Baked Potato Skins

Homemade baked potato skins are very easy. I would say much cheaper than premade and you can make mashed potatoes out of it as well. So you get 2 sides out of 1 recipe!

What you need:
  • 3 Russet potatoes
  • 3 slices of bacon
  • Light sour cream
  • Grated cheddar cheese
  • Green onions, chopped
  • Salt and pepper, to taste
Directions:

Rinse and scrub potatoes; pat dry. Bake at 400 for an hour or until tender. Cool for 5 to 10 minutes.
Cut potatoes in half and scoop out most of the inside (you can make that into a small batch of mashed potatoes) of the potato.Cook bacon and drain on paper towel. Chop into small pieces.
Brush potato skin with oil and lightly season.
Bake for 5 minutes at 400.
Flip them over and sprinkle cheese and bacon on top. Bake at 400 until cheese is melted.

Top with green onions, sour cream, etc.
