I used to make banana bread all the time years ago and fell out of that habit. I saved lots of fruit bread recipes back then because I adore banana bread so much and felt that other fruits had to be pretty dang good too. I was really excited about this blueberry nut bread and a little intrigued by the maple syrup aspect of it. It wasn't strongly maple flavored, which I did like, but it did have a hint of maple enough to remind me of blueberry pancakes and that made me so happy.

What you need:
  • 2 cups all purpose flour
  • 1/4 tsp. salt
  • 3 tsp. baking powder
  • 1/4 cup granulated sugar
  • 1 cup fresh blueberries
  • 1/2 cup walnuts or pecans, chopped
  • 1/2 cup maple syrup
  • 2 eggs, lightly beaten
  • 3/4 cup milk
  • 3 Tbsp. vegetable oil 
  • 1 tsp. vanilla extract
Directions:
  1. Stir together flour, salt, baking powder, and sugar in a large bowl.
  2. Add blueberries and nuts and toss.
  3. Then add syrup, eggs, milk, oil, and vanilla to the dry mixture and stir until combined.
  4. Pour into a lightly greased, parchment paper lined loaf pan. Let stand for 20 minutes.
  5. Bake in a preheated 350 degree oven for 1 hour or until a toothpick comes out nearly clean.
