Food Cart Inspired Chicken

This Food Cart Inspired Chicken is perfect for summertime with the lemon garlic chicken - veggies and a delicious yogurt sauce!


I am not sure what kind of food cart food this is supposed to be (Greek, Mediterranean?) but I'm on board with it. I love a yogurt sauce that's similar to tzatziki and having cucumber, tomato, and onion with it. I love this lemon garlic chicken too - it paired with everything so well. YUM!

What you need:
For the chicken:
  • 3 boneless, skinless chicken breasts 
  • Juice of 1/2 a lemon
  • 2 cloves minced garlic
  • 1 1/4 tsp. cumin
  • 1 tsp. olive oil
  • 1 tsp. salt
  • 1 tsp. oregano
  • 3/4 tsp. paprika
  • 1/2 tsp. turmeric
For the white yogurt sauce:
  • 1 cup plain Greek yogurt
  • 2 Tbsp. mayonnaise
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/8 tsp. black pepper
For the salad:
  • 6 cups iceberg or romaine lettuce, chopped
  • 2 to 3 roma tomatoes, diced
  • 1/2 small red onion, thinly sliced
  • Hot sauce
Directions:
  1. For the chicken: Place chicken in a large zipper bag with lemon, garlic, cumin, olive oil, salt, oregano, paprika, turmeric. Marinate for at least 15 minutes.
  2. For the white yogurt sauce: Combine all ingredients and refrigerate.
  3. Cook chicken in a skillet or on the grill until browned on both sides and cooked through.
  4. Set aside to cool and then chop into thin strips.
  5. Assemble salad by dividing up lettuce, tomato, and red onion. Top with chicken and drizzle with yogurt sauce and hot sauce.
