Fried Pickle Burgers

Add a little crunch to your burger with delicious fried pickles!

Fried pickles have been an obsession of ours for the last few years after having discovered how delicious Zaxby's fried pickles were. Though we also discovered they were "seasonal" and Zaxby's hasn't had them for a while. The reps on Zaxby's Facebook page told me they have no plans to bring them back at this time. WHICH IS GARBAGE. But it's also forced me to try and come up with a copycat (which hasn't been very successful since I cannot compare it directly with Zaxby's because they haven't sold them since 2016).

It hasn't stopped us from trying multiple recipes. This one for the burgers is probably the closest to Zaxby's in that it has a cornmeal breading. Still slightly different, but man, I'll take it. It's a great addition to the burger! Fun change of pace from just regular pickles, plus you end up with a ton of leftover to serve up on the side. They are wonderful to dip in the burger sauce :)

What you need:
For the burger sauce:
  • 1/2 tsp. garlic powder
  • 1/4 cup ketchup
  • 1/2 cup mayonnaise
  • 1/4 cup diced pickles
  • 1 tsp. Worcestershire sauce
For the fried pickles:
  • 1/2 cup buttermilk
  • 1 jar dill pickle chips
  • 1 1/2 cups cornmeal
  • 1/2 cup flour 
  • 1 tsp. pepper
  • 1 tsp. cayenne pepper
  • Oil for frying
For the burgers:
  • 2 lb. ground beef
  • Salt and pepper, to taste 
  • Lettuce
  • Hamburger buns
  • American cheese
Directions:
  1. In a small bowl, mix together burger sauce ingredient and chill in refrigerator.
  2. Form beef into 6 to 8 patties and set aside.
  3. For the pickles: place buttermilk in a bowl. Then add cornmeal, flour, pepper, and cayenne in a separate bowl.
  4. Drain pickles and pat dry. Dip pickles in milk and then cornmeal mixture.
  5. Heat an inch of oil to 375 degrees. Cook until golden brown on each side. Remove to a paper towel lined plate.
  6. Meanwhile, cook burgers until done, flipping once.
  7. Serve burgers with cheese, lettuce, burger sauce, and fried pickles.

The mix of beef and chorizo in these Cowboy Tumbleweed Burgers is just amazing. I also love Texas Roadhouse Fried Pickles just as much as Zaxby's and I really really want to try this copycat recipe from All She Cooks.
