I've seen this recipe everywhere...or it seems like everywhere and I was extremely intrigued by it. I believe I made this accompanying burgers one night and it is just an excellent recipe. The cauliflower just soaks up the buffalo flavor and it really has a nice texture. The beer batter, of course, is unbelievable :) They are definitely addictive...you will sit there and pop them in your mouth, even burning your tongue or the roof of your mouth a few times because they are fresh out of the oven!

What you need:
  • 1 large head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp. baking powder
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 8 oz. beer
  • 1/4 cup Frank's red hot sauce
  • 2 Tbsp. butter
Directions:
  1. In a medium bowl, mix together flour, cornstarch, baking powder, garlic powder, salt, and pepper.
  2. Then add beer to the mix and stir until as smooth as possible.
  3. Add cauliflower in batches to batter. Using a slotted spoon, coat florets and remove, letting excess batter drip off, placing on a greased, foil-lined baking sheet. Repeat until you run out of cauliflower or batter.
  4. Bake at 450* for 15 minutes.
  5. In a small saucepan, melt butter and stir in hot sauce. Let simmer on low while cauliflower bakes.
  6. Brush florets with prepared buffalo sauce and then bake for an additional 5 minutes.
