Crockpot Chicken Fajitas

 These were very good! Definitely a keeper for busy days :)

What you need:
  • 2 lb. chicken breasts, sliced
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 lg. yellow onion
  • 2 tbsp. chili powder
  • 2 tbsp. cumin
  • 1/2 tsp. salt
  • 1/2 cup chicken stock*
  • juice of one lime
Directions:
Slice onion and peppers into half circle slices.
Layer in crockpot with sliced chicken.

Add chicken stock and seasonings. Squirt lime juice over chicken.

Cover and cook on low for 6 hours.
Serve with tortillas, cheese, sour cream, guacamole, tomatoes and lettuce.
*Next time I want to try 1/4 cup chicken stock to see if the end result will be less soupy and I'll probably stir the seasonings into the stock as well.
