Butterscotch & Beer Bundt Cake
I'm a little embarrassed that I'm posting recipes from nearly 3 years ago, but here we are. This cake was made for my husband, Nick, for his birthday in May 2020. He loves butterscotch - it's one of his favorite sweets. He enjoys beer and does like a Bock occasionally. I thought it would make for the perfect birthday cake. I personally did not anticipate liking this cake at all because I'm not a fan of beer, but I was pleasantly surprised. It had such a wonderful balance of the more savory beer flavor with the sweetness of the cake base and butterscotch. The glaze was magnificent. It's very much like a rum cake!

Butterfinger Butterscotch Cookies
Soft oat cookies with chocolate chips, butterscotch chips, and bits of Butterfinger candy bars.
I know it's a whole thing of people thinking they are getting a chocolate chip cookie and it's oatmeal raisin and they hate it, but I am not one of those people. Well, maybe. I definitely love chocolate chip cookies, but I also love oatmeal raisin too. Now these cookies are like a beautiful mixture of the two plus butterscotch chips and Butterfinger candy bits. What's not to love about that? It reminds me a lot of cowboy cookies or everything but the kitchen sink cookies. With a little patience with the freezing time, you get wonderful cookies!

Butterscotch Pie
The perfect no-bake dessert with six ingredients that is so quick to throw together!
I mostly prefer chocolate desserts. That's not to say that I don't like other desserts, but chocolate desserts are usually my favorite. However, I will say that my favorite pudding flavor is butterscotch. For some reason, we got butterscotch pudding the most when I was a kid and I loved it with a little dollop of Cool Whip because we always had Cool Whip on hand. I knew I would love this dessert and even though it isn't pudding alone, it's a pudding pie and it was very nostalgic.

Reese's Pieces Butterscotch Cookies
Delicious soft and chewy cookies with Reese's Pieces and butterscotch chips!
I save a lot of recipes. A lot. I save ones that I want to try and ones that I think my immediate family and even onto my extended family may like because I love to make food for people. This one had Nick, my husband, written all over it. I have such a hard time keeping butterscotch chips stocked in my pantry because he loves them so much and will grab himself a quick sweet treat if they are available to him. They were definitely a wonderful cookie - I love the method of dough being built tall before it goes into the oven because having chewy centers with crunchy edges is how all cookies should be!

Butterbeer Cupcakes
To celebrate the birthday of the Boy Who Lived (despite the author), these cupcakes are full of butterscotch flavor!
Oof. A hard post to get to write after some of the behavior of the alleged author of the Harry Potter series, but I am not condoning or agreeing with any of her stances. They are wrong. She is wrong. I wanted to post this recipe today because it is Harry's birthday. I have yet to have butterbeer from Universal and don't know if I'll ever get around to it to be honest. Especially not in the near future.
These are fantastic little butterscotch cupcakes. The cupcakes base is cream soda/vanilla flavored and then you have a butterscotch filling that goes into the cupcakes and into the frosting AND drizzled on top. You don't have to be a Potterhead to enjoy these sweet little cupcakes!

Butterscotch Cheesecake
This lovely butterscotch dessert is made with pudding and has a touch of chocolate!
We've arrived at my husband's birthday cake for 2019 which I chose because he loves butterscotch. He also got butterscotch cake this year for his birthday too - I'll post it eventually. We do enjoy a good cheesecake every once in a while. I thought this was such a great recipe and I haven't had many cheesecake recipes that use pudding mix. Definitely worth a try! I added chocolate chips into the mix and it was a good addition.

Creme Caramel Squares
Layers of graham crackers, cream cheese whip, vanilla pudding, butterscotch pudding, and Cool Whip make an incredible, fluffy, light dessert!
Well, hello! I'm a little behind today on posting. I meant to schedule more before we moved last weekend, but I didn't do that. We spent Thursday packing the Uhaul (just Nick and I), Friday we started offloading the UHaul at like 4:30 at the new house - closing for selling and buying took all day :/ Saturday we waited on the movers to get the really heavy stuff and finally finished that around 4. Then the rest of Saturday through Monday evening, we attempted to unpack all the boxes and organize and set up everything we could. We're pretty dang close to being done. I'm so in love with my new kitchen!
Anyways, that has nothing to do with the recipe and, I know, I know, bloggers just love to do that (and usually I don't), but anyways....
This dessert is really easy to make. It's very delicious and I think it's a great summer dessert, but it totally would work year round. The cream cheese mixture is kinda like a no-bake cheesecake but fluffier. I love butterscotch pudding a whole whole lot and ugh. Y'all just gotta try this!

