One Pot Creamy Pesto Chicken Pasta

Pesto lovers unite with this quick one pot pasta meal!

I love a meal in one pot and I love quick fixes for weeknights. I probably have a few recipes that are similar to this one but I really did enjoy the addition of spinach and sun dried tomatoes. I love pesto anything so this was definitely going to be a keeper!

What you need:

  • 1 lb chicken breast, cut into 1-inch pieces
  • 2 Tbsp. unsalted butter
  • 2 cloves minced garlic
  • 1/2 lb. penne pasta
  • 1 1/2 cups chicken broth
  • 1 cup milk
  • 3 oz. cream cheese, cut into smaller pieces
  • 1/3 cup basil pesto
  • 1/4 cup shredded Parmesan
  • Ground black pepper to taste
  • 1 pinch crushed red pepper flakes
  • 3 cups baby spinach
  • 1/4 cup sliced sun dried tomatoes

Directions:

  1. Add butter to a deep skillet and melt over medium heat.
  2. Add chicken to the skillet and cook over medium heat until chicken is slightly browned.
  3. Add garlic to skillet and saute for one more minute.
  4. Add pasta and chicken broth to the skillet. Cover and turn up heat to medium high.
  5. Bring to a boil, then stir. Cover again and turn heat to medium-low.
  6. Simmer for 8 minutes or until pasta is tender and most of the broth has been absorbed. Stir the pasta every few minutes and replace the lid quickly each time.
  7. Add milk, cream cheese, and pesto. Stir and cook over medium until cheese has fully melted.
  8. Add Parmesan and stir until combined.
  9. Add spinach and sun dried tomatoes. Stir until wilted.
  10. Top with black pepper and red pepper flakes and serve.
