I love a meal in one pot and I love quick fixes for weeknights. I probably have a few recipes that are similar to this one but I really did enjoy the addition of spinach and sun dried tomatoes. I love pesto anything so this was definitely going to be a keeper!

Easy Cheesy Sausage & Pesto Ring

This easy dinner is like a savory monkey bread but less work!

This was one of the first foods I made back when we had moved into our current house. Since it was April 2020, we were still having issues finding some foods especially meats. I got lucky and was able to get sausage to make this recipe. It's very reminiscent of monkey bread but there's no cutting up all the biscuits. It's so much less effort and still turns out incredibly.

Caprese Fundido

Roasted tomatoes with pesto and tons of cheese make for such a fantastic and easy appetizer served with pretzel crisps or flatbread.

I love pesto, so this was a no brainer recipe to make because pesto is delicious. I did, however, not make the flatbread part of this recipe because it was NYE and I like to make a lot of different foods, so I try not to overcomplicate things. We did pretzel crisps instead of mini flatbreads. Anyways, this is such a great little cheese dip for a gathering (pre-COVID) and is honestly a really good amount of food for 5 people, like my immediate family. Since we all love cheese, it doesn't take long to absolutely obliterate an appetizer like this :)

Sausage Pesto Lasagna Rolls

Only 5 ingredients and way less heavy than a pan full of lasagna, this sausage and pesto combination is the best!


Sometimes it's a little difficult to find a lasagna recipe that we all like. Somehow it just so happens that none of us really care for lasagna. I personally think it's the ricotta cheese in it, but none of us will choose to eat it. However, I find so many recipes that I think...maybe this one will be one we enjoy. I think lasagna rolls are particularly a hit with us because they aren't as heavy as lasagna, nor are they as messy. Most of them do not use ricotta cheese in them and they are really quick compared to actual lasagna. My family loves pesto so I knew this recipe wouldn't let us down!

Pesto Prosciutto Pizza

So many dream ingredients on one incredible pizza: pesto, prosciutto, feta, mozzarella pearls, and kale!


I kinda love how puffy my pizza crust got here but I think I finally found my happy medium pizza crust. I used the same ole recipe that is my tried and true - split the recipe in half, as you are supposed to do - and instead of prebaking it, I put the toppings on and then bake the crust just once. It keeps it from getting out of control puffy, so it's a thinner crust, but it's not so thin that it feels like you are eating cardboard.

Anyways, here I am sharing another recipe with pesto. I love love pesto and I was super excited for this recipe. It did not disappoint. I loved the salty prosciutto and the tangy feta. Also, mozzarella pearls are my favorite way to get mozzarella on my pizza. I love how gooey and melty they get! And kale! AH! This pizza has so many good parts to it and I adored it.

Pesto Spaghetti Carbonara

A classic carbonara with an added burst of flavor from pesto


It was bound to happen and today I get to share one of my favorite recipes ever: pesto carbonara. Fun fact: I tried to make this with zoodles at the same time for Nick. It did not work. I think there is too much moisture in zoodles to keep enough heat long enough to cook the eggs. It was a sloppy mess. So I don't recommend that...just make it with regular pasta. The bit of pesto is seriously a fantastic addition to carbonara!

I finally have had luck with finding zucchini in the summertime. For years, it seems like zucchini...which is a summer squash...was completely MIA in the summer. I like to plan lots of zucchini recipes when it's available because it is my favorite veggie. This recipe was high on my list because I adore bolognese and pesto is my life blood (as I have stated many-a-time). It was everything that I could have wanted and it's the perfect summer dish!

One Pot Pesto Chicken Alfredo Zoodles

This low carb one pot meal can be ready in under 30 minutes and is a lovely summer meal!


Early last summer, Nick decided to do the keto diet. He had broken his foot and wasn't able to hit the gym and did not want to gain weight since he is still in the Reserves. The only plus side to this diet from my point-of-view (I love carbs) was that Nick started eating loads of zucchini which is probably my favorite vegetable. The kids and I did not follow the keto diet, but there were nights that I fixed a keto-friendly meal so I wasn't make a variation of whatever we were eating (which could be a bit annoying at times...zucchini carbonara did not turn out well haha). This recipe is basically everything delicious - zucchini, pesto, alfredo. YUM! It's a one pot meal and can be cooked in under 30 minutes. It's a win all around!

