Root Beer Float Pie

A childhood treat in (no bake) pie form that is so incredibly easy to make!

As a child, I had root beer floats all the time. My grandma kept Mug root beer and vanilla ice cream (by the gallon) on hand, so when I visited I could have a root beer float. As an adult, I really don't drink soda very often. I might have the occasional root beer or Sprite when I have fast food, but that's max once a month. I would give up soda completely except that I love root beer entirely too much. I saw this recipe and immediately saved it and put it on my meal plan.

I like to let my ice cream melt just slightly to stir into the root beer to get that light frothy mixture and this root beer float pie really captures that stage of a root beer float. It's heavenly. This pie doesn't take many ingredients and it's no bake. It's perfect to make the night before any get together. It's so easy!

I love no-bake desserts that mimic cheesecake and I love any time I can get a cherry recipe because I don't have cherries enough. I think on the rare occasion I do, it's atop a sundae or milkshake. I don't think I have ever made anything from fresh cherries, so that's definitely on my foodie bucket list. But for now, I have to share this wonderful dessert that is no-bake and uses canned cherries. You can absolutely bake the crust for more sturdiness, but I actually like it better unbaked. This really reminds me of the Jell-O cherry cheesecake but a littler heartier.

Banana Split Trifles

I love desserts that can be portioned individually and I love them even more when they can be portable, like in this recipe for these delish trifles. They take a little bit of time to make, but they truly aren't too bad. The cake is made from a box mix and is light and fluffy. The pudding is homemade which was a first, if I'm remembering correctly, for me. It was super simple and quick. Then it's just a matter of building your trifles into mason jars and you've got a great dessert for a cookout in the summertime. The fresh fruit was simply perfect in this - absolutely reminiscent of a banana split sundae.

Welcome back to another round of Fantastical Food Fight. Today's theme is CHERRY COBBLER because today is National Cherry Cobbler Day! Unlike last month where the BLT had to be a sandwich, today's recipes don't have to be a traditional cobbler. In fact, the Food Fighters could do muffins, oatmeal, pizza, etc.; it just had to be reminiscent of cherry cobbler. I chose to make Cherry Cobbler Bars and it was actually our dessert for Mother's Day that also fell on my husband's birthday.

On Sunday, I was kind of running around my kitchen like a chicken with its head cut off. I made maple bars for Nick's birthday breakfast because I've been promising them for forever and kept not making them. Then I got dinner into the crockpot. Then I started on this dessert. In the midst of it all, I forgot that I had purchased cherry pie filling instead of making my own like the original recipe called for. So I started making the pie filling! LOL. I got down to the last part of it: add 2 cups pitted sour cherries. Whoops. I purposefully didn't make it because I really didn't want to bother with cherries. Can you buy them pre-pitted? Is that a thing? I'm not sure, but I will say that it was super easy to make the filling up until I got to the part where I didn't have cherries to put into it. I'm definitely going to have to use it to make different fruit fillings!

These bars were very easy to make (even with my filling mishap) and they were wonderful. The dough part is more biscuity than I expected, but not a dry, hard biscuit. I made my glaze with almond extract because I wanted it to stay white and my vanilla extract is brown. I personally think the almond glaze worked really well with the cherries and cobbler portions of the bars. Overall, this was the perfect sweet but not too sweet dessert for our Mother's Day meal!

Cherry Cheesecake Frozen Yogurt #SecretRecipeClub

It's time again for Secret Recipe Club reveal day for my new group, Group C! What is Secret Recipe Club? It's a bunch of food bloggers separated into three groups that post once a month on a designated Monday. Each month, we are paired with another foodie from our group secretly (hence the name). We then pick a recipe (or two or more) from that blog and make it. On our reveal day, we reveal whose blog we had and what recipe(s) we chose all at the same time. It's like a Secret Santa every month, but with food and blogs! It's a great deal of fun :)

Group D kept getting smaller and smaller and the other groups were also starting to shrink, so we decided it was time to go back to 3 groups until we need the 4th group again. With that shift, I moved to Group C and also took over the hostess duties for Debbi, who has been very busy lately - so it worked out well for both of us! I'm very excited to get a new set of bloggers to visit and feature for reveal days.

This month, I was assigned to Group C member, Sara. She blogs at Cook With Sara - let me just say that I have had the hardest time making sure I didn't add the "h" at the end. Sara - do Saras without the "h" refer to it as the right way to spell it? Because that's what I always do - Sarah with an "h" is the right way :P I digress, Sara describes herself as a Midwestern girl with a love for food and cooking. She learned how to cook and bake from a young age from her mom and focuses on making old and new recipes with mostly every day ingredients. And I love that! I knew from the get-go that I would have no trouble finding a recipe to make on Sara's blog. I decided upon the Cherry Cheesecake Frozen Yogurt because I love frozen yogurt and have only made a few recipes. Two, if I remember correctly.

I definitely went the sweets route when looking for recipes, so before I talk about the froyo, let me discuss the other recipes I almost made. Prepare yourselves because this is about to be a lot of recipes. I saved Pineapple Sorbet, Caramel Toffee Crunch Cheesecake, Caramel Macchiato Cheesecake, White Chocolate and Macadamia Blondies, Peach Cobbler Bars, Cookie Butter Blondies with White Chocolate Chips, Butterscotch Cashew Bars, Carrot Quick Bread with Cream Cheese Frosting, Peach Cobbler Coffeecake, Blueberry Oatmeal Bread, Bananas Foster Bread, Lucky Charms Chex Mix, and Blackberry Rhubarb Bread. As you can see, I had a hard time choosing a recipe...like a really hard time. But since I had only made froyo twice, I had to make her froyo!

