You'll definitely start your morning off right with this hearty steak hash with a creamy, spicy cheese sauce!
Is there anything better than a savory breakfast? I think hashes are good for lunch or dinner too, but what a wonderful way to start the day. A hearty, filling hash with steak, eggs, potatoes, and a creamy Pepperjack sauce - there really is no beating that! I wanted seconds and thirds of it and I was so happy to have some leftover Pepperjack sauce because it is good on a myriad of things - especially a burger.

What you need:
For the hash:
- 4 cups cubed red potatoes
- 1/2 onion, diced
- 1 green bell pepper, diced
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- Salt and pepper
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 1 Tbsp. all purpose flour
- 2/3 cup milk
- 2/3 cup shredded pepperjack cheese
- 2 1/2 cups steak, cubed and cooked
- 6 eggs, cooked in desired method
- For the hash: In a skillet, heat butter and olive oil over medium-high heat. Add potatoes, onions, and green bell peppers until potatoes are fork tender, stirring often.
- For the pepperjack sauce: When potatoes are almost done, start making the sauce, by heating butter and olive oil in a small skillet over medium heat.
- Once butter has melted, add flour and stir.
- Add milk slowly while continuously whisking.
- Then stir in cheese and continue to stir until cheese has melted.
- Add cooked steak to potatoes. Cook for about 2 minutes until steak has heated through.
- Season with salt and pepper, to taste.
- Serve hash topped with eggs and smothered with sauce.
