Quesadillas de Camarones

Quesadillas that can be made with the camarones or with chicken as a substitute - but they are the real deal!

Camarones is Spanish for prawns. I didn't know that until I was about to post this recipe. I'm notorious for posting a recipe with a different language and leaving out a main ingredient that makes up the name. There was one where the title had mushrooms (like maybe pasta with mushrooms) and I omitted the mushrooms. This time I made Prawn Quesadillas without the prawn. Goodness gracious. However, I did include the instructions on how to make these WITH shrimp....but also sans camarones, as I made them. If you have been around as a reader for any length of time, you may have noticed that there are very few seafood recipes and if they do pop up, they are tuna recipes. Tuna is the only seafood that my husband and I eat. Our older two kids like shrimp (and my daughter loves calamari), but I have always found it hard to cook something well that I don't like to eat. Does that make sense?

These quesadillas are so very good. The sauteed vegetables really do make a huge difference in them. I couldn't find the Mexican red sauce for the protein, so I used a roasted good quality salsa. :)

What you need:
  • 1 pkg. chicken tenderloins --or-- 12 whole large shrimp, peeled and deveined
  • Good quality salsa
  • 1 yellow onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, seeded and diced
  • 2 cups shredded Monterey Jack cheese
  • 2 Tbsp. olive oil
  • Butter or nonstick cooking spray
  • Flour tortillas
  • Salsa, sour cream, guacamole, etc. for serving
Directions:
  1. Pour salsa over chicken or shrimp and let sit while you chop up the veggies.
  2. Heat a heavy skillet over medium-high heat and add olive oil. Cook vegetables until they are softened and start to brown. Remove and set aside.
  3. Cook chicken or shrimp until done and remove and chop into bite-size pieces.
  4. In a separate skillet, heat butter over medium high heat or coat outside of tortilla with cooking spray. Lay down a tortilla.
  5. Top with cheese, vegetables, protein (chicken or shrimp), more cheese, and then fold in half. Cook until both sides are golden brown, flipping once.
  6. Repeat with remaining ingredients.
  7. Slice into wedges and serve with your desired toppings.
