What you need:
Streusel:
- 1 1/4 cups flour
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 cup brown sugar
- 1/4 tsp. salt
- 1/2 cup butter, softened
- 1/2 cup chopped pecans
- 1 3/4 cups flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 cup sugar
- 1 1/2 cups buttermilk
- 2 eggs
- 2 tsp. vanilla
- For the Streusel: Stir flour, cinnamon, nutmeg, sugar, and salt together in a bowl. Add butter and mix until well combined. Stir in pecans.
- Clump on a baking sheet, breaking up into smaller bits. Bake at 25 to 30 minutes.
- Cool and break into smaller pieces as needed.
- For the Pancakes: Whisk flour, powder, soda, salt, and sugar together in a bowl. Make a well in the center.
- Add buttermilk, eggs, and vanilla. Mix until just combined.
- Bake 1/3 cup batter on a griddle topped with 2 tbsp. streusel until top is bubbly.
- Flip and cook until browned.
