Mediterranean Meatball Gyro Sandwiches #FantasticalFoodFight

This month's Fantastical Food Fight theme is 30-MINUTE MEALS. I tasked my blogging friends to share a fabulous dinner recipe that can be on the table in 30 minutes or less, so that all those parents out there with back-to-school in full swing (or about to be) are prepared with lots of quick recipes for those busy school nights.


My choice was easy peasy because I had already made it a handful of times and hadn't gotten around to blogging it quite yet. These Mediterranean meatball gyro sandwiches are perfect for a quick meal and they are so packed with the best foods ever. The meatballs are pretty standard meatballs with a little bit of cumin added. The tomato and cucumber salsa is to die for. I just love it. And honestly, tzatiki sauce might just be the new pesto for me. I have been craving it like crazy. This particular one contains a little grated cucumber. All of this is served on flatbread (we chose naan). It's classic Mediterranean flavors in a super easy recipe that will definitely be ready in under 30 minutes. I balance it out by making the meatballs first and then while they cook, I make the salsa and sauce.

What you need:
For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1/4 cup grated cucumber
  • 1 tsp. minced garlic cloves
  • 1 tsp. EVOO
  • 1 Tbsp. fresh dill
  • 1/2 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. fresh lemon juice
For the Meatballs:
  • 1 lb. ground beef
  • 1/4 cup Italian breadcrumbs
  • 1 large egg
  • 2 Tbsp. Italian parsley, chopped
  • 1 Tbsp. minced garlic cloves 
  • 1/2 tsp. ground cumin
  • 1/2 tsp. sea salt
  • 1/4 tsp. black pepper
For the Cucumber Salsa:
  • 1 cup diced cucumbers
  • 1 cup diced tomatoes
  • 1/2 cup finely diced red onion
  • 1 Tbsp. Italian parsley, chopped
  • Salt and pepper
For the Sandwiches:
  • 4 flatbreads
Directions:
  1. For the tzatziki sauce: mix together all ingredients. Cover and refrigerate.
  2. For the meatballs: Mix together all ingredients.
  3. Form into meatballs and place on a foil-lined, lightly greased baking sheet.
  4. Bake in a preheated 425 degree oven for about 10 to 15 minutes or until no longer pink inside.
  5. For the salsa: While the meatballs cook, mix together all ingredients.
  6. Heat the flatbreads according to package directions.
  7. To assemble: Place four or so meatballs down the center of each flatbread. Top with Tzatziki sauce and top with cucumber salsa.
