Korean Spicy Noodles
I love a good stir fry and this one has marinated beef with veggies and noodles! I think I typically do stir frys with broccoli and rice. I was unable to get my hands on the Korean sweet potato starch noodles but I definitely would love to for future makings of this recipe! The original also had mushrooms which I omit, so be sure to toss some of those in with the onions and carrots if you like them!

Tuscan Smothered Pork Chops
Pan fried pork chops with a delicious cheesy tomato and spinach sauce.
I've gotten a little off track with my Monday postings, but I'm still here and will hopefully have a little more time next week to work on blogging. End of the school year always seems as busy as the beginning. Even with one teenager now able to drive (what the what - how do I have a kid with a license?!), there's still so much going on!This recipe is fantastic. I mean I really don't need much convincing if the recipe includes garlic, tomato, and spinach. It's definitely something new to do with pork than I typically make. It's absolutely wonderful with roasted potatoes for a side!

Spinach Dip Pasta
Creamy spinach dip turned into a main dish hit!
I made it one whole month and have posted each Monday! Go, me! I'm hoping to continue on this way for the full year. I'm in desperate need of some recipes for my meal plan that I have forgotten about. This is definitely one of those recipes. I think pretty much everyone in my family eats spinach dip and so the thought of combining it with chicken and pasta was super exciting to me. Creamy Chicken Lasagna
Who needs red sauce beef lasagna when you can have chicken lasagna with a rich cream cheese based sauce and spinach!
So my family doesn't like lasagna. None of us do. However, we have been trying white sauce recipes or recipes that utilize cottage cheese instead of ricotta and that seems to have served us well. Spinach Artichoke Pasta
Who needs spinach artichoke dip when you can have your favorite appetizer as a dinner?!
I am always surprised at what my family is willing to try when I pick something for the meal plan that is more "off the cuff" - I think that Nick will eat spinach artichoke dip sometimes, but not 100% sure. The kids have never had it. I love it! Of course, this being a one pot meal was a plus and I really liked the garlicky spinach. I don't think it's the rest of the family's favorite pasta dish (to be fair, there are so many to choose from), but I was really happy I put it on the menu and finally got around to making it.Wednesday, April 14, 2021
Slow Cooker Chicken Alfredo Sandwiches
Rich chicken alfredo flavors served up with sundried tomatoes, parmesan, and spinach on a hamburger bun.
I really liked this recipe but I did modify it slightly because I feel like the storebought alfredo sauce got watered down with the slow cooking. I drained off the little excess liquid and tossed the cooked chicken with more alfredo sauce. You can do sundried tomatoes or roasted grape tomatoes. I think I'd prefer adding parmesan to the actual end product rather than serving it on top. All-in-all, a really good recipe that you can adjust to your liking.Wednesday, January 20, 2021
Prado's Flatbread Copycat
Check out the Mexicali and Blanca flatbread pizzas inspired by a restaurant in San Diego.
One of my favorite things to do (if you didn't know by now) is to come up with copycat recipes of foods in restaurants or that I've seen on the internet. This particular recipe is from a restaurant in San Diego called (The) Prado. My husband spent 2019 traveling to San Diego for work and he loves it. He actually lived there when he was really young for a few years and so it's a bit nostalgic for him too. One of his favorite foods he ate (outside of all the amazing Mexican food) was the Mexicali flatbread pizza at Prado. He sent me a picture of the menu and I immediately went to the Blanca flatbread pizza with goat cheese and spinach. As I have not had these pizzas and cannot speak to how close the recipes actually are...these are just loose copycat recipes that I made on what little information was given on the menu. Both were crazy delicious.

Slow Cooker Creamy Vegetable Soup

As a child, I pretty much hated vegetable soup. Not because of the vegetables, but because we ate canned soup and the vegetable soup is tomato-based. It seems a bit odd given how much I love anything tomato-based, but it was just too tomato-ey. If you know, you know. I thought I'd try this recipe because it's pretty similar to potato soup but just loaded up with some extra stuff. It turned out really well and was super delicious. Highly recommend.

Creamy Spinach & Red Pepper Chicken
A creamy, rich sauce with spinach, red pepper, and tomato stuffed in chicken breast topped with more sauce, tomatoes, and basil.
I love roasted red pepper recipes and jump at saving all the ones I find. This one is from Ree Drummond which means I knew I would enjoy it and the family would too. It reminds me a lot of Tuscan Garlic Chicken because of the sauce and spinach and bell pepper. I love the touch of tomatoes and basil too. A great recipe that really doesn't take too long to make. I think it's actually quicker and less hassle than Tuscan Garlic Chicken. I served mine up with loads of veggies and it was a good ole time.

Upgraded Instant Ramen
There are so many ways to upgrade instant ramen and this is our favorite way!
Since the initial lockdown back in March, we've kept ramen on hand as much as humanly possible. I have 2 big kids that make their own lunch and since we're all home, leftovers get eaten quickly. Ramen is super nice to have on hand because it's so cheap and super quick. We've taken to adding tuna and hardboiled eggs and either spinach or kale if we have it too. My personal favorite tuna is the lemon pepper tuna, but spicy and sweet tuna is good too.

