Butterscotch Pie

The perfect no-bake dessert with six ingredients that is so quick to throw together!

I mostly prefer chocolate desserts. That's not to say that I don't like other desserts, but chocolate desserts are usually my favorite. However, I will say that my favorite pudding flavor is butterscotch. For some reason, we got butterscotch pudding the most when I was a kid and I loved it with a little dollop of Cool Whip because we always had Cool Whip on hand. I knew I would love this dessert and even though it isn't pudding alone, it's a pudding pie and it was very nostalgic.

Triple Peanut Butter Cookie Pie

This pie is like a giant peanut butter cookie with more peanut butter treats inside!

I don't really care for pie, but if it's a pie that's actually a cookie...sign me up! I knew this would be a keeper and I knew I would love this recipe and I was right. The base is a peanut butter cookie and then you stuff in mini Reese's cups and peanut or peanut butter M&Ms inside before baking. It's great on its own and it would be great with a scoop of ice cream on top.

Triple Layer Pumpkin Spice Pie

This no-bake dessert is so easy to make and is topped with delicious candied pecans. Perfect fall dessert!

I absolutely adore no-bake pies because they usually are pudding-based and I really love it. It's such an easy, no hassle type of recipe. This one in particular is slightly elevated with candied pecans on top. They are only two ingredients, so they are really simple to make too.

Coconut Cream Pie

Who needs chocolate when you can have this stunning, mouthwateringly delicious coconut cream pie?!

I feel like I grew up being sort of indifferent to coconut. I love the little snowball cupcake/marshmallow/coconut treats, but I don't like coconut in candy bars or chocolates - I'm still that way. At some point, I started getting the coconut layer cake from Pepperidge Farm as an adult and that really created a spark of "Hey, maybe I do like coconut" in me. I have never had a coconut cream pie and really wanted to make one. The original recipe was only topped with some whipped cream...I used it all (bonus picture at the end of how ridiculous it looks at the bottom of this post). This has to be one of my all-time favorite desserts and there isn't chocolate in sight. It's unbelievable!

Chocolate Pecan Pie #FantasticalFoodFight

Welcome to another Food Fight! Fantastical Food Fight is a group of food bloggers who will get a theme or ingredient each month and make some sort of variation for it. It could be traditional or nontraditional and can be found in a cookbook, on a blog, or be a blogger's own creation! For more details, check out this page.

This month's Fantastical Food Fight theme is PECAN PIE. November is Georgia Pecan Month and although I could have gone the easy route and just picked pecans for the ingredient, I decided to make it all about pecan pie with the big holidays coming up in the US where pecan pie is the major dessert. No time like the present, right?! Here's the thing...this is definitely not my month. I don't like pie very much and pecan pie is probably my least favorite pie. But here we are...it's Pecan Pie Food Fight month!

With all that being said, this is the second pecan pie recipe to hit the blog and again, I did try it to see if my mind could be changed by a different recipe. The first pecan pie was a butterscotch pecan pie and I thought maybe I would enjoy that but it was a bust for me - Nick loved it. This go-around I figured I would have more of a chance of enjoying the pie because it's chocolate-based. It was still a bust. However, I get to post this with the approval of Nick and my daughter, Cami. Both of them gladly taste-tested and split the pie between the two of them (over the next week - not in one night haha). They said it tasted like rich chocolate pudding and pecan pie had a baby. So I'm just going to take their word for it. It was an easy recipe to make and it looks beautiful!

Cranberry Cheesecake Crumb Pie

Take that can of cranberries and make something magnificent with it!

Cranberry Cheesecake Crumb Pie #recipe #dessert #pie #cheesecake #cranberry

As a child, the only experience I had with cranberries was the canned jellied kind. Now plenty of people enjoy that, but I am not one of those folks. I thought that I just didn't like cranberries, period. End of story. Then as an adult, I decided to try them again, but not in jelly form. I think my first brush with cranberries as an adult was fresh cranberries and I loved them. Fresh cranberries are so perfectly tart. So I am making up for lost time and eating all the cranberry things.

This pie was a good compromise for me because I also don't really care for pie (because of the crust) but Nick does. But it's also partly cheesecake, so that works for me. This is like the perfect mixture of so many delicious things. The cranberries are tart and are lovely paired with the creamy cheesecake and buttery crumble. I can't even with how wonderful this dessert is. Perfect substitute for jellied cranberries, if you don't like it :)

Root Beer Float Pie

A childhood treat in (no bake) pie form that is so incredibly easy to make!

Root Beer Float Pie #dessert #recipe #pie #rootbeer #rootbeerfloat #nobake #nobakedessert

As a child, I had root beer floats all the time. My grandma kept Mug root beer and vanilla ice cream (by the gallon) on hand, so when I visited I could have a root beer float. As an adult, I really don't drink soda very often. I might have the occasional root beer or Sprite when I have fast food, but that's max once a month. I would give up soda completely except that I love root beer entirely too much. I saw this recipe and immediately saved it and put it on my meal plan.

I like to let my ice cream melt just slightly to stir into the root beer to get that light frothy mixture and this root beer float pie really captures that stage of a root beer float. It's heavenly. This pie doesn't take many ingredients and it's no bake. It's perfect to make the night before any get together. It's so easy!

