This meatless scramble has so many fresh ingredients in it - it's the perfect morning food!
This recipe had me at scramble...because I LOVE scrambles. I've been eating lots of them lately, especially tossing leftovers into scrambles. It's either that or omelets and, to be honest, I'm still not the most proficient in making omelets. This scramble is meatless and has kale, peppers, and green onions. Plus FRESH HERBS. I have so much basil from my Aerogarden that I just relish in any opportunity to use it. I hope to make this scramble often and I would definitely love to try some crumbled feta next time!

What you need:
- 2 cups chopped kale
- 1 cup sweet bell pepper (any color), diced
- 1/2 cup onion, diced
- 1/2 tsp. seasoning salt
- 3 to 4 eggs
- 1 Tbsp. butter
- 1 green onion, sliced
- Salt and pepper
- Shredded or crumbled cheese of choice
- Fresh herbs (optional)
- Heat half of the butter in a skillet over medium high heat. Saute kale, bell pepper, and onion for 3 to 4 minutes. Season with seasoning salt.
- Push veggies over to one side of the skillet and add other half of butter. After butter has melted, add eggs and stir until cooked.
- Season with salt and pepper to taste. Serve with green onion, cheese, and fresh herbs.
