I adore carrot cake and I am not particular how it comes - it can have pineapple, coconut, raisins, walnuts, pecans, or whatever. I think it's fantastic. I love having dessert-like treats for breakfast and knew these carrot cake muffins would be awesome! They do have pineapple, raisins, and walnuts in them and they aren't as sweet as carrot cake, so they make for the perfect spring breakfast.

This month's Fantastical Food Fight theme is ASPARAGUS. We are almost in prime season for asparagus and what better way to bring in the new season of food than with sharing tons of asparagus recipes. We have been having asparagus with Easter dinner over the last few years and one of our go-to recipes is this Asparagus Casserole. Think green bean casserole but with asparagus.


I would ask for this over green bean casserole any day of the week even though I love green beans. I adore asparagus and in this casserole, it's so addictive! I did switch up a few things from the original recipe to include omitting mushrooms because we're not huge fans of mushrooms (Cami loves them, but the rest of us, nope!). None of us really care for Swiss cheese so I subbed in Gruyere which turned out so very well. It's a wonderful side dish with a baked ham. I cannot wait to see what other asparagus recipes my blogging pals have to share today!

I've been trying to find the right way to do homemade fries for a long time. I love to use my deep fryer because I like my fries to have some crunch to them. Homemade fries for me are often not crunchy at all. I decided to try out this method from Bobby Flay's cookbook, Burgers, Fries, & Shakes, and see if it was what I was looking for. What I like about this recipe is that you don't have to peel the potatoes. I love potato skins and that's also less work in the long run. It is, however, a process. A lengthy process that requires making a mess. I think in the end it is worth it though because these fries are definitely the best homemade fries I've ever had.

We are relatively new to chimichurri but it's definitely up there with pesto for sauces we love. Chimichurri is a parsley-based sauce that originated in Argentina and Uruguay. I was definitely drawn to this burger in the Bobby Flay cookbook I have because it's a very simple burger, but the homemade chimichurri is on top and I knew that would make this a killer recipe. I was unable to find Manchego cheese but any sharp white cheese will work well as a substitute.

At this point, I think it's obvious that I love pasta. I still can't believe it took me so long to try carbonara because there is just something so ridiculously wonderful about carbonara. The creamy smooth sauce is just insane. Insane, I tell you. This is a very simple carbonara recipe but I think Nick, Matt, and Cami all like it more than others we've tried because there are no peas. Something about those three and hating peas in pasta dishes...I don't know. They are totally cool with them outside of pasta dishes, but the second you throw them in, they look at you like you've grown a second head. I really love the Parmigiana-reggiano cheese with this carbonara as well. It definitely amps up the fancy factor.

Chocolate Oreo Cake

My oldest kid, Matthew, is a boy after my own heart. He loves chocolate to the obsessive level that I do and pretty much always picks out a pretty extravagant chocolate cake of some sort for his birthday. Last year, he chose this Chocolate Oreo Cake and I gladly made it. It actually wasn't as much work as I thought it would be, which was great because it was a week after I was diagnosed with the flu and a pulmonary embolism, which came a week after getting a cardiac ablation. The last few years have been rough around his birthday but I definitely make sure that the kids are spoiled with whatever cake they want.

This cake is a dark chocolate cake made from scratch. It's moist moist moist! The frosting is sugary and full of Oreos. The combination of the cake and frosting is killer! Matthew definitely chose well.

Happy, March! I hope your month started off like a lamb because oh lordy, mine was a lion of a mess. That's not a saying, but it should be! I had a front loader washing machine malfunction that led to my drain pipe being knocked loose (although I couldn't see that was the issue) and water all over my floor. Thankfully, it took my husband all of 5 minutes to find the issue and place the drain pipe back where it needed to be. But it definitely took up a good chunk of my day worrying and trying to research.

In other March news, salad has made its way to my meal plan for the month on several occasions. I think most weeks have a salad somewhere in there because I miss them so much. I used to eat salads every day for lunch, but tend to eat leftovers nowadays. So any time I can grab a salad, I am so happy. I often eat salads when we eat at fast food restaurants (those Chick-fil-A salads are my jam!). This Cilantro Lime Chicken Taco Salad is one of my favorite homemade salads. There is a bit more of a labor of love, but it's not so outrageous that you're spending too much time in the kitchen. Honestly, you just dirty a few more dishes.

