Every Christmas, I look forward to two treats that my mom-in-law makes: potato candy and buckeyes. My husband's family is from Ohio, which is referred to as "The Buckeye State" because of its buckeye trees. Buckeye seeds are little brown nut-like looking things with a little yellow eye shape on them, so when buckeye candy is made, it's with peanut butter, chocolate, and a little circle "eye" is left bare to resemble the seeds. I was so excited when I saw Erin of The Spiffy Cookie post this recipe and knew I had to make it. I do wish I had more patience to cover the cheeseball with chocolate chips more fully, but I ain't got time for that. Regardless, it was a great snack to have out on the kitchen island with tons of teddy grahams around to dig into the cheeseball.

What you need:
  • 8 oz. cream cheese, at room temperature
  • 1 cup powdered sugar
  • 3/4 cup creamy peanut butter
  • 3 Tbsp. brown sugar
  • 1 1/2 cups mini semi sweet chocolate chips
  • Graham cracker sticks, teddy grahams, or other treats for dipping
Directions:
  1. In a large mixing bowl, beat together cream cheese, powdered sugar, peanut butter, and brown sugar until blended.
  2. Spoon onto a piece of plastic wrap and bring in the corners and twist to form a ball shape.
  3. Freeze for 1 1/2 hours or until firm enough to keep its shape. 
  4. Press chocolate chips onto cheeseball, leaving an circle on top for the buckeye "eye".
  5. Then place on a serving dish and cover. Freeze for another 2 hours.
  6. Serve with graham cracker sticks, teddy grahams, or other dipping treats.
