Beef Stroganoff Soup

This version of beef stroganoff in soup form is lovely when you're feeling beef stroganoff but want something to sit lighter in your belly.


So yes, this is beef stroganoff soup, but also it does not have any mushrooms in it because the only person who eats them is Cami. I will eat them and won't make too much of a fuss, but I prefer to omit them if I am making something that calls for mushrooms. I love this soup because it's a lighter version of beef stroganoff and that's really nice sometimes when you don't want something to sit something so heavy.

What you need:
  • 2 lb. stew meat
  • 2 packets dry onion soup mix
  • 64 oz. beef broth
  • 2 Tbsp. Worcestershire sauce
  • 2 cups egg noodles, cooked
  • 1 cup sour cream
  • 1 cup half and half
Directions:
  1. Coat slow cooker with nonstick spray. Place meat in the slow cooker.
  2. Add soup mix, beef broth, and Worcestershire sauce. 
  3. Cook on LOW for 6 hours.
  4. About 10 minutes prior to serving, add noodles and stir in sour cream and half and half.
