Summer Grilled Corn Salad
I have some side dish recipe saved to try but I honestly usually forget about them. I tend to like to just make a couple vegetable, carb, and/or starch sides and call it a day. But I made this last summer and it is one of my favorite things ever. I love sweet corn and especially enjoy fresh sweet corn cooked on the grill. I love that this is just a ton of veggies. I did not make the avocado cilantro lime dressing but chose to use some of the elements of it so that Nick would eat it. He doesn't do dressing.

Grilled Chicken Caprese Orzo Salad
This refreshing pasta salad is way better for dinner than as a side with its grilled chicken!
Caprese is one of my all-time favorite food combinations. I don't think I've yet to try a recipe that has tomato, mozzarella, and basil (and sometimes balsamic vinegar) that I haven't liked. This one is great because it's not super heavy with a vinaigrette style dressing with lemon instead of vinegar for that acidity. I replaced agave syrup with honey because it's what I had on hand and is my go-to substitution. I loved that this was grilled chicken. I also absolutely loved that this had mozzarella pearls instead of shredded mozzarella. Mozzarella pearls are just so much better!Wednesday, February 10, 2021
Carne Asada Street Tacos
Why have regular tacos when you can have street tacos with grilled carne asada!
I've mentioned many times that my husband has been obsessed with authentic Mexican food after traveling to San Diego for work over the past few years. I am fairly certain he lives on tacos while he's there. I know my tacos at home will never come close to the authentic food, but I do try and they are really tasty still. So these tacos were a hit because honestly you cannot go wrong with steak tacos. Plus the toppings that go with are pico de gallo, guacamole, sour cream, and cotija cheese.Sunday, December 20, 2020
Grilled Salsa Verde Chicken
A simple dinner that is perfect for a Taco Tuesday with fresh avocado and tomato, plus corn and rice with a tortilla for serving.
Nick became obsessed with salsa verde when he started traveling to San Diego for work in 2019. He wants salsa verde alllll the time. He also is kind of obsessed with this style of serving up food where the fixings are all on the side and you build your own dinner on a tortilla. I personally love taking a bite of each topping and a bite of tortilla. This is a really simple recipe but is really fantastic despite being so simple. You can definitely switch it up a little - like add different seasonings to the chicken or roasting the corn or tomatoes. Even charring the tortilla on the grill!

Perfect Steak with Herbed Butter
Steaks on the grill but with the best spice rub and herbed butter ever!
I have made multiple steak recipes with herb butter and, in my opinion, every steak needs a pat of herb butter. I enjoy how different recipes have marinades or rubs. This particular recipes has a spice rub and you cook the steaks on the grill, which I had never done. We all loved the recipe and will definitely be using this recipe regularly for grilling season!

Grilled Cobb Salad
Cobb salad has never been so good with grilled chicken and asparagus and roasted corn and tomatoes.
Cobb salads are probably my favorite kind of salad because I love that there are eggs and bacon in them. This particular cobb salad is perfect for summertime because you can grill the ingredients. I chose to sub in canned corn and roast those with tomatoes in the oven instead of grilling. I did grill my chicken and asparagus though.

Hawaiian Steak Kabobs
Teriyaki-marinated steak with sweet bell peppers, red onion, and pineapple grilled to perfection!
This is one of my favorite grill recipes I think I have ever made. I doubled the original recipe if not tripled it because we love kabobs and grilled veggies and pineapple are the best! This was a winner, for sure. It's super simple and easy to make. The worst part is just getting it all on the skewers.

Greek Chicken Souvlaki with Lemon Rice
These chicken kabobs are perfect for spring and summer with lots of bright lemony flavor and a side of the most delicious lemon rice you'll ever have in your life!
I've been attempting to use the grill more often and that means I've been making loads of kabobs because apparently I have tons of kabob recipes saved. I was looking forward to this particular recipe due to the amount of lemon in it. I am hooked on lemon in savory dishes. I have tried it again in sweets and I'm still not a fan of just straight lemon desserts. It is what it is.
But bring on the lemon savory dishes! Especially this lemon rice recipe. I have made it multiple times outside of this particular recipe because I love it so much! I went very simple with our kabobs and did a few zucchini skewers and then I served the whole thing up with some diced tomatoes. Honestly, I wish I had had some tzatziki sauce because it would have been a perfect pairing!

This month's Fantastical Food Fight theme is BURGERS. It's perfect timing to start sharing all the grilling recipes because summer is upon us! May is National Hamburger Month and I thought burgers were really the best route for a theme for May.Today I have these fabulous grilled butter burgers to share with y'all. I didn't realize how much difference a pat of garlic herb butter would make in a burger but I can't imagine them any other way now! I am really particular with my burgers nowadays. I don't like multiple meat or crazy seasonings. I just like 80/20 beef and salt and pepper. I let the toppings do the work. These burgers were a huge hit in my household and made the favorite list for everyone (except for Mason who doesn't eat non-beige foods really -_-).