The Cilantro Lime Chicken is so amazing and the marinade really packs the punch of flavor. I really appreciate making the dressing from scratch and can say that this Baja Catalina dressing was unbelievable. In my opinion, you can't go wrong with beans, corn, and tomatoes on a salad, especially one for Taco Tuesday. The tortilla strips were just a bonus bit of crunch to the whole thing.

My youngest, Mason, is a very picky eater, as most toddlers are. So when he turned 3 last year, I thought instead of making cake or cupcakes that he wouldn't eat, I would make him a giant cookie cake with sprinkles. I figured he would be fine with the frosting because it was just around the edge and I could remove it from his piece. That little turkey didn't eat his cookie cake...and he was sneaking into the kitchen after his little party and eating the sprinkles directly from the cake. He turned 4 this past Sunday and I wisened up and just made him frosting-less funfetti cupcakes, which he loved.

I'm sure I have had Mrs. Field's Cookie Cakes before, but I'll be honest and say I cannot recall if I for sure have had that brand. However, I will say that this cookie cake tasted just as good as any one I've ever had. The frosting was perfect too :)

Pork Schnitzel Sandwiches

I can't believe it has taken me this long to post this schnitzel recipe! I usually make a recipe a few times - like 2 times - before I get around to posting it. I'm not one to test out a recipe a million times if it works the first time. However, it's rare that I'll put a newer recipe on my meal plan more than twice before getting around to sharing it on the blog. This recipe is most definitely the exception to that rule/routine. I think this schnitzel has been made at least half a dozen times if not more from the first time until now. It's hard for me to not pick it each month because I love it so much.

What makes this recipe so good? First of all, it's schnitzel. I have yet to try bad schnitzel. I'm not sure it exists. Then you have it in sandwich form with arugula which just makes me a happy gal. The honey mustard has a bit of a kick to it and even though honey is not a favorite food of mine and I don't particularly like honey mustard, I LOVE this honey mustard with sriracha. But my absolute favorite part of this recipe is hands-down the pickled shallots. They are such a simple component of the sandwich to throw together but the sandwich isn't the same without them. I never in a million years would have guessed that I would want vinegar soaked shallots on a sandwich, but here we are.

This month's Fantastical Food Fight theme is MINT CHOCOLATE. With March almost upon us, I figured mint chocolate would be the perfect theme for the month where St. Patrick's Day is celebrated and green food rules! I personally have not had a lot of mint chocolate in a while because I was told not to eat peppermint or chocolate when I had my second SVT episode (I blogged about my journey on my personal blog, if you're interested, but basically it's an arrhythmia where your heart beats super fast. My record is slightly over 250 bpm). However, it's been almost a year since my surgery to correct it, so I am pretty sure I'm allowed to eat whatever now. No restrictions on life. These brookies were the perfect way to enjoy one of my favorite flavor combinations again.

I have to admit that I am not actually too big a fan of Oreos, but I do like treats with Oreos in them. Cookies and cream is actually probably my favorite ice cream flavor now as an adult and any kind of cookies and cream dessert is going to be a favorite of mine for sure. These brownies are oh so fudgy and the bits of mint Oreos were so so so perfect in them. I am so excited to see what other fantastically delicious mint chocolate recipes are shared today. I'm ready for more treats like this! In moderation, of course :)

When I was really young, my favorite ice cream was Rocky Road or Cherry Nut. As I got into my preteens, I discovered Pralines & Cream and Butter Pecan, which have remained two of my favorite ice cream flavors into adulthood. I have been making loads of cheesecake lately and I thought this butter pecan cheesecake would be the perfect treat. I have made plenty of caprese recipes and shared them on the blog. The reason behind this is basically that I love pesto (it is my life blood, y'all) and I adore pairing it with tomatoes. I didn't fix the balsamic glaze because I'd be the only one to eat it, but I highly recommend doing so because caprese needs balsamic. What I particularly love about this recipe is that the chicken is marinaded in pesto and you add pesto to the pasta. Then you have these lovely little pearls of mozzarella that get all melty and gooey but still maintain their shape. It's just the best little surprise when you get a bite with a pearl.

