I love a meal in one pot and I love quick fixes for weeknights. I probably have a few recipes that are similar to this one but I really did enjoy the addition of spinach and sun dried tomatoes. I love pesto anything so this was definitely going to be a keeper!

One Pot 30-Minute Cheeseburger Pasta

All the goodness of cheeseburgers in a quick pasta dish with peas thrown in there so you get your veggies too!

I think I'm starting to edge into the recipes I started making when we first moved back in April 2020 to our new home. I cannot express how excited I was for the amount of natural lighting - it has really made taking pictures of food way easier - especially since I have gotten rid of my DSLR and am just using my phone. This recipe was a great, easy meal for the hecticness of moving. I didn't have pictures of it, but I loved it with ketchup. It was giving me a bit of tatortot casserole vibes and it needed the ketchup to make it complete!

Spinach Artichoke Pasta

Who needs spinach artichoke dip when you can have your favorite appetizer as a dinner?!

I am always surprised at what my family is willing to try when I pick something for the meal plan that is more "off the cuff" - I think that Nick will eat spinach artichoke dip sometimes, but not 100% sure. The kids have never had it. I love it! Of course, this being a one pot meal was a plus and I really liked the garlicky spinach. I don't think it's the rest of the family's favorite pasta dish (to be fair, there are so many to choose from), but I was really happy I put it on the menu and finally got around to making it.

Cheesy Kielbasa, Rice, and Broccoli Skillet

Extra cheesy one pot skillet meal that is so easy to throw together and is a crowd pleaser!

I think it's wild that I didn't like kielbasa years ago. It's one of my favorite things. I typically will buy turkey sausage and I'm not sure if that counts for kielbasa but I do like both. I really loved how easy this recipe was - it really reminded me of something I would have made when I was first married. I made a lot of easy skillet meals or casseroles and this was very much that.

Turkey Parmesan Pasta

I really love pasta dishes because they are so quick and they are typically easy on the wallet too. I was happy to find this really easy recipe because I have been trying to use more ground turkey than beef. Again, this is a really simple dish to throw together with only 7 ingredients. You may already have many of these on hand. It's a one pot meal - some of my favorites - and it's ready in under 30 minutes.

One Pot Greek Chicken Risotto

This baked risotto is super easy to make with less babysitting - and it's full of Greek flavors!

I've only made risotto a handful of times, but I've watched so much Hell's Kitchen and I'm certain that this method is probably frowned upon by the pros. However, I really liked this method and I found it to be perfectly fine. It resulted in a delicious dinner and I was, of course, over the moon excited about the Greek food. I used a really wonderful feta cheese that had Mediterranean herbs in it and it's probably my favorite feta of all-time.

Baked Chicken with Tomatoes, Basils, and Red Chillies

The easiest oven-baked chicken recipe with loads of flavor from fresh tomatoes and basil and spicy red chile peppers!

I love this recipe because it's ridiculously easy to make with few ingredients but it doesn't skimp on flavor. The chicken is tender, the bursting tomatoes are juicy, the peppers add the perfect amount of heat, and the charring on the basil leaves adds so much dimension to the flavor. It really is a great recipe and so so easy. We paired ours with roasted potatoes and steamed broccoli.

Cheesy Ground Beef Enchilada Chili

This enchilada chili can be made more like a soup or even more like a dip - depending on what you want!


I posted my first pumpkin recipe of the season on Wednesday, but another reason I'm excited for fall is that I get to share soup recipes again. My family eats soup or chili each Wednesday, even throughout the summer, but I try to be a little more seasonal here on the blog. I want good recipes to get the right attention, so it makes more sense to post soup when people want soup! This chili is more soup-like to me, but the original recipe noted to add 1/2 cup each beef and chicken broth to make it thicker or even omit the broths altogether for a dip. It has so much flavor for such a simple recipe.

One Pot Philly Cheesesteak Pasta

A wonderful one pot pasta recipe with all the best parts of a Philly cheesesteak!


I'm testing out a new print feature and I hope it works out alright. I was using Google sites but the new version doesn't format correctly nor does it automatically bring up the print window like the classic version did. So I'll have to work on that here and there and it will probably take an eternity. 10 years of recipes will have to be converted over - AAH. Anyways, here's another lifesaving one pot recipe that is perfect for when you have to do time-consuming, repetitive, mind numbing blog work :P

All kidding aside, I do love one pot meals. It took me a bit to get used to the right amount of stirring and ensuring the pasta gets cooked properly and doesn't stick to the bottom of the pan, but once you master that, these are the best kind of recipes for really busy nights. Love having all the classic flavors of Philly cheesesteaks in pasta form!

Creamy Spinach Artichoke Chicken

Today is my blog's 10th birthday! I cannot believe I have blogged for 10 years. 10 years worth of recipes. What's funny to me is that this is the first time I will add the label for artichokes as an ingredient. In 10 years of blogging, I've never posted a recipe with artichokes!

I've been on a spinach artichoke streak lately where it's what I'm craving and so I've tried out a few recipes that are not specifically spinach artichoke dip because that's basically the only way I've ever eaten it. I have been trying to eat less red meat (still) and I'm trying to find new chicken recipes that don't involve pasta. I really enjoyed this recipe. I would love to try my hand at handling a fresh artichoke soon!

