What you need:
- 1/2 c. butter, softened
- 1 c. sugar
- 1 tsp. vanilla
- 2 eggs
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. mashed banana
- 1/2 sour cream
- 1/2 c. chopped pecans
- Spray a 9x5-inch loaf pan with cooking spray and sprinkle with sugar.
- Beat butter and sugar until they are creamy. Then add eggs and vanilla.
- Stir in baking soda and salt. Slowly add flour. Mix until just combined, you don't want to overmix it.
- Stir in bananas, sour cream, and pecans by hand.
- Pour into loaf pan and bake in a preheated 350* oven for 65 minutes. Check to see if a toothpick comes out clean when inserted into the center. If not, bake another 5 minutes and check again. Repeat until cooked completely.
- Cool for 10 minutes and then remove from pan and let cool all the way on a cooling rack. Slice and serve.