Snickers Cheesecake Pie

A lovely no-bake dessert with loads of chocolate and caramel - sure to please a crowd!

Snickers Cheesecake Pie #recipe #dessert #nobake #pie #Snickers #caramel #chocolate

I am not a fan of pie. Really it's not so much that I don't like pie as much as I don't like pie crust. I tolerate pumpkin pie because I'll eat the bottom of the crust and leave the edges alone. But otherwise, pie is just not my thing. I do love a pie like this Snickers Cheesecake Pie because it uses graham crackers for the crust. No hate for graham cracker crust. Graham cracker crust is the bomb. This particular dessert was definitely bound to be a favorite because it has my OG favorite candy bar, Snickers. It's a wonderful no-bake dessert - hope you guys try it out!

Light Chicken Pot Pie

This lighter version features Greek yogurt and one crispy crust on top that is incredible!

Light Chicken Pot Pie // This lighter version features Greek yogurt and one crispy crust on top that is incredible! #recipe #chicken #potpie #pie #maindish

Surprise, surprise - as a child, I hated pot pie. I'm honestly still not the biggest fan of it now as an adult. However, Nick and the big kids love pot pie and I try to compromise and find ways to stomach pot pie and still make it for them. The reason why I don't like pot pie is because of the crust. I've never been big on eating pie crusts. I wanted to try this particular recipe because there is half the amount of crust and I thought that I could deal with that.

I went in with very low expectations and was very shocked when I ended up loving this recipe. The crust is crispy and thin and it just tastes different than normal pie crust. The filling was wonderful and I think the combination really just solidified that I can eat pot pie if it's made like this! Nick and the big kids also really loved the recipe, so I think we have found that compromise that makes everyone happy.

Circus Animal Cookie Pie

This no bake pie is the perfect summer dessert that will bring you back to your childhood!

Circus Animal Cookie Pie // This no bake pie is the perfect summer dessert that will bring you back to your childhood! #recipe #pie #dessert #circusanimalcookies #sweets

This was my very first homemade pudding pie and I really loved it. I served it up for family dinner dessert and everyone was in agreeance that it was such a mouthwateringly delicious dessert. I think circus animal cookies are one of my all-time favorite snack from my childhood that I still eat to this day and I love how colorful the pie ends up with the addition of sprinkles :)

Peanut Butter Sweetie Pie

This sweetie pie combines peanut butter and chocolate and tastes like a cookie!

Peanut Butter Sweet Pie // This sweetie pie combines peanut butter and chocolate and tastes like a cookie! #recipe #pie #peanutbutter #dessert

I don't make pie a lot because I'm not a big fan of pie crust. Next time I make this pie, I'm definitely going to use a chocolate graham crust because that sounds like the perfect crust for a pie like this. Not only is there peanut butter in the batter, but you also have peanut butter M&Ms, which are one of my favorites. I go back and forth between peanut butter and plain peanut M&Ms being my favorite. This sweetie pie is like a giant cookie and it's so awesome! :)

Butterscotch Pecan Pie #SundaySupper

A classic with a twist, this pie is especially a treat for anyone who loves butterscotch!
Butterscotch Pecan Pie // A classic with a twist, this pie is especially a treat for anyone who loves butterscotch! #recipe #pecanpie #dessert #thanksgiving #christmas #butterscotch

Today's Sunday Supper event is HOLIDAY DESSERT RECIPES and is hosted by T.R. of Gluten Free Crumbley.

I very rarely post recipes on the blog that I don't like....because usually that means I have made something that was NOT edible. However, it's quite the opposite in this case. I am not a particularly huge fan of pecan pie. As in, I don't eat it and won't eat it. Ever. I really just don't like pie very much, but if the filling is good, I will eat the filling and not the crust (like you would a pizza). I made this pie for Nick because pecan pie is his favorite and he loves butterscotch.

Fortunately, I am apparently really good at making pecan pie because Nick LOVED it. I did test a bite thinking maybe the butterscotch would make me like it, but I was wrong. For someone who has a whole set of sweet teeth, you would think I would love something so sugary and sweet, but alas, this is just not my thing. I feel bad because I'm badmouthing this recipe, but if you like pecan pie and butterscotch, you will LOVE this pie. LOVE it. Plus it's nice to have a slight twist on classic foods at the holidays.

Cherry Cream Cheese Pie #SundaySupper

This lovely pie is reminiscent of no-bake cheesecake and is too good for words!
Cherry Cream Cheese Pie | This lovely pie is reminiscent of no-bake cheesecake and is too good for words! #recipe #SundaySupper #cherry #pie #dessert

Today's Sunday Supper event is all about PIES!! Sweet or savory, we aren't discriminating on what we're sharing. Thank you to today's host: Erica from The Crumby Cupcake.

