Blueberry Walnut Baked Oatmeal

I'm not really a breakfast eater, even though I love breakfast foods. I am trying to get in the habit of eating in the morning though and also including fruit somewhere in there because breakfast is about the only meal I eat that fruit would be in. I loved this recipe. It was fantastic.

What you need:
  • 1/2 cup melted butter
  • 1/2 cup honey
  • 2 beaten eggs
  • 3 cups oats
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 1/2 cup milk
  • 3/4 cup blueberries
  • 1/2 cup chopped walnuts (omitted due to allergy)
Whisk together honey and eggs.

Add a little of the butter and whisk. Then add remaining butter and whisk.

Add oats, baking powder, salt, cinnamon, vanilla, and milk. Stir well.

Fold in blueberries and walnuts.

Pour into a greased 8x8-inch dish and bake at 350 for 30 to 40 minutes.