Best decision ever!! I only made some slight adjustments. Instead of plain yogurt, I used vanilla yogurt and I couldn't find any fresh cherries, so I resorted to a mix of frozen, pitted cherries from Kroger's Private Selection brand. I thawed them a little bit and then chopped them. I had no problem with the recipe with those adjustments and I froze it overnight. It was so lovely. It literally tasted just like cherry cheesecake. It was super rich though, so you can't really overindulge on it even though it's a little healthier than ice cream. It got huge thumbs up from everyone in the family. You would never know it was frozen yogurt, so it could definitely trick a few folks who may think froyo sounds weird. I'm convinced it could turn a froyo hater (if that is such a thing) into a froyo lover!! :) Thanks, Sara, for the awesome recipe. I cannot wait to try more of the recipes on your blog!

Back in the day, I used to live for the no-bake cheesecake box mix. I had a mega sweet tooth when I was pregnant with my now-8 year old daughter, Cambria (don't mind me while I sob in the corner here - I've been saying that a lot lately. All my babies are getting so big). I would buy the no-bake cheesecake mix at least once a month and eat it by myself in two or three days. I really appreciate when I can find a good homemade recipe for box mix or something I would order at a restaurant. Copycat recipes are the best! Like the box mix, this recipe is no-bake. I like that it's called a cream cheese pie instead of a cheesecake. To me, it is a little more logical to call it a pie.

I'll be honest here...I'm really picky with pie...mostly because I don't like pie crust. So it really helps that this is graham cracker crust. I think I would eat any pie if it had a graham cracker crust. Okay, that's a lie! I do prefer an actual pie crust for things like Cheeseburger Pie (and quiche). But for sweet pies, I don't want pie crust. I'm unbelievably happy with how this recipe turned out. It tastes identical to the one I used to purchase at the store. You can top it with lemon pie filling or blueberry pie filling too. It doesn't absolutely have to be cherry. Although you may not want to call it cherry cream cheese pie if you don't use cherries - haha!

Dark Chocolate Cherry Pudding Cookies #HandCraftedEdibles

 
In an effort to make all of my holiday gifts this year, we are sharing recipes for hand-crafted edibles. Cookies are my go-to treat for the holidays. I have already made an insane amount of cookies this year and I'm still trying to post ones I made last year. So here are a few recent cookie recipes I've posted: Turtle Thumbprint Cookies, Butterscotch Butter Rum Pudding Cookies, and Dark Chocolate Mint Cake Mix Cookies. This recipe is one I came up with last year when I did a Nestle Tollhouse campaign. They had their new filled morsels on the shelves and I excitedly came up with two cookie recipes for them. I am a huge fan of pudding cookies, so I knew that I wanted to make one recipe for pudding cookies out of the filled morsels. When I made these ones, I had my mom-in-law in mind. Each year, we get her some Queen Anne cherry cordials because they are one of her favorite candies. I knew she would love a chocolate & cherry cookie

I used one bag of the Dark Chocolate & Cherry Filled DelightFulls and then some dark chocolate chips. These cookies were so good. They were perfectly balanced. The cherry wasn't too overwhelming. I myself don't really like chocolate and cherry together, and even I loved them.


If you have yet to try the filled morsels - I highly recommend them. They are bigger than the average chocolate chip and they have cherry, peanut butter, mint, and caramel versions.

Once upon a time, I avoided pancakes. Most of the time was sans griddle. My first one worked for a month and then abruptly quit. If I don't make pancakes in a griddle, I mess them up. All sorts of messed up. I'm not even sure why. My pans are nonstick and I know how to make pancakes. Now that I have a working griddle (that hasn't died on me - I swear I'm just not good with kitchen appliances), I've been exploring many variations of pancakes.

Secret Recipe Club: Sweet Cherry Crumble for Four


It's time for yet another Secret Recipe Club reveal day. For those of you wondering, Secret Recipe Club is a group of a couple hundred food bloggers separated into 4 groups. Each month, each blogger gets assigned to a different blog in the group secretly and they make a recipe or two for reveal day. Each group posts on a different Monday - today is Group D's day to reveal what blogs we had and what we made.

This month I was paired with one of Group D's newer members, Melissa of Brooklyn Locavore. Melissa is a marketing professional living with her husband and turtle in Brooklyn, NY. I love that she chooses local over organic. I definitely agree with her perspective on that! I have been going savory the last few months and decided it was time to try a little sweet. Unfortunately, it's not really cherry season here in America anymore - from what I hear that is a very short season and it's usually June. The produce here in upstate New York isn't the best either unless you're buying sweet corn - so I adapted my chosen recipe of Sweet Cherry Crumble for Two.

I used canned cherry pie filling instead of making my own cherry mixture with fresh, pitted cherries. I also used 7 oz. ramekins and separated the cherries into 4 portions. They turned out so well and since Nick is deployed still...I helped myself to what would have been his dessert :)

Pass the Cook Book Club: Cherry Cobbler Pizza


Last month, a few of the bloggers on my blogroll were posting a recipe with something called Pass the Cook Book Club. I was really intrigued and found out that Kita of Pass the Sushi had started a really awesome little club. Basically each month a new cookbook is chosen and members get to choose one recipe from three to make and review.

This month (the second month!) the cookbook was Guy Fieri Food [the one pictured above] and we got to choose between Cherry Cobbler Pizza, Asian Fried Quinoa, and Snake Bite. I decided immediately to go with the Cherry Cobbler Pizza.

Cherry Cheesecake Dip

This recipe has been floating around Pinterest - straight up viral! I know you've seen it!

I wanted to make it for an FRG meeting. It's a super easy thing to make and it is so delicious. Sweet, creamy, and the layers marry together perfectly. Everyone who had it loved it and I cannot wait to try it with blueberries!
