Korean Spicy Noodles

A spicy stir fry with beef and veggies!

I love a good stir fry and this one has marinated beef with veggies and noodles! I think I typically do stir frys with broccoli and rice. I was unable to get my hands on the Korean sweet potato starch noodles but I definitely would love to for future makings of this recipe! The original also had mushrooms which I omit, so be sure to toss some of those in with the onions and carrots if you like them!

Tuscan Smothered Pork Chops

Pan fried pork chops with a delicious cheesy tomato and spinach sauce.

I've gotten a little off track with my Monday postings, but I'm still here and will hopefully have a little more time next week to work on blogging. End of the school year always seems as busy as the beginning. Even with one teenager now able to drive (what the what - how do I have a kid with a license?!), there's still so much going on!

This recipe is fantastic. I mean I really don't need much convincing if the recipe includes garlic, tomato, and spinach. It's definitely something new to do with pork than I typically make. It's absolutely wonderful with roasted potatoes for a side!

I love a meal in one pot and I love quick fixes for weeknights. I probably have a few recipes that are similar to this one but I really did enjoy the addition of spinach and sun dried tomatoes. I love pesto anything so this was definitely going to be a keeper!

General Tso's Chicken

Light, crispy chicken tossed in a sweet hoisin-soy sauce!

I am no stranger to posting a recipe every once in a while that isn't necessarily one I like because I have made it for my family and they liked it. This is one of those recipes. Nick loves General Tso's chicken and I've been trying to find a recipe that I like, but coincidentally (but not really at all), most of the recipes taste the same. I like Asian foods and I love hoisin especially, but I'm not a huge fan of this recipe. I don't by any means hate it, but I wouldn't choose to eat it. However, it gets posted on my blog because it's a solid recipe that my husband loves and my blog is my recipe box. :) I hope that this brings a little joy to someone who was looking for a good General Tso's recipe and that you love it as much as Nick does!

Best Tuna Melt Sandwich

Tuna melts with a zing of Dijon and the crunch of celery and red onion!

I've made plenty of tuna melts over the years and I am not sure if I've ever made any with red onion. I think it's a fantastic addition to tuna salad and goes along really well with the Dijon instead of yellow mustard in the recipe. I'd love to try this particular recipe with bagels - years ago, I tried a recipe for chicken salad on a bagel and fell in love. It's my favorite vessel for chicken salad.

Spinach Dip Pasta

Creamy spinach dip turned into a main dish hit!

I made it one whole month and have posted each Monday! Go, me! I'm hoping to continue on this way for the full year. I'm in desperate need of some recipes for my meal plan that I have forgotten about. This is definitely one of those recipes. I think pretty much everyone in my family eats spinach dip and so the thought of combining it with chicken and pasta was super exciting to me. I'm so glad that it turned out too and we all really liked it. I am happy to finally get it posted so that I have a visual reminder that this recipe exists!

Smothered Baked Chicken Burritos

Burritos got that much better smothered in a cheesy green chile sauce and loaded with toppings.

Occasionally, I like to make something that is maybe a little more involved and this recipe is that. The shredded chicken for the burritos, I'm sure, could be made ahead before the day you make the actual burritos. But they are also fine for the day of. The chicken is in the crockpot - so set it and forget it. Then you assemble the burritos for baking and prepare the cheese sauce while they bake. It's a lot of ingredients, but not as much work as much as prep.

Greek Chicken Gyros

I cannot get enough of anything that includes naan or pita, fresh vegetables, feta, and tzatziki. There is a local food place where I get chicken shwarma and gyro plates all the time and it's my obsession at the moment. I really liked the ease of this recipe where it's really just marinate the chicken and then cook it. Everything else is just chop or scoop and you're good to go. It's such a fresh and bright meal.

Creamy Herb Pasta

A quick, easy pasta dish with creamy herb sauce!

Hello and happy 2023! I'm attempting to see if I can get myself on a posting schedule. My goal is to maybe post once a week and go from there. I think I only posted 3 recipes last year, so I'm already a third of the way there :)

I know everyone is now very anti-words in recipe posts, but I'm going to throw some out there because I've been so MIA. I started my career in mid-2021 as an accountant for tv/film production companies at a local firm. After 14 years as a stay-at-home mom, it was a huge transition. I still struggle with trying to juggle everything but I'm trying to cut myself slack and really work on my time management. There are a lot of times where I forget to thaw meat that I need and I have to say, my 2022 birthday gift was an Instant Pot and holy baloney - that has been a lifesaver.

This recipe is a great recipe for chaotic nights. I really love when things can just be thrown together and it's very simple ingredients. I feel like you could switch up the vegetable if you really wanted to.

Buffalo Cheeseburger Tatortot Casserole

A spicy version of a childhood favorite!

