It's unbelievable that this fried chicken is so crisp because it's baked in the oven!
I love fried chicken and I never thought there could be so many different ways it could be made. I've also made "fried chicken" in the oven before too, but this recipe is still different. I really liked this recipe with panko and the seasonings. We typically do fried chicken with collard greens, corn or macaroni and cheese, and biscuits, but I believe when I made this, Nick was away in training in Georgia for 6 weeks and I could not eat all the collard greens by myself. The older kids will eat them, but are not near as obsessed with them as me and don't like them as much as Nick does.
What you need:
- 3 to 4 chicken breasts, cut into strips
- Buttermilk
- 4 to 5 Tbsp. unsalted butter, melted
- 3/4 cup all purpose flour
- 1/2 cup Panko breadcrumbs
- 1/2 tsp. salt
- 1 Tbsp. seasoning salt
- 1/2 tsp. pepper
- 2 tsp. paprika
Directions:
- Soak chicken strips in buttermilk for 15 to 30 minutes.
- On a baking sheet, add a piece of parchment paper and brush with all of the melted butter.
- In a zipper bag, mix together flour, Panko, salt, seasoning salt, pepper, and paprika.
- Drain chicken and place in bag with dry ingredients. Shake to coat.
- Place chicken on baking sheet and bake in a preheated 425 degree oven for 10 minutes.
- Flip each piece of chicken over gently and bake for an additional 10 minutes.
- Check for doneness and bake for 5 more minutes if needed.
- Remove to a paper towel lined plate, then serve.