Cherry Cream Cheese Pie | This lovely pie is reminiscent of no-bake cheesecake and is too good for words! #recipe #SundaySupper #cherry #pie #dessert

Back in the day, I used to live for the no-bake cheesecake box mix. I had a mega sweet tooth when I was pregnant with my now-8 year old daughter, Cambria (don't mind me while I sob in the corner here - I've been saying that a lot lately. All my babies are getting so big). I would buy the no-bake cheesecake mix at least once a month and eat it by myself in two or three days. I really appreciate when I can find a good homemade recipe for box mix or something I would order at a restaurant. Copycat recipes are the best! Like the box mix, this recipe is no-bake. I like that it's called a cream cheese pie instead of a cheesecake. To me, it is a little more logical to call it a pie.

I'll be honest here...I'm really picky with pie...mostly because I don't like pie crust. So it really helps that this is graham cracker crust. I think I would eat any pie if it had a graham cracker crust. Okay, that's a lie! I do prefer an actual pie crust for things like Cheeseburger Pie (and quiche). But for sweet pies, I don't want pie crust. I'm unbelievably happy with how this recipe turned out. It tastes identical to the one I used to purchase at the store. You can top it with lemon pie filling or blueberry pie filling too. It doesn't absolutely have to be cherry. Although you may not want to call it cherry cream cheese pie if you don't use cherries - haha!

Crusty Steak Pie

This was basically a beef stew meets a beef pot pie and it was awesome.

I didn't do the extra puff pastry strip around the edges and I should have. I also didn't do the egg wash. It was still very good and gets a thumbs up from everyone in my family! Oh and the puff pastry totally made the recipe! :)

(Print)
What you need:
  • 1/3 cup all-purpose flour
  • 1/2 tsp. salt, divided
  • 1/2 tsp. pepper, divided
  • 1 lb. beef round cubes
  • 3 tbsp. olive oil
  • 2 cups beef broth
  • 2 stalks celery, sliced
  • 2 carrots, peeled and sliced
  • 2 cloves garlic, crushed
  • 2 tbsp. chopped fresh parsley
  • 1 sheet ready-made puff pastry
  • 1 egg, beaten
  • Fresh thyme, optional
Directions:

Place flour, 1/4 tsp. salt, and 1/4 tsp. pepper in a resealable plastic bag.
Add beef cubes and shake to coat.
Heat olive oil in a large skillet and saute beef until it's all browned.

Add broth, celery, carrots, garlic, and remaining salt and pepper. Bring to a boil and then reduce heat, cover, and simmer for 20 minutes. Stir in parsley.

Lay pastry on a floured surface and place your pie dish on top. Trim and set aside.

Ladle meat mixture into pie plate.
Cut a thin strip from the leftover pastry and place around dish's edge. Brush with egg and place the circle of pastry on top. Push down to seal. Cut slits to vent. Glaze with egg and sprinkle with thyme.
Bake at 375* for 25 minutes.

Although I suspect it is Pepperidge Farm or one of the bigger names like General Mills, Campbell's, etc.

Banana Custard Cream Pie

Secret Recipe Club

Today is November's reveal day for Group D :) I'm excited to share with you one of the only pies I will eat, pumpkin and blueberry being the other two.

This recipe came from a blog called Double the Sugar. It is two friends, Shannon and Lucy, one living in Washington State, the other in Edinburgh, Scotland, who have a weakness for carbs and sugar. I love their story of how their blog came to be. It reminds me a lot of my inspiration to start a food blog. AND Shannon and Lucy sound like pretty awesome people, ones that I would definitely enjoy spending the day with :)

Shannon posted the banana custard cream pie recipe. I'll admit that I was a little nervous about making the custard and I have to give some credit to my husband who helped me while I was frantically running around the kitchen on Thanksgiving morning. Without his help, I surely would have failed!  I didn't get many pictures during the process either :( We brought this over to our friends' house for Thanksgiving dinner and it was gone quicker than my pumpkin cream cheese bundt cake. Everyone raved on how amazing it was.

(Printable Version)
What you need:
  • 1 prepared pie crust, cooled (I used this recipe)
  • 1/2 cup sugar
  • 1/2 cup cake flour
  • 1/4 tsp. salt
  • 1 2/3 cup milk
  • 3 egg yolks, beaten
  • 1 tsp. vanilla
  • 1 cup heavy cream
  • 3 tbsp. powdered sugar
  • 1/2 tsp. vanilla
  • 4 medium ripe bananas
  • 1 tsp. lemon juice
Directions:

In a double broiler, combine sugar, flour, and salt. Pour in milk while stirring, until it's blended.

Cook until thickened, stirring constantly, about 15 minutes.
Pour a little of it into the egg yolks and beat.
Then pour egg yolks slowly into the milk mixture, stirring vigorously.

Remove from heat and add vanilla. Cover, with saran wrap touching the custard, and refrigerate until cool.

When it is time to assemble, whip your heavy cream with powdered sugar and vanilla until stiff peaks form. I recommend using a stand mixer if you're a wimp like me!

Fold half the whipped cream into the cooled custard and pour half of that into the prepared crust.

Slice 2 bananas and layer on top of custard. Pour remaining custard on top.
Slice remaining 2 bananas and toss with lemon juice to prevent browning.
Arrange on top of custard and top with remaining whipped cream.
You can pipe it on all pretty or whatever you want to do. Refrigerate for 2 hours before serving.
