There are some people who go to grab a cookie thinking it's a chocolate chip cookie and are disturbed when they bite into it and find out it's actually a raisin cookie. I, on the other hand, LOVE raisin cookies...especially if they are oatmeal raisin cookies. What sets this recipe apart is that in addition to oats and raisins, it also contains a bit of molasses that add a very rich flavor to the cookies. They were incredibly addictive...I just kept on eating them. They are soft and chewy too, so the recipe is definitely a keeper :)

What you need:
  • 2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup brown sugar
  • 1 1/2 sticks butter, softened
  • 2 cups old fashioned or quick oats
  • 2 eggs
  • 2 Tbsp. molasses
  • 1 Tbsp. milk
  • 1/2 to 1 cup raisins
Directions:
  1. Cream together butter and brown sugar. Then add eggs, molasses, and milk.
  2. Add oatmeal and mix well.
  3. In a separate bowl, mix together flour, baking powder, baking soda, and salt.
  4. Slowly mix in dry ingredients into wet ingredients.
  5. Stir in raisins.
  6. Using a scoop, place balls of dough on a parchment or Silpat lined cookie sheet.
  7. Bake at 350* for 12 to 13 minutes. Let cool for 2 minutes on cookie sheet before removing to wire rack.