Copycat Chick-fil-A Cobb Salad

Chick-fil-A is one of the very few fast food places where I'll eat anything on the menu. I like the plain chicken sandwiches, the deluxe spicy and non-spicy, the grilled club, the wraps, and all of the salads. Every single salad is so good, but I especially love the cobb salad. Unfortunately, a lot of times that I am out and want a salad from Chick-fil-A is Sunday and as we all know, they are not open on Sunday. So when Sundays happen, you have to have a good copycat recipe in your arsenal!

Today is my blog's 10th birthday! I cannot believe I have blogged for 10 years. 10 years worth of recipes. What's funny to me is that this is the first time I will add the label for artichokes as an ingredient. In 10 years of blogging, I've never posted a recipe with artichokes!
I've been on a spinach artichoke streak lately where it's what I'm craving and so I've tried out a few recipes that are not specifically spinach artichoke dip because that's basically the only way I've ever eaten it. I have been trying to eat less red meat (still) and I'm trying to find new chicken recipes that don't involve pasta. I really enjoyed this recipe. I would love to try my hand at handling a fresh artichoke soon!

Mediterranean Chicken Pasta
This easy pasta dish is ready in under 30 minutes and is full of so much flavor with seasoned chicken, spinach, tomatoes, basil, and feta cheese.
I have been trying my hardest to make all the Greek/Mediterranean food. Just an excuse to eat goat cheese really. However, only Cami and I like goat cheese. The boys do not. But I can get away with making things with goat cheese if I don't mix it in and that works for me. I enjoyed this recipe so much. It's got all the elements of Greek/Mediterranean food that I love in a simple pasta dish that is great for busy weekdays!

Caprese Florentine Quiche
This quiche has layers of tomato, basil, and spinach nestled in a hashbrown crust!
I love quiches and frittatas. I tend to gravitate more towards frittatas because they don't have the pie crust. However, this quiche has a hashbrown crust and it has layers of all my favorite things. So it won me over very easily. Tomatoes, spinach, basil plus mozzarella cheese - I mean come on!

Eggs Florentine Casserole
This egg casserole has loads of spinach plus sausage, red bell pepper, and cheese!
I adore breakfast casseroles. They are so convenient to feed a crowd - especially for any holiday. We didn't do Easter this year like normal with the Stay at Home order and all that. We don't really celebrate Easter, but we always do an Easter dinner with our family (who does celebrate Easter). I grew up celebrating it and loved when my grandma would make casseroles for breakfast. I guess that tradition just really stuck with me. On a normal year, I probably would have made this, but we have had a hit or miss with eggs in the grocery store.
This casserole is great because it has sausage in it - usually it's ham or bacon. Plus there's spinach and red bell in it. The original recipe also used mushrooms, but as per usual, I omitted them. The original recipe also had Swiss cheese, but we also don't eat that, so I typically switch it out for either mozzarella, gruyere, or gouda. Just depending on my mood.

Crispy Chicken Florentine Melt
Crispy breaded chicken topped with melted mozzarella, tomatoes, and spinach.
Honestly, I cannot get enough of foods with grape tomatoes and when you throw spinach into the mix, it's going to be a favorite. This recipe is also a Ree Drummond recipe, so I can bank on it being a favorite. So that's two things going in that I knew would be working in my favor. What's even more fabulous about this recipe is that the chicken is breaded and nice and crispy. Then topped with melty mozzarella. I mean it really cannot get better than that. In the original recipe, the chicken was served with buttered English muffins. I love English muffins but thought it was a little strange with dinner. But it really sealed the deal. It's a keeper all around!

20-Minute Chicken & Spinach Parmesan
This quick version of chicken parmesan is perfect for any weeknight supper - and it has the added bonus of spinach!
I think it's really interesting how many foods that I did not like as a child are ones I enjoy as an adult because I have made them myself. A lot of foods I had as a child were premade/frozen foods and even now...those really just aren't the best quality food. Homemade is better. I never like chicken parmesan as a child and that is most likely due to the fact that I had frozen tv dinner chicken parmesan which consisted of soggy breading, too tomato-ey sauce, and chicken that didn't really taste like real meat. This chicken parmesan is, of course, worlds better and I love the addition of spinach in it. I also love how quick it is!

BLT Deviled Eggs

Y'all. Is it just me or is romaine lettuce always being recalled and linked to e. coli? I feel like I am always reading about another outbreak and it kind of drives me nuts because I eat romaine lettuce a ton. The original recipe for these deviled eggs calls for romaine, but when I made them last year (yes, last year), romaine was recalled and I settled for spinach which isn't as pretty to photograph. The flavors are that of a lovely BLT sandwich but kind of also remind me of egg salad sandwiches, so it's like a combination of the two. I have to say, didn't hate that at all! :)

Creamy Spinach & Sausage Pasta
This simple pasta recipe is ready in under 20 minutes and not only does it have spinach and sausage, but a little kick to it too!
I'm always so impressed with the Monday pasta recipes I make. I can't remember the last time I didn't like a recipe that was a Monday dish. If you've caught on to my pattern for meal plans, I go back and forth between red meat and chicken (fairly consistent with it), I have one free day/leftover day, and there are some themes for each day of the week. Mondays are pasta recipes because they are quick. For those interested, Tuesdays are Mexican food, Wednesdays are soup/stew/chili recipes, Thursdays are throwbacks or Asian food, Fridays alternate pizza and burgers, and weekends are recipes that take a little longer to make.
This pasta recipe is simple and has a kick. I can't believe as a kid I refused to eat kielbasa or smoked sausage because it's one of my favorite proteins as an adult. I love it!
