philly cheesesteaks made with a pot roast - what could be better? What really sold this recipe was that it also had an element of French dip sandwiches as well. Basically, this is a total dream recipe for Nick who loves all three of those things. I honestly can't think of a time I ate a French dip sandwich and I cautiously tried dipping this. It was quite good and I think that's due to the fact that the bread is crunchy and not soft, so it doesn't get soggy when dipped. I really really want to make the pot roast on its own because it was one of the best pot roasts I've had.