This month's Fantastical Food Fight theme is KEBABS. Or kabobs? Kababs? I don't know how you want to spell it, but it's food on a skewer! Bonus points if it's grilled because July is National Grilling Month. I knew right away what I wanted to make - these amazing kebabs from Wendy's blog! I found these when I was hunting for a Secret Recipe Club recipe. I have never purchased lamb and made a recipe at home. I've only had lamb in doner kebab. However, our local German fast food restaurant shut down for good and I can no longer get doner and it bums me out so much. Enter this recipe!I loved that doner kebabs had tons of fresh veggies and tzatziki sauce (a MUST). These kebabs have a sauce that is very close to tzatziki sauce and I absolutely adore the Greek salsa. The recipe is easy to prepare and the lamb is the only part that needs cooking time and even it doesn't take long. The seasonings added to the lamb kebabs are simple but work so well with the salsa and feta-yogurt sauce. All-in-all this is definitely a recipe I will make every once in a while (since lamb is a bit more expensive per pound than other meats) because I just love the combination of ingredients so much and it's incredibly easy to make.

Tuscan Grilled Steak
The most flavorful marinade makes for a wonderfully juicy and delicious steak!
I typically don't pick steak for my birthday dinner. That's usually Nick's pick, but for some reason, for my birthday last year, I really wanted steak with broccoli and fried/roasted potatoes. I decided to marinate my steak and this recipe was really really me. I love Italian seasonings and garlic, so I knew this was going to be the perfect recipe for me. It was. It was the perfect birthday dinner. The steak ends up with such balanced flavors and really juicy! I am one of those garbage people who enjoys their steak cooked well done and the fact that this recipe didn't create a tough steak at well done is awesome. My husband gets his medium, medium rare and he said it was delicious that way too :)

Italian Mozzarella Chicken Foil Packets
This fantastic meal is everything you need all in a foil packet - cook it on the grill or in the oven.
I'm all about the foil packets right now. I have made one particular foil packet dinner for years and years and years (Hobo Dinner) and branched out recently with different proteins and vegetables in these recipes. This particular foil packet recipe is marinated chicken with zucchini, carrots, onion, and potatoes. I love that there was an option for grilling or baking in the oven. I opted for oven baking personally because I love how easy it is to just open the packets and get nice browned and bubbly cheese on top with the help of my broiler.
The marinade is fabulous with lemon, balsamic vinegar, and a variety of spices. It's a great summertime meal for sure.

Cheesy Sausage Foil Packets
The perfect way to celebrate summer - by grilling fresh veggies with sausage!
I know what you may be thinking...where is the foil packet in my picture?! Well, I had a good foil packet picture in addition to the plated picture, but then *poof* I lost a ton of pictures when my computer crashed thanks to an operating system update. At some point, I will make this during the summer and get a foil packet picture. Regardless, it is such a GREAT one packet meal to throw on the grill and go. I find that I think some of the other bloggers may be cheating a little and broiling or searing some of their foil packets because I don't know how else you can get those crisp parts on things like the sausage or potatoes. So I threw my packets under the broiler (opened up) after grilling to get a little crunch! :)

Summer Grilled Veggie Pasta Primavera
All the summer veggies grilled up in one perfect pasta dish!
Any sort of recipe with loads of veggies in it is sure to make my meal plan. I was initially intrigued by the grilled veggie part of the recipe because I recently acquired a cast iron grill pan. I decided to cut my zucchini in spears and grill it in the cast iron. Not only was I able to get these gorgeous grill marks on each piece and side, but the zucchini itself is absolutely addictive. I had a few extra zucchini that I grilled up and ate for a snack the next day. Just A+ in my opinion. You can grill and roast as many of the veggies as you'd like, but in the end, the simple flavors work so well together in this summer pasta dish!

Mexican Chorizo Pizza
Only five ingredients to this pizza that is perfect for Taco Tuesday!
Taco Tuesday can have pizza now too! This pizza is super simple and consists of crust, sauce, cheese, onion, and chorizo. Which makes it the best kind of pizza because it doesn't have to take a lot of effort or ingredients to make a delicious meal. You could absolutely adapt this recipe - maybe dip your slices in guacamole or add diced tomatoes and jalapenos - the sky is the limit. It is simply wonderful just the way it is. You can buy a premade crust or use pizza dough (homemade or store bought).

2 AM Breakfast Burgers
When you can't choose between breakfast and a burger - have both!
I recently made an copycat burger that has breakfast foods on it, but to be honest, if you don't want to mess with shredded hashbrowns than this is definitely the way to go. I personally like this method better because I am literally the worst at cooking shredded hashbrowns. It's just one of those things I have never been able to master. But you know what? That is totally fine by me when I can bake up some of these hashbrown squares and throw it on the bottom bun, no fuss!

Grilled Hawaiian Teriyaki Bowls
Chicken, zucchini, sweet bell peppers, onion, and pineapple are all grilled and then served in a bed of coconut jasmine rice and topped with homemade teriyaki sauce
I love fresh pineapple in savory dishes and was totally in love with the idea of teriyaki chicken and zucchini with it. I was overall looking forward to these grilled Hawaiian teriyaki bowls. The only thing I was not sure about was the coconut rice. I quickly discovered how incredible it was and honestly I could eat it by itself. I am making a few recipes in July that need rice and I'm definitely making this coconut jasmine rice. The homemade teriyaki was fabulous too.
