Cheesy Gnocchi Skillet

A great one pot sausage meal ready in under 30 minutes without complicated ingredients!


I feel strange posting recipes as normal, but I have been cooking as normally as I can while the shelves are picked clean. I've made some changes here and there on the fly, but have been pretty lucky to find what I need - because I planned for the whole month in the end of February not knowing what would happen in a few short weeks.

For us, food is starting to be better kept in stock but when it was more scarce, sausage was more available than any other protein. I couldn't tell you if there's gnocchi. We have barely had diced tomatoes - but you could go fresh. This recipe would be great if you can find those ingredients or make some slight modifications. If you can't, save it for later :) I know I have eyed some things I probably won't be able to make in the near future and have been saving them to my pin boards.

I hope that you readers are doing well and you and your loved ones are in good health. My hope is that with all the stay home orders going out this past week that this will be over soon and we can go forward with more insight on how to better prepare ourselves and prevent the mess that has ensued.

I must confess, I've never eaten any of the soups at Olive Garden. Don't shun me! I happen to adore their eggplant parmiagiana and get it every time I go because the rest of my family doesn't care for eggplant and so I don't get to eat it very often. I have heard that their soups are wonderful. Funny enough, I've made copycat recipes for all 4 of the current Olive Garden soups. Don't ask me how I've  made the recipes but never eaten the authentic thing - I have no clue. This is definitely my favorite chicken soup recipe and my favorite gnocchi recipe.

Hello and happy Friday! I have a wonderful one skillet meal to share with y'all today. Bonus: it's ready in under 30 minutes. These are my favorite kind of recipes! The sausage and red bells go perfectly with the gnocchi. There is a hint of lemon and parsley to tie the whole meal together. I personally love that the gnocchi gets a little browned to get a nice crunch.

One pots have become my lifeline lately and usually they are pasta-based, so I was excited to test out  this recipe that has gnocchi and tastes like a burger! I mean who doesn't like bacon cheeseburgers and it's certainly nice to try a dish that has most of the elements of bacon cheeseburgers. This one pot meal is also ready in under 30 minutes. Winner winner, cheeseburger skillet dinner!

This week has been so confusing for me. On Monday, I thought it was Thursday and was convinced on Tuesday it was actually Wednesday. Needless to say, it's been a long week! On weeks like this, I just want simple meals. I love cooking -- don't get me wrong, but when I'm exhausted mentally and physically, I like to throw something together with little effort and be done with it. So I'm glad to have recipes like this in my archives to be able to whip together on hard days/weeks.

Last week, I posted my soupless soup...this time, my soup looks VERY soupy. I don't mind having lots of broth in thicker soups like this one. And my poor gnocchi looks MIA, but I promise it's in there and hello, what a wonderful take on potato soup! I like that there is no cutting potatoes, you just throw the potatoes (gnocchi) in. So in a way, it's like a lazy potato soup, but you can pretend it's fancy potato soup LOL.

Today's #SundaySupper theme is Warming Trends and is hosted by T.R. of Gluten Free Crumbley. It's all about dishes that warm you down to your toes. Of course, the first thing I thought of was soup and I just so happen to have plenty of soup recipes sitting as drafts in my Blogger dashboard. This particular soup is one I've been meaning to post for weeks. I actually cannot take credit for making this one - Nick did!

I planned to make this a few days before I was due to have Mason (on Wednesday - our soup night), thinking that my little guy would be punctual and be born on his due date just like Matthew & Cami were. However, I ended up having real labor contractions on Sunday - that like with the other two, stopped, so on Monday, I got my little kickstart and had Mason early Tuesday morning. So I had to stay in the hospital and I knew I was going to miss soup night and I knew I was going to miss this soup. So I begged Nick to wait for me and not make it until I got home. He graciously agreed and made it on Thursday evening, my first day home from the hospital.

