You can't go wrong with classic peanut butter cookies!
Every once in a while, I really love a good classic peanut butter cookie. I'm not sure honestly what else can be said about these. They are pure nostalgia!What you need:
- 1 1/4 cups all purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- Pinch of salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup peanut butter
- 1/2 cup light brown sugar
- 1/3 cup granulated sugar
- 1 egg
- 1 tsp. vanilla
- Extra granulated sugar for rolling
Directions:
- Whisk together flour, baking soda, baking powder, and salt. Set aside.
- In a mixer, beat butter until smooth and creamy. Add peanut butter and beat for 1 minute.
- Add both sugars and beat for an additional 3 minutes. Scrape sides as needed.
- Add egg and vanilla. Beat until just combined.
- With mixer on low, add dry ingredients gradually and mix until just combined.
- In a small bowl, pour a little granulated sugar into it.
- Roll dough into tablespoon sized balls and then roll in sugar to coat.
- Place on a silicone mat or parchment paper-lined baking sheet about 2 inches apart.
- Press a fork on each ball to press down and then turn and press down again to make a criss cross pattern.
- Bake in a preheated 350 degree oven for about 10 minutes or until golden brown.
- Cool on baking sheet for a few minutes and then remove to a wire rack to cool completely.
