Pesto lovers unite with this quick one pot pasta meal!
I love a meal in one pot and I love quick fixes for weeknights. I probably have a few recipes that are similar to this one but I really did enjoy the addition of spinach and sun dried tomatoes. I love pesto anything so this was definitely going to be a keeper!What you need:
- 1 lb chicken breast, cut into 1-inch pieces
- 2 Tbsp. unsalted butter
- 2 cloves minced garlic
- 1/2 lb. penne pasta
- 1 1/2 cups chicken broth
- 1 cup milk
- 3 oz. cream cheese, cut into smaller pieces
- 1/3 cup basil pesto
- 1/4 cup shredded Parmesan
- Ground black pepper to taste
- 1 pinch crushed red pepper flakes
- 3 cups baby spinach
- 1/4 cup sliced sun dried tomatoes
Directions:
- Add butter to a deep skillet and melt over medium heat.
- Add chicken to the skillet and cook over medium heat until chicken is slightly browned.
- Add garlic to skillet and saute for one more minute.
- Add pasta and chicken broth to the skillet. Cover and turn up heat to medium high.
- Bring to a boil, then stir. Cover again and turn heat to medium-low.
- Simmer for 8 minutes or until pasta is tender and most of the broth has been absorbed. Stir the pasta every few minutes and replace the lid quickly each time.
- Add milk, cream cheese, and pesto. Stir and cook over medium until cheese has fully melted.
- Add Parmesan and stir until combined.
- Add spinach and sun dried tomatoes. Stir until wilted.
- Top with black pepper and red pepper flakes and serve.