Even though my hospital food was very very good, a homecooked meal was even better. It was February and the kids had been missing a ton of school due to snow days. So that made this soup an even more perfect meal! We used hot Italian sausage as recommended that gives it a little spicy heat in addition to the already lovely warmth that is that actual soup itself. This is sure to warm you up and it tastes just like the real thing from Olive Garden!

Cheesy Baked Gnocchi

It's nice to switch it up every once in a while and not have your typical spaghetti dinner. I had found a recipe for spaghetti-like flavors with gnocchi and was incredibly excited to try it. While meal planning, I realized there was no meat in. And no meat = complaints from Nick and the kids. He has taught them to have to have meat for dinner. Can you see me rolling my eyes?

So easy enough, I just added meat to the mix. I feel ground beef or turkey is best, but I'm sure Italian sausage would be just as fabulous. It really is like spaghetti but with gnocchi instead of pasta. It's fairly quick to throw together and definitely a comfort meal. It will become a staple in your household!

There is definitely room for variation. You could add sauteed mushrooms, roasted red bell pepper, and different herbs to make it your own and to make it to your family's tastes. And if you do try variations, please let me know how they turned out!!

Looking back on these pictures from when we first moved down to Tennessee last summer and were staying at my mom-in-law's makes me want some Fiestaware like no other!! This turquoise color is my very favorite of all the colors she has...it's also Nick's favorite color and we often duke it out to get the turquoise plate or bowl when we go over for Sunday dinners.

I love the contrast of the turquoise with this gnocchi dish - it's so pretty! And it's creamy and cheesy and rich to boot! The gnocchi, not the Fiestaware :) Amanda suggested several cheeses and we chose gruyere. I would love to try it with good ol' cheddar though. Ham and cheddar is such a classic combination and I think it would cut on the overall richness that the Gruyere added to the dish. Not that it wasn't a nice quality, but definitely something that you only want to enjoy every once in a while.

It is no surprise that I am digging this gnocchi bake. It's got all the elements of a great meal: PHILLY CHEESESTEAK. I mean, 3 1/2 years ago if you told me Philly cheesesteak anything was for a meal, I would probably have fake gagged and made a distasteful face to go along with it. I made my own Phillies during one of Nick's deployments because it's one of his favorite foods and that was it. I suddenly found myself liking Philly cheesesteak anything. I've been all sorts of cheesesteak goodies and I know Nick absolutely loves that I am just as obsessed with cheesesteaks now :)

I am also completely obsessed with my cast iron skillet! Nick and I just celebrated 10 years of being together and he got me another cast iron skillet from the Lodge Cast Iron Factory. I hope we can get into a house soon, so I can use them! :) So basically this recipe is just everything that is right in the world and super delicious!

Slow cooker soups are just awesome. I love not having my stove on for excessive amounts of time and heating up the house. I don't want to have to shed layers of clothes I just piled on because it's fall! I want to be a little chilly (I am an ice queen most of the time!) and enjoy my bowl of delicious gnocchi soup!

When I went to make this soup, I had every intention of following it like it was written. I do that most of the time when I make a recipe for the first time. However, I could not find the creamy garlic starter sauce that the original recipe called for...so I kind of had to come up with my own. So this is a bit of an adapted recipe, but still very delicious. It's creamy, garlicky, and has some great textures and flavors with the chicken, gnocchi, carrots, and spinach :)

Gnocchi Chicken Minestrone

It's Wednesday and that means it's Soup Night for my family. Although tonight we're doing chili, I thought it'd only be fitting to post a soup recipe on the blog today :)

I am still really new to gnocchi, but I really like it. I know it's basically a potato dumpling and I have to say that I like it a lot more than actual dumplings that can get soggy in soup. Gnocchi really holds up its texture. This minestrone has a plethora of veggies in it and all of the flavors work amazingly together. Any soup that uses zucchini is automatically high up on my list of favorite soups!

I don't know about y'all, but New York has not gotten the memo that it is supposed to be warming up and we're supposed to get more snow today, so soup is really perfect for serving up! Even if it's warmer where you are, this soup is not as heavy as it appears and is a really fantastic recipe.