Butterbeer Pancakes
For all the Potterheads in your life (or butterscotch lovers), these Butterbeer Pancakes will be their new favorite breakfast. Always.
Happee birthdae, Harry and Jo! Today's recipe is in celebration of the wizarding world's most fantastical treat: butterbeer. I know I would totally love these Butterbeer Pancakes on my birthday, so totally fitting for me to share today :) These are a little bit of a labor of love, as you make pancake batter, butter syrup, and whipped cream. But it honestly doesn't take too long and the end result is amazing. I love all the butterscotch-y goodness AND the whipped cream is honestly good on its own. I would take a bowl full of it by itself. I don't like butterscotch ice cream topping and wanted to find something with better flavor and discovered this Mrs. Richardson's topping that is butterscotch caramel. It was so luscious and the perfect consistency for these pancakes!

Salted Butterscotch Pudding Cookies #FBLCookieExchange
These soft, chewy cookies are chock-full of butterscotch flavor with a hint of salt.
As the holidays approached this year, Lindsey and Julie, who hosted the Great Food Blogger Cookie Swap, announced that they would not be holding the swap anymore. It was so sad, but I was happy when Allison of The PinterTest Kitchen decided to host a cookie exchange and was more than happy to be her co-host! It just didn't seem right to not have the cookie swap happen. We are, of course, a lot smaller in numbers, but if Allison is game to host next year, I'm game to co-host once again!
The premise is that you are matched with 3 bloggers and send each a dozen cookies (and they don't know who has them until they receive their cookies!). In turn, you also receive a dozen cookies from 3 different bloggers. I received Best Cut Sugar Cookies from The Saucy Southerner, Double Chocolate Mint Cookies from 2 Cookin' Mamas, and Double Chocolate Buckeye cookies from For The Love of Food. They didn't make it any longer than a few days and we loved them all. I can't wait to get the recipes!
I sent a dozen each of these pudding cookies to Liz, Megan, and Colleen. I decided to not search far and long to find a recipe this year. I decided upon the butterscotch pudding cookies because my husband loves butterscotch and I figured they would hold up well in transit. I was honestly really surprised with how much I loved the cookies and how very addictive they were! The little touch of salt really made the difference!

Butterscotch Pecan Pie #SundaySupper
A classic with a twist, this pie is especially a treat for anyone who loves butterscotch!
Today's Sunday Supper event is HOLIDAY DESSERT RECIPES and is hosted by T.R. of Gluten Free Crumbley.
I very rarely post recipes on the blog that I don't like....because usually that means I have made something that was NOT edible. However, it's quite the opposite in this case. I am not a particularly huge fan of pecan pie. As in, I don't eat it and won't eat it. Ever. I really just don't like pie very much, but if the filling is good, I will eat the filling and not the crust (like you would a pizza). I made this pie for Nick because pecan pie is his favorite and he loves butterscotch.
Fortunately, I am apparently really good at making pecan pie because Nick LOVED it. I did test a bite thinking maybe the butterscotch would make me like it, but I was wrong. For someone who has a whole set of sweet teeth, you would think I would love something so sugary and sweet, but alas, this is just not my thing. I feel bad because I'm badmouthing this recipe, but if you like pecan pie and butterscotch, you will LOVE this pie. LOVE it. Plus it's nice to have a slight twist on classic foods at the holidays.

Butterscotch Butter Rum Pudding Cookies #SRCHolidayTreats
It's time again for Secret Recipe Club reveal day - this one is an extra reveal day with a theme! What is Secret Recipe Club? It's a bunch of food bloggers separated into four groups that post once a month on a designated Monday. Each month, we are paired with another foodie from our group secretly (hence the name). We then pick a recipe (or two or more) from that blog and make it. On our reveal day, we reveal whose blog we had and what recipe(s) we chose all at the same time. It's like a Secret Santa every month, but with food and blogs! It's a great deal of fun :)
This week is an extra week, so we are enjoying it by getting together to do a no-group-restricted, themed reveal day. The theme is HOLIDAY TREATS. I naturally decided upon cookies. Holidays to me are all about the cookies. Any kind and every kind. My assignment was Wildflour's Cottage Kitchen by Group B member, Kelly. Kelly lives in New Jersey with her husband and super adorable Snowshoe Siamese kitty, Gilbert (go see his pictures on the about me page). I am a sucker for those snowshoes - they are too precious! Kelly has run her own catering business for over 20 years now :) I tell you what, these Secret Recipe Club members never cease to amaze me. They are all such incredible people.
I had no problems narrowing down the cookie recipe I wanted to make, but be sure to stop by Kelly's blog and look at the immense wealth of recipes she has posted. There are too many good ones to choose from ordinarily. One cookie recipe stood out to me right off the bat and that was the Salted White Chocolate & Butter Rum Pudding Cookies with pecans. Nick LOVES butterscotch and he loves rum and I love pudding cookies. So it was really a no-brainer.
