Countdown to 2022: Best Main Dishes

Counting down the best main dish recipes of 2021 to ring in the new year!

Main dishes is where I shine and by that I mean, I post a lot of main dishes because I make a lot of main dishes. In 2021, I have made very few breakfast and desserts so I know here in a year or so (depending on how quick I can get back on a regular posting schedule) when I'm posting 2021 recipes, it's going to be slim pickings for the Countdown. I'm still trying to post 2020 recipes. Anyways, please enjoy what I deem the best main dish recipes I posted in 2021.

  1. Greek Meatball Bowls - I'm obsessed with Mediterranean food and it's been going on for a good bit now. I love this bowl recipe - the meatballs are SO good. They actually have crushed pork rinds in them which I thought I would hate but really adds a super interesting texture.
  2. Prado's Flatbread Copycat - Nick hasn't gone to San Diego in a bit but because I love copycats, I love to recreate foods he sends me pictures of. I made two different kinds of the flatbread pizza from Prado's in San Diego.
  3. Baked Chicken with Tomatoes, Chillies, and Basil - This recipe really knocked our socks off because of those chillies! They were so great in addition to the tomatoes and basil.
  4. Four Cheese Garlic White Cream Pasta - My family loves alfredo and we eat it frequently enough. This recipe was really good with FOUR cheeses.
  5. Cheesecake Factory Cashew Chicken Copycat - I've still not been to Cheesecake Factory but I may be getting the cashew chicken when I get around to going because this was great!
  6. Asparagus, Bacon, and Herbed Cheese Pizza - I don't really get to eat a lot of veggie pizza because it usually has a ranch or cream cheese base. I got away with this one because it is herbed cream cheese and ASPARAGUS AND BACON. It was so good and savory.
  7. Crazy Crust Pizza - This is called crazy crust because the crust is liquid and you put the meat on it and then bake. THEN you put on the sauce and cheese and other toppings and bake again. It's really quite fantastic.
  8. Ultimate Bangers and Mash - I did not ever expect to like this. I am a huge fan of Jenna Marbles and found Julien through her. Way back when he posted vegan Bangers and Mash and honestly the onion gravy was the sole reason for me making it. I don't like brats/bangers but I actually did like this recipe which really surprised me. It's honestly one of my favorites.
  9. Korean BBQ Beef Bowls with Veggies - This is a very colorful recipe with all the veggies and easily made my favorites list. The beef is full of lots of flavor. Also it's a bowl recipe which I've been enjoying this year.
  10. Easy Cheesy Sausage Pesto Ring - I made this recipe in our new house and we were all very impressed by it. I haven't always had the best luck with savory bundt pan recipes but this one was a winner. It was also during the timeframe of pandemic where food was a hit or miss whether you could find certain things or not.