You may notice a lot of cabbage popping up in my recipes lately. Back in the day, I was the only person in the family who would eat cabbage. Nick and the big kids just didn't like it and would grumble if it was in any recipes. Something happened...maybe it was a good recipe, I'm not sure, but now they all eat it without complaints. There's no side eye when they see me cutting up cabbage. I think we may have moved into them actually enjoying it and that makes me so happy because I LOVE cabbage. My mom used to boil cabbage leaves when I was a kid and I would happily eat a pot full. So any excuse for me to fit in some cabbage into the meal plan makes me extremely elated!

Just when I think I've made all the soups, I discover a new one that I just have to have. This egg roll soup is the bomb dot com. Like, who doesn't want an egg roll in soup form?! There is none of the hassle (not really sure it's that much of a hassle, but maybe time-consuming) of filling and rolling and cooking egg rolls, but you get all the flavors of it. The meat can be switched as per your liking - I went with the ground pork that the original recipe called for, but turkey, chicken, pork, etc. are all totally fine too. Or maybe you want to go with meatless. It's up to you! The wonton strips can be made homemade or if you are lazy like me, just buy them! We went with the garlic ginger flavored ones because they are SO good!

Good morning, everyone! I can't believe that January is already about over. It seems like it flew by - most likely because I have been crazy busy. I'm still adjusting to only posting three times a week (although I still have to get last Friday's recipe up), but I think it's going to be best for me for sure during 2019. I just finished meal planning for the month of February and I'm really excited about the upcoming recipes. We've taken to making a lot of old favorites instead of making new recipes. Chicken Yakisoba

So I had to look up what exactly yakisoba was and found out it translates to grilled noodles and is a really popular street food in Japan. Yakisoba can use either soba noodles or ramen noodles. This recipe features ramen, which if you've been around for a while, you may notice has been getting loads of love lately. I kind of blame it on the garlic butter ramen we had recently. I crave ramen all the time now! I definitely prefer jazzing up a packet of ramen noodles instead of just making it per instructions. This is a fabulous stir fry with lots of veggies and lots of flavor. You can adjust the sriracha to give more of a kick if you prefer or a little more sugar if you prefer it a little sweeter. I highly recommend this quick meal if you're craving a little Asian cuisine!

I must confess, I've never eaten any of the soups at Olive Garden. Don't shun me! I happen to adore their eggplant parmiagiana and get it every time I go because the rest of my family doesn't care for eggplant and so I don't get to eat it very often. I have heard that their soups are wonderful. Funny enough, I've made copycat recipes for all 4 of the current Olive Garden soups. Don't ask me how I've  made the recipes but never eaten the authentic thing - I have no clue. This is definitely my favorite chicken soup recipe and my favorite gnocchi recipe.

Copycat Big Mac

Is there anything more iconic than a Big Mac? This recipe is the perfect copycat to the McDonald's staple menu item.

At this point, I'm not sure anyone would be surprised that I have another copycat recipe to share. I adore copycat recipes and will continue to find new ones to make. In fact, I definitely think 2019 needs to be another year for me to create my own and I 100% have quite a few in mind that I would like to recreate. However, I adore finding ones from my blogging friends too and this Copycat Big Mac recipe is definitely a keeper. It's a really easy recipe to make and doesn't really have too many more steps than a regular ole burger. So why not have it instead of a regular burger? The sauce is iconic and this one does taste nearly identical and has all the right elements, in my opinion. I love that the buns are toasted and the burger patties are really thin. All-in-all, it is definitely a winner in my book!

This month's Fantastical Food Fight theme is OVERNIGHT OATS. January is National Oatmeal Month and I thought that overnight oats would be a wonderful theme for the first Food Fight of 2019. Many folks are trying to eat a little healthier or start healthy habits in the new year, so I thought sharing these great breakfast recipes that are make ahead would be perfect for January!

The recipe I decided to go with is one that was on my to-make list for such a long time. I knew that I wanted to do the peanut butter and jelly flavor combination (it was one out of seven or eight recipes, I believe). I've been eating pb&js for snack a lot lately and I wasn't really feeling a bunch of fresh fruit or anything super sweet, like the chocolate chip cookie dough overnight oats I had made years ago. I did substitute out maple syrup for honey because I don't care for maple flavor. These are so incredibly easy to make and the payoff is unbelievable the next day. It tastes like the perfect pb&j sandwich but in oats form. You can choose any fruit jam or preserves you would like. I went with blackberry jam which is my absolute favorite.
