These were absolutely delicious :) Nom nom nom.
- 2 boneless, skinless chicken breasts, cooked and shredded (I used chicken from Fauxtisserie Chicken recipe I'll be sharing soon)
- 1/2 cup water
- 3 Tbsp butter
- 1 onion, finely chopped
- 2-3 cans diced green chiles
- 1 Tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp oregano
- 1 cup cream
- 1 1/2 cups chicken broth
- 1/4 cup flour
- 2 cups Jack cheese, shredded
- 10-12 flour tortillas
Directions:
Preheat to 350. In a skillet, melt butter to saute onions.
Add chiles and spices, cook for 1 minute.
Add flour for 1 minute.
Add broth and cream.
Cook until thickened, for 10 minutes. Remove from heat and add 1 cup cheese. Stir until melted.
Mix chicken and half the sauce in a large bowl.
Place chicken in tortilla and roll. Place seam side down in a 9x13x2-inch baking dish.
Cover with other half sauce and sprinkle 1 cup cheese.
Bake for 20 minutes.
