Take your Cobb salad to the next level with cubes of pepper jack cheese, black beans, corn, and a bbq ranch dressing!
Cobb salads are probably my second favorite kind of salad behind Caesar salad. I love having bacon and hard-boiled eggs as a source of protein. I also loved that this salad went the Tex Mex route and there was pepper jack cheese and corn chips. The BBQ ranch dressing also surprised me quite a bit. All-in-all, this was a well-rounded salad and it's perfect for Taco Tuesdays!

What you need:
For the salad:
- 1/2 head iceberg or romaine lettuce, shredded
- 2 cups diced cooked chicken
- 8 oz. block Pepper Jack cheese, cut into cubes
- 5 slices bacon, cooked and crubmled
- 1/2 medium red onion, finely chopped
- 3 hard-boiled eggs, chopped
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 cup cherry tomatoes, halved
- 2 Tbsp. fresh cilantro, chopped
- 1/2 cup Frito corn chips
- 2/3 cup Ranch dressing
- 1/4 cup BBQ sauce of your choosing
- Toss all salad ingredients together except cilantro and corn chips.
- In a small bowl, mix together dressing and BBQ sauce.
- Divide salad into serving dishes and top with dressing, cilantro, and corn chips.
