This pie is like a giant peanut butter cookie with more peanut butter treats inside!
I don't really care for pie, but if it's a pie that's actually a cookie...sign me up! I knew this would be a keeper and I knew I would love this recipe and I was right. The base is a peanut butter cookie and then you stuff in mini Reese's cups and peanut or peanut butter M&Ms inside before baking. It's great on its own and it would be great with a scoop of ice cream on top.
- 1/2 cup unsalted butter, melted, slightly cooled
- 1 large egg
- 1 cup brown sugar
- 1 Tbsp. vanilla extract
- heaping 1/3 cup creamy peanut butter
- 1 cup all-purpose flour
- Pinch of salt
- 12 to 14 mini peanut butter cups
- 2/3 cup peanut or peanut butter M&Ms
- In a large bowl, whisk together butter with egg, brown sugar, peanut butter, and vanilla. (I usually add the sugar first and then the egg to prevent any accidental scrambled eggs)
- Add flour and salt and stir until just combined.
- Pour into a greased 9-inch pie dish and even out the top gently.
- Place peanut butter cups into batter, pressing gently until tops are flush with batter (or pretty much).
- Place M&Ms into batter, pressing gently.
- Bake in a preheated 350 degree oven for 28 to 30 minutes or until a toothpick inserted into the center comes out nearly clean.
- Cool at room temperature for about 30 minutes before serving.

Triple Peanut Butter Cookie Pie
