Bacon Cheeseburger Tatortot Casserole

Yum doesn't even begin to cover this variation of a classic tatortot casserole!

I have made tatortot hotdish a whole lot in my many years as an adult. It was one of my favorite meals when I was a kid and I have loved how the internet has provided a place for people to share variations of what I knew to be "classic" tatortot hotdish. This recipe is one of those and it is FANTASTIC. The original recipe did not call for toppings, but if I eat a bacon cheeseburger, I want the works on it and so we topped ours with ketchup, mustard, and pickles. It was the perfect touch to this already wonderful recipe!

What you need:
  • 1 1/2 lb. ground beef
  • 1 pkg. bacon bits
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tatortots
  • 1 can (10.75 oz) condensed cheddar cheese soup
  • 16 oz. sour cream
  • Ketchup, mustard, and pickles for serving
  1. Cook ground beef in a large skillet over medium high heat. Drain if needed.
  2. In a large bowl, combine ground beef, bacon, cheddar cheese, tatortots, cheese soup, and sour cream.
  3. Spread into a lightly greased 9x13-inch baking pan.
  4. Bake in a preheated 350 degree oven for 45 to 50 minutes or until bubbly.
  5. Top with ketchup, mustard, and pickles, if desired.

This Tater Tot Enchilada Bake from The Country Cook looks incredible too with enchilada sauce, pepper jack cheese, and black olives! The last new tatortot recipe I tried was this Tatortot Italian Sausage Breakfast Casserole recipe that I shared for the September Food Fight - it has two pounds of Italian sausage and chive cream cheese that makes it my favorite breakfast casserole of all time.
