I've seen this recipe everywhere...or it seems like everywhere and I was extremely intrigued by it. I believe I made this accompanying burgers one night and it is just an excellent recipe. The cauliflower just soaks up the buffalo flavor and it really has a nice texture. The beer batter, of course, is unbelievable :) They are definitely addictive...you will sit there and pop them in your mouth, even burning your tongue or the roof of your mouth a few times because they are fresh out of the oven!

What you need:
- 1 large head cauliflower, cut into florets
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp. baking powder
- 1 tsp. garlic powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- 8 oz. beer
- 1/4 cup Frank's red hot sauce
- 2 Tbsp. butter
- In a medium bowl, mix together flour, cornstarch, baking powder, garlic powder, salt, and pepper.
- Then add beer to the mix and stir until as smooth as possible.
- Add cauliflower in batches to batter. Using a slotted spoon, coat florets and remove, letting excess batter drip off, placing on a greased, foil-lined baking sheet. Repeat until you run out of cauliflower or batter.
- Bake at 450* for 15 minutes.
- In a small saucepan, melt butter and stir in hot sauce. Let simmer on low while cauliflower bakes.
- Brush florets with prepared buffalo sauce and then bake for an additional 5 minutes.
