Spicy Chicken & Jalapeno Pizza

It still to this day amazes me that I eat spicy foods now. I eat jalapenos. When I was a kid, I rarely ate bell peppers because I thought they were spicy. I grew up on the mildest mild of food. Medium salsa was so spicy and I couldn't handle it. And now here I am eating jalapeno poppers and buffalo chicken and love all different levels of hot sauce (for the most part).

I love this pizza because it has so many good parts to it. The crust is perfect. I like thicker crusts, so I didn't roll mine out a lot. Although I love red sauce (I use pasta sauce instead of pizza sauce because I like the seasoning better), I prefer pizza with chicken as a protein to have white sauce OR in this case, and oil sauce. It's the perfect complement to chicken. The chicken is seasoned with some magical spices if you ask me. I would absolutely use those on chicken breast as a main dish in a heartbeat. And lastly, I love having the big pieces of cheese instead of shredded. It's like having a stuffed crust but on the actual pizza :) I'm such a huge fan of this pizza and definitely recommend it to anyone who loves spicy food!

What you need:
For the pizza crust:
  • 2 cups all-purpose flour
  • 3/4 cup warm water
  • 1 tsp. yeast
  • 1 tsp. salt
For the chicken:
  • 1 to 2 chicken breasts, diced
  • 1 Tbsp. chili powder
  • 1/2 tsp. chipotle powder
  • 1/4 tsp. salt
  • Ground black pepper
  • 1 Tbsp. olive oil
For the pizza "sauce":
  • 2 Tbsp. olive oil
  • 2 cloves minced garlic
  • Pinch of salt
For the pizza:
  • 1 cup pickled jalapenos
  • 1 cup cubed mozzarella (I cut up mozzarella sticks)
Directions:
  1. For the pizza crust: stir together 1 yeast and warm water until yeast has dissolved. 
  2. Add flour and salt and knead with a mixer or your hands until a ball of dough forms.
  3. Cover and let rise for 1 to 2 hours.
  4. For the chicken: season diced chicken with spices. 
  5. Heat olive oil in a skillet and cook chicken over medium-high heat until done. Set aside.
  6. For the sauce: mix together ingredients and set aside.
  7. Take the pizza crust dough and halve it. Save half for later - I love to freeze mine!
  8. Roll out and then let sit for a few minutes. Roll out again to desired thinness.
  9. Bake in a preheated 400 degree oven for 2 minutes.
  10. Remove from oven and spread a thin layer of "sauce" on top.
  11. Then top with chicken, cheese, and jalapenos.
  12. Bake for 8 to 10 more minutes or until edges begin to brown.

Speaking of not having red sauce on a pizza, I love this Easy Pesto Pizza so very much because the sauce contains my favorite food: pesto! I know the recipe today wasn't pesto, but I'm on a kick and would love to try this Pesto Prosciutto Pizza from The Spiffy Cookie.
