Perfectly Made Schnitzel

So ever since we visited our local German fast food restaurant for the first time, Nick has been obsessed with schnitzel. I have made it entirely too many times in the last year or so. However, we don't eat a lot of pork because it's not everyone else's favorite, so I welcome a little variety in meat choices when I can get them! This is one of the more simple recipes for schnitzel and I think the most traditional preparation and it's probably our most favorite recipe for schnitzel out of all the ones I've tested out.

What you need:
  • 4 boneless pork chops
  • Salt and pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 3/4 cup plain bread crumbs 
  • Oil for frying
  • Lemon
  • Fresh parsley
Directions:
  1. Flatten pork chops as thin as you can get them - about 1/4 inch is perfect. Season with salt and pepper.
  2. Mix flour with 1 tsp. salt in a shallow dish. Place eggs in a shallow bowl and bread crumbs in another shallow dish/bowl.
  3. Dredge pork chops in flour, then egg, then breadcrumbs. Don't let the schnitzel sit around for too long - you will want to fry them as soon as possible.
  4. In a large, deep skillet, heat enough oil to coat the bottom of the pan. Fry schnitzel for 2 to 3 minutes per side and then transfer to a paper towel lined plate.
  5. Serve immediately with lemon and parsley.