One Pot Ground Beef Tortellini Casserole

I don't make a lot of tortellini but occasionally I really crave it. I wanted to find a quicker recipe that didn't involve a long stewed sauce or crockpot or anything like that. One pot recipes are fantastic and there are more and more of them now. This recipe was quick and easy and made for such a hearty and filling dinner!

Chicken Parmesan Baked Pasta

This one pot recipe takes on the flavors of chicken parmesan into a lovely baked pasta dish!


My family is pretty big into chicken parmesan and any recipe that is any variety of chicken parmesan. I knew this would be a quick winner in our household and I was right. I made a few adjustments to the original recipe - it called for whole tomatoes that you blend, but I just used diced tomatoes and skipped dirtying my blender altogether.

I love lemon in savory dishes and now that spring has sprung, I want some lemon savory dishes! This recipe utilizes asparagus too, which is in season and usually a bit cheaper during this time of year. This recipe is a one pan recipe that can be ready in under 30 minutes and it's a fairly easy one to make. Nick actually made this last year when Cami had her weekly choir practice after school across town and I took her out there and then went to the library to study while she practiced. It was fantastic and we made it again just a few short months after. It's definitely going to be a regular recipe.

Cheesy Gnocchi Skillet

A great one pot sausage meal ready in under 30 minutes without complicated ingredients!


I feel strange posting recipes as normal, but I have been cooking as normally as I can while the shelves are picked clean. I've made some changes here and there on the fly, but have been pretty lucky to find what I need - because I planned for the whole month in the end of February not knowing what would happen in a few short weeks.

For us, food is starting to be better kept in stock but when it was more scarce, sausage was more available than any other protein. I couldn't tell you if there's gnocchi. We have barely had diced tomatoes - but you could go fresh. This recipe would be great if you can find those ingredients or make some slight modifications. If you can't, save it for later :) I know I have eyed some things I probably won't be able to make in the near future and have been saving them to my pin boards.

I hope that you readers are doing well and you and your loved ones are in good health. My hope is that with all the stay home orders going out this past week that this will be over soon and we can go forward with more insight on how to better prepare ourselves and prevent the mess that has ensued.

Colcannon Soup

Classic colcannon flavors of cabbage, cheddar, and potatoes in a tasty soup!


We enjoy our weekly soup nights and have begun to run out of new soup recipes to try, so it's always nice to find something different. I was somewhat aware of colcannon because I've made colcannon mashed potatoes before and loved them so dang much. I don't really get to make a lot of foods with cabbage or leeks, so I really was excited and looking forward to this one and was not disappointed at all. It's also made in one pot and takes less than 30 minutes.

One Pot Cauliflower Chowder

 This one pot soup recipe is slow cooked on the stove for under an hour - you get the best of both worlds, an easy soup that doesn't take too long to make but tastes like you've had it simmering all day!


I'm sure at this point most of my chowders are very similar recipes, but nonetheless, here is another cauliflower chowder recipe. You could omit the bacon or use vegan bacon (that's a thing, I think?) and use vegetable broth for a completely meatless, vegetarian-friendly soup. I enjoy that this recipe is not exactly a quick recipe, but is not a slow cooker, crockpot recipe either.

Hashbrown Potato Soup

No peeling and cutting potatoes for this soup recipe - the work is done for you!


New soup recipes are a little far and few between now that I have been making them every week for years. We do a lot of repeats. We do a lot of similar recipes. I have never made a soup with hashbrowns before and I was definitely intrigued. I love the shredded carrots that get sauteed. It reminds me a little of a chowder and with a milk-based soup with cheese melted into it, I really like to put a little hot sauce into it. It just does a little something something to it.

Chicken Fajita Pasta

Chicken fajitas turned into a one pot pasta dish with a kick of Rotel added in!


I've made some steak fajita pasta dishes in the past, but I think this may be the first chicken fajita pasta recipe I've made. It's an easy dish to make when you want something a little for Taco Tuesday. Or maybe you want to carbo-load up and need a good pasta dish. Either way, this is a keeper! Super simple and fast.

Sausage and Parmesan Garlic Linguine

This one pot pasta dish can be made with or without the sausage and is mouthwateringly delicious!


I had this recipe saved for a while and wanted to make it, but as I've said before I have some complainers for meatless nights. So I did end up throwing a little Italian sausage into the mix to make everyone happy. It was really so easy and I could make this most times (meatless) whenever I wanted because I pretty much always have the ingredients on hand.

Beer Cheese and Macaroni Soup

This creamy, cheesy beer soup with bacon and veggies is just what is needed on a cold night!


I am a person who does not enjoy beer as a beverage. Not in the slightest. I've tried many different kinds, but it's really just not my thing. I, however, do enjoy beer in soups and stews and savory dishes. I'm actually going to be using beer in a dessert recipe later in the year and I'm curious to see how I'll like that. Beer cheese is one of those things that I can't explain why I like. It tastes like beer. I don't like beer. But I like beer cheese. I knew this recipe would be such a quintessential cold weather kind of food. I think of it as a really good fall dish, but I also think it isn't limited to just fall :)
