Rosemary & Thyme Roasted Potatoes

I based this off a completely different recipe (Crispy baby potatoes with sour cream and bacon from Sandra Lee). I made it with chicken I marinaded in what I thought was McCormick's Baja Lime marinade, but now that I'm googling around, I think it's actually Mojito Lime. Who knows? I swear it was Baja Lime. Anyways, I marinaded my chicken breasts and baked them. It was an absolutely delicious meal! I left the skins on mine because I love potato skin. You don't have to though.

A Slow Week

I'm doing a little clearing of my pantry and freezer in an attempt to make more room, save some money, and not use my oven this week. My a/c is broken and it's supposed to get hot this week here in Upstate NY.

Since there won't be many recipes this week, per a reader request, I'm going to be working on getting a printable feature up on all the recipes!

~Twisted Thursday - 7.14.2011~




From my friend Candace Crismon:
This is an Olive Garden copy cat that I absolutely love. And I serve with breadsticks or I sometimes buy bread bowls from Panera Bread!
 
                                          Zuppa Toscana Soup
 
 1lb italian sausage, crumbled  (you can also use the jimmy dean sausage rolls any flavor)
1/2lb Smoked bacon, chopped or (Oscar Meyer real bacon pieces)
4 cups water
2 14.5 cans broth(chicken,beef, or vegetable)
2 large Russet potatoes, cubed or(yellow or red use your judgment)
1 medium onion, chopped
2 cups chopped kale or swiss chard
1 cup heavy whipping cream 2 garlic cloves, crushed
salt and pepper to taste
 
  1.In a skillet over medium-high heat brown sausage breaking into small pieces as you fry. Drain and set aside.
  2.In a skillet over medium-high heat brown bacon breaking into small pieces as you fry. Drain annd set aside. (If using the real bacon pieces skip this step and put them in the soup at the end.)
  3.Place water,broth,potatoes,garlic,and onion in a pot simmer over medium heat until potatoes are tender.
  4.Add sausage and bacon to pot simmer for 10 minutes.
  5.Add kale and cream to pot, season with salt and pepper. Heat through.

Homemade Spaghetti-O's

So this is a lazy spin off of a recipe I found on Cooking with my Kid. I would have to say that this is much better than original Spaghetti-O's. I used to eat them every Saturday growing up and got a little sick of them, so I'm glad I found something similar, but not as gross.

Cake Batter Pancakes

So...in addition to the Cinnamon Roll pancakes that I had been jones-ing to try...Cake Batter pancakes were next on my list. I love cake. I'm not really big on pancakes, but I will definitely be making this recipe and the cinnamon roll pancake recipe regularly! They are fantastic and make breakfast worth looking forward to!

Pepperoni Grilled Cheese

Unfortunately, I didn't get any pictures of this recipe in the rush of making lunch for two very starving children. But it will definitely be made again and I will update with pictures later. This was a great take on traditional grilled cheese and a big hit for my pizza-obsessed kids :)

Molasses Cookies

Molasses cookies are a staple of my childhood. I do love chocolate and anything with chocolate in it (well, mostly anything), but these were my very favorite cookies. They are crunchy on the outside and soft'n'gooey on the inside. They stay soft for many days. Not to mention, they are just plain good!

3 Envelope Chicken

Update 12/14/12: This is still one of our favorite recipes. I hated that the chicken looked dry in the picture because it is anything BUT dry. It's moist, tender, and juicy. So here's a new, updated picture:

So I made this recipe completely unsuspecting of what exactly it would taste like. I snuck a bite while I was cutting up one of the pieces for my kids and I was blown away. My grandma used to make chicken just like this and it immediately made me think of 8 billion different memories I had at my grandparents house. The chicken itself is so moist and tender and it is jam-packed with flavor. I love the bite of the ranch mix.