Tatortot hotdish was a staple in my childhood and food bloggers have created some amazing variations that I was so happy to collect and try. This one doesn't have any veggies and there is some buffalo sauce and cheddar cheese mixed into it versus the cream of chicken/mushroom and green beans of the traditional version that I'm used to. We all really loved it but it's got buffalo sauce in it, so what's not to love.

Asian Style Sloppy Joes

Sloppy joes with a twist!

Although I don't think I'm quite done sharing recipes that may have been made in the old house, this is the last recipe I made in the old house. We brought the leftovers over to our new house (a whopping 2 miles away) and ate it while we were trying to unpack everything. I'm actually really glad that we had leftovers because it's so difficult to unpack a kitchen and try and find anything for at least the first week. Not to mention, this was in mid-April 2020, so still in the very major disruption of COVID and it was hard to find some foods because of supply chain issues. I was lucky to be able to make this recipe and to have it tide us over during our move!

Also as a note, I'm still not really on a good schedule where I can fit in blogging. I'm in the midst of my first tax season as a new accountant and even though I'm not a tax accountant...there is still plenty to do for prepping things for clients to do their taxes.

DIY Popeye's Spicy Chicken Sandwiches

The battle of the fried chicken sandwich yielded some wonderful copycat recipes like this Popeye's copycat!

This was meant to be posted last year but was from 2020 - it's always weird to see pictures from the old house. I personally loved the era of crispy fried chicken sandwich battles and I never got around to trying them all. I am, however, very partial to Popeye's fried chicken and so this copycat will have to do until we get around to having the real thing. We, of course, all really enjoyed it!

Olive Garden Chicken Alfredo

Hello everyone! It feels like it's been so long! Marching band season + full time job feels like two full time jobs sometimes and I was not prepared for the lack of free time I was going to have. Marching band is winding down and I actually had a relaxing, calm weekend last weekend, so I think I'll probably be able to start posting more regularly soon. I definitely have taken a different approach where if I am stressed I don't force myself to have to do things. It was not the end of the world if I didn't post. However, I have been blogging for 11 years and still have plenty of recipes to share (and save for me too).

This one is pretty self explanatory - a copycat Olive Garden alfredo. We love a good chicken alfredo in my household and we definitely loved this recipe. What's super wild to me is seeing the island from the old house in these pictures because I am that far behind on sharing recipes LOL.

Easy Cheesy Sausage & Pesto Ring

This easy dinner is like a savory monkey bread but less work!

This was one of the first foods I made back when we had moved into our current house. Since it was April 2020, we were still having issues finding some foods especially meats. I got lucky and was able to get sausage to make this recipe. It's very reminiscent of monkey bread but there's no cutting up all the biscuits. It's so much less effort and still turns out incredibly.

Broccoli Chicken Casserole

This casserole is cheesy with yummy broccoli and chicken - sure to be a family favorite.

We tend to eat a lot of broccoli in our household because it's one vegetable we all really like a ton. Casseroles are something I think a lot of Americans - especially in the Midwest - grew up eating, so they are very much a comfort food for me. This one has homemade sauce and a good amount of cheese. Super easy to make and really yummy. The original recipe had mushrooms (that you saute with the onions) but Cami is the only one who eats mushrooms so they usually get omitted.

Crockpot Fiesta Ranch Cream Cheese Chicken

A great and versatile recipe for tacos, enchiladas, burritos, etc.

This is another one of those recipes that just does not photograph well, but it tastes amazing. It's super versatile and you can use it in tacos, burritos, enchiladas, etc. We did tacos/burritos and used tomato, lettuce, cheese, and I did avocado ranch dressing too. It makes a good amount so it's great for a crowd or for meal prepping.

One Pot 30-Minute Cheeseburger Pasta

I think I'm starting to edge into the recipes I started making when we first moved back in April 2020 to our new home. I cannot express how excited I was for the amount of natural lighting - it has really made taking pictures of food way easier - especially since I have gotten rid of my DSLR and am just using my phone. This recipe was a great, easy meal for the hecticness of moving. I didn't have pictures of it, but I loved it with ketchup. It was giving me a bit of tatortot casserole vibes and it needed the ketchup to make it complete!

Creamy Chicken Lasagna

Who needs red sauce beef lasagna when you can have chicken lasagna with a rich cream cheese based sauce and spinach!

So my family doesn't like lasagna. None of us do. However, we have been trying white sauce recipes or recipes that utilize cottage cheese instead of ricotta and that seems to have served us well. This particular recipe is white sauce AND cottage cheese. It really reminds me of One Pot Chicken Lasagna Soup that I've posted previously and make quite a bit.

Korean Beef Bowls with Veggies

Ground beef and onions seasoned with the most delicious Korean sauce served over rice with stir fry veggies!

I LOVE little bowls like this that have loads of veggies and are over rice or quinoa. This one has this amazing sauce that really sets it apart from other recipes that I've had. Nothing else really holds a candle. You can vary the vegetables to your liking but I really liked the red bell pepper, zucchini, and carrot combo. Such a colorful and delicious meal!
