It has been a long time since I've had a patty melt and I forget how much I love them. It's a grilled cheese burger, basically, and sealing the patty in between two pieces of cheesy bread make for a lot neater of a way to eat a burger. Plus you get grilled cheese and caramelized onions too - which are always welcome, in my mind.
It's a really simple recipe with really extraordinary flavors. I'm curious to see what kind of variations I can come up with. Does your family eat patty melts? What toppings to you put on them?

What you need:
- 1 Tbsp. butter
- 1 large onion, sliced
- 1 lb. ground beef
- Salt and pepper
- 4 slices of your choice of cheese - I used Vermont Sharp Cheddar
- Thousand Island Dressing
- 8 slices of thick bread
- Butter (spreadable)
- Melt butter on medium and caramelize onions. Cook 10 minutes, flip; another 10 minutes, flip; reduce heat to medium low and cook another 10 minutes.
- Season ground beef with salt and pepper. Form into 4 patties and cook.
- Butter 4 of the slices of bread and lay down on a piece of wax paper. On the unbuttered side, spread a little Thousand Island dressing onto the slices. Add a piece of cheese on each.
- Top each slice with a patty and some onions. Butter the remaining slices of bread and place on top of the others butter side up.
- Cook in a skillet or on a griddle until browned on each side. Slice in half and serve!
