Soft oat cookies with chocolate chips, butterscotch chips, and bits of Butterfinger candy bars.
I know it's a whole thing of people thinking they are getting a chocolate chip cookie and it's oatmeal raisin and they hate it, but I am not one of those people. Well, maybe. I definitely love chocolate chip cookies, but I also love oatmeal raisin too. Now these cookies are like a beautiful mixture of the two plus butterscotch chips and Butterfinger candy bits. What's not to love about that? It reminds me a lot of cowboy cookies or everything but the kitchen sink cookies. With a little patience with the freezing time, you get wonderful cookies!
What you need:
- 1 1/2 cups all-purpose four
- 1 cup bread flour
- 2/3 cup instant oats
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 cup unsalted butter, cold (2 sticks)
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 1 cup semisweet, dark, or milk chocolate chips
- 1 cup butterscotch or peanut butter chips
- 1 1/2 cups Butterfinger bits (or chopped Butterfinger candy bars)
Directions:
- Beat cold butter until light and creamy in the bowl of a stand mixer.
- Add sugars and beat until light and fluffy.
- Add eggs, one at a time, beating until each egg is incorporated.
- Add vanilla and mix well.
- In a separate bowl, mix together flours, oats, baking powder, baking soda, and salt.
- Slowly add dry ingredients to wet ingredients and mix until just combined.
- Fold in chocolate chips, butterscotch chips, and Butterfinger bits.
- With a large cookie scoop or ice cream scoop, scoop large portions of cookie dough onto a silicone mat or parchment paper-lined baking sheet. These can be next to each other for this step.
- Freeze cookie dough for 1 hour.
- In preparation for baking, place 6 cookies on each baking sheet.
- Bake in a preheated 375 degree oven for 15 to 18 minutes or until edges turn golden brown.
- Once cookies are finished, place baking sheet on a wire rack and allow cookies to cool completely before removing. Repeat with any remaining dough.
