Who needs fajitas in a tortilla when you can have all the fixings on a bed of nachos!
I love beef fajitas and I love nachos. I took an older recipe from the archives that used steak for a steak fajita feel. I have always disliked how the steak falls off of the chips so easily though and decided...you know what...I'm using ground beef. I also diced the bell peppers and onion instead of slicing them into strips. These changes made the nachos so much easier to eat and I appreciated that so freaking much. I kept it simple and topped mine with just sour cream, but jalapenos, pico de gallo, and guacamole would all be awesome on top too.

What you need:
- 1 lb. ground beef
- 1 packet fajita seasoning mix
- 1 small yellow onion, diced
- 1 green bell pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- Olive oil
- Tortilla chips
- 8 oz. shredded Colby jack cheese (or more, if desired)
- Optional toppings: Sour cream, sliced jalapenos, salsa, guacamole, pico de gallo
- In a large skillet, heat 1 Tbsp. oil over medium to medium-high heat. Saute bell peppers and onion until tender.
- Meanwhile, brown and crumble ground beef in a large skillet over medium-high heat. Add fajita seasoning and a little water; reduce heat to low and simmer for about 5 minutes.
- Arrange tortilla chips on a large baking sheet and top with cheese. Place under a broiler until cheese has melted.
- Top with ground beef, veggies, and optional toppings. Serve immediately.
