Truth be told, I can be a little snobby with foods. Velveeta is one of those foods that I'm not really a big fan of. I don't like how fake it tastes. I do love a good nacho cheese sauce, but if I think about what I'm eating I will lose my appetite. This recipe immediately had my attention when I saw there was no weird processed fake stuff in it. You have to eat it warm or perhaps keep it in a fondue warmer. That thing exists, right?

What you need:
- 8 oz. sharp cheddar
- 1 Tbsp. cornstarch
- 1 can evaporated milk
- 2 tsp. hot sauce
Directions:
Toss the cheddar cheese with the cornstarch and add to a medium saucepan.
Add 1 cup milk and hot sauce.
Cook on low for about 5 minutes.
Use excess milk to thin to desired consistency. Serve immediately.

I'm snobby about Velveeta too. I don't like it. I also am not crazy about evaporated milk, but I'm seeing it more & more.