I have made plenty of caprese recipes and shared them on the blog. The reason behind this is basically that I love pesto (it is my life blood, y'all) and I adore pairing it with tomatoes. I didn't fix the balsamic glaze because I'd be the only one to eat it, but I highly recommend doing so because caprese needs balsamic. What I particularly love about this recipe is that the chicken is marinaded in pesto and you add pesto to the pasta. Then you have these lovely little pearls of mozzarella that get all melty and gooey but still maintain their shape. It's just the best little surprise when you get a bite with a pearl.

I don't usually purchase store bought pizza crust. I much prefer to make a batch of my favorite pizza dough and freeze half. Then it's just a matter of thawing the crust during the day in preparation for dinner. I love this easy pesto pizza because it truly is easy. And there's pesto. And then more basil. This speaks to me on so many levels. The original recipe calls for topping the pizza with just mozzarella and then baking, then adding the remaining toppings after baking. I prefer the toppings get melted into the cheese, so I baked it all :)

I love stuffed zucchini (and peppers) and wish I could have the more often. BUT every time I put it on the menu because our store has had zucchini, it ends up being gone and I have to quickly find an alternative. It really bums me out. Zucchini is my favorite vegetable and I would eat it literally all year round. It's just so fantastic. The original recipe did not contain any meat, but I have a bunch of complainers in the house if a meal doesn't have meat. So I opted to add sausage because I felt it would pair with pesto better than another meat.

When I was really young (like middle school), I used to make potatoes in the oven a ton. By the time I hit my teenage years, I loved to cube up potatoes and cook them up in a skillet. Once I met my husband, we would cook up either fried potatoes or roasted potatoes constantly. They are total comfort food and they go with everything that isn't pasta or rice-based. I was excited to make these potatoes because not only do they have bacon and cheese, but PESTO too. Oh, how I love pesto. Pesto makes everything better. And with bacon, these potatoes are just incredible.

I am so excited for this week's Sunday Supper Movement theme: SLOW COOKER COMFORT FOOD RECIPES. I decided to share this meal because pesto is my ultimate comfort food at the moment. I basically crave pesto pasta. Although this recipe isn't made completely in the crockpot, cooking the pasta only dirties one more dish, so that's not 100% inconvenient. Not that inconvenient at all. :) I just love how buttery pesto-y this pasta gets. Plus all the cheese! I'm looking forward to  a ton of the recipes that my fellow Sunday Supper bloggers have shared because they are so diverse!

I am in love with pesto recipes and make them frequently. I've joked that pesto is my life blood. Because I'm just adding pesto to everything at this point. It's amazing spread on the bread in a turkey sandwich. I've added it to spaghetti sauce. I just need all the pesto things. I've also recently found that I am digging roasted tomatoes in everything too. Thankfully, Nick has mostly gotten over his dislike of tomatoes and loves roasted tomatoes in recipes too. I added chicken to this recipe to make it a little more hearty and to transform it from a side dish to a main dish.

Hello, everyone! I am back for another Sunday Supper Movement event. Today's event is hosted by Rini of Healing Tomato and the theme is RECIPES USING FRESH TOMATOES. I immediately thought of this dish because it is one of my more recent favorites. I initially made it without pesto, but I feel the pesto really adds a depth of flavor it was missing prior to. Plus I have been on a very big pesto kick lately. It honestly doesn't matter what I'm trying to eat...a sandwich, pasta, pizza, etc., I've probably put pesto in or on it. I personally think this casserole would also be great with ground turkey or beef or even Italian sausage.

We have burgers every other Friday, so I'm always looking for different kinds of burgers to make. Some are pretty labor intensive while others, like this one, are simple tweaks that really make the burger quite different. You prepare the burger much like you would any other...form your patty and cook it. The cheese of choice (weapon of choice har har) is mozzarella and you top the burger with just tomatoes and pesto. It's all very simple, but outstanding in flavor. You can make your own pesto or buy some at the store - it's up to you. I served mine up on crazy good butter buns!

I live for quick meals. I thought I would be able to cook for longer times once Mason got a bit older, but now at 18 months, he needs to be supervised more than ever. I now realize that having one toddler is much harder than two. I know that doesn't make any lick of sense, but with Matthew and Cami, they distracted each other. Also neither one was a climber. So anything that I can fix quickly is best. Of course, that's also because I am holding down the fort without Nick while he is in a different fort (army training). I am in love with this recipe because it takes little effort and it's such a great dish. I hate that I can never find the words to describe food other than delicious - food bloggers, you have got to know my pain! The alfredo-like pesto sauce is rich, creamy, and that BASIL!! Yes! Tomatoes add a bit of juiciness and the chicken - well, I could have eaten that alone, to be honest. It's amazing how uncomplicated seasonings can be the best ones!
