Taco Bell Chicken Quesadilla Copycat

Update 7/15/16: In the near future, I am hoping to update the sauce recipe. I made it with Greek yogurt to appease Nick (he hates mayonnaise) and it tasted a lot closer to the sauce Taco Bell uses.

Update 12/14/12: Made these again. Somehow the sauce was a little too sweet, so we will try again next time to mess with the sauce. But here are some newer pictures, not taken by my cell phone. :)

Tatortot Hotdish

Picture update 12/13/2013

There are many many variations of Tatortot Hotdish, so I'm starting with the original that my mom made all the time and then doing a bit of the variations of what I do sometimes and my mom did sometimes too.

Why-I-Joined-Zaar Carrot Cake

Weird name, right? I got this from a site that was formerly known as the Recipe Bazaar. This is what I used to make my birthday cake and it's the most delicious carrot cake I've ever had!!

What you need:
For cake:
  • 2 cups all-purpose flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. ground cinnamon
  • 1 3/4 cups granulated sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 tsp. vanilla extract
  • 2 cups carrots, shredded
  • 1 cup flaked coconut
  • 1 cup walnuts, chopped (I omitted this because Matthew may have a nut allergy)
  • 1 (8 oz.) can crushed pineapple, drained
For Frosting:
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar

Mix flour, baking soda, baking powder, salt and cinnamon.
Make a well in the middle.
Mix sugar, vegetable oil, eggs, and vanilla together.
This mixture will be very thick.
Add sugar mixture to flour mixture and mix well.
Add carrots, coconut, walnuts and pineapple; stir. Pour into a greased, floured 9x13" pan and bake at 350 for 45 minutes. Supposedly the center may sink a little, but I didn't see that. Cool.
While it's cooling, cream the butter and cream cheese until smooth.
Add powdered sugar and beat until creamy.
Wait until it is completely cooled (which I did not do) and add frosting.

Creamy Chicken with Noodles

Update 5.29.2012: Wanted to update the picture - we made this and served it over bowties!

Hamburger Pizza

This one is kind of a DUH. It's super easy to make, but I'm going to share it anyways. Growing up, my mom ALWAYS did homemade pizza. I, on the other hand, am a little more lazy and happen to hate Pillsbury pizza dough kits and just bought a premade crust. It was delicious. I want to say it was a brand "Mama Mia" - don't quote me on that though.

Skyline Chili Copycat

Picture update 12/13/2013
Skyline Chili Copycat | Fantastical Sharing of Recipes

Before I begin...this is probably the most nerve-wracking recipe to make because I knew I had to get it PERFECT!!! My husband hails from Cincinnati and his mom makes this a lot. I don't know if the recipe is the same, but it did get the seal of approval from my husband for being right! And that was a lot of pressure, to go up against his mom AND a very popular restaurant chain!

Cheddar BBQ Chicken Breasts

What you need:
  • 4 boneless skinless chicken breasts
  • 1 cup BBQ sauce
  • 8 bacon strips, cooked
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions
*Note: I did 3 chicken breasts, so don't get confused by my pics :)*
Cover chicken with bbq sauce and bake until done, 20-30 minutes at 350.
Remove from oven and add more bbq sauce.
Add bacon on top of chicken.
Add cheese and return to oven until the cheese melts - about 5 minutes.
Add green onions to the top and serve!
