Sugar Cookie Bundt Cake

I love sugar cookies and I love bundt cakes, so I figured I couldn't go wrong making this delicious dessert that combines the two. I also am right most of the time, so, of course, no big surprise when this bundt cake turned out wonderfully. I wish I still had the picture evidence, but I brought this to my mother-in-law's for Sunday family dinner and Nick put it in the car. And buckled it in the front passenger seat! It was the funniest thing ever. I guess I just risk going up and down hills and curves and chance that my cake will be okay. This tastes just like a sugar cookie would in cake form and the frosting was sweet sweet sweet!

What you need:
For the cake:
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 1 tsp. salt
  • 4 large eggs
  • 2 tsp. baking powder
  • 3 cups all-purpose flour
  • 1 cup half and half
  • 1 tsp. vanilla extract
For the frosting:
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • Pinch of salt
  • 3 tsp. half and half
  • 1/4 to 1/2 cup sprinkles
Directions:
  1. For the cake: in a stand mixer, beat together butter and sugar until light and fluffy.
  2. Add salt. Then add eggs, one at a time, mixing until each egg is incorporated. Add baking powder. 
  3. Then alternate adding flour with half and half, starting and ending with the flour, mix until just combined. Add vanilla.
  4. Pour batter into a greased bundt pan and smooth with a spatula.
  5. Bake in a preheated 350 degree oven for 55 to 60 minutes or until a toothpick inserted comes out clean.
  6. Let cool in pan for 5 minutes. Then turn cake out onto a wire rack and cool completely.
  7. Once cake is almost cooled, make frosting by beating cream cheese with butter until smooth and creamy.
  8. Add powdered sugar 1 cup at a time. Then add half and half until you reach spreadable consistency.
  9. Move cake to a serving platter and then spread frosting on top gently. Top with sprinkles.
