These grilled cheese sandwiches are hands-down my favorite with loads of melty mozzarella cheese and fresh basil and tomatoes.
I don't make grilled cheese sandwiches often but I couldn't pass this one up! I love caprese anything. If a recipe says basil, I'm in, but I adore basil with mozzarella and tomatoes. I loved that this particular recipe was made on a griddle. It's so nice to be able to cook many sandwiches at a quicker pace. Serve these sandwiches up with a little balsamic vinaigrette for dipping and you have the perfect caprese flavor in every bite!

What you need:
- Good-quality bread
- Fresh mozzarella cheese, sliced
- Fresh basil leaves
- Cherry tomatoes, halved
- 1 tsp. garlic powder
- 2 Tbsp. melted butter
- Balsamic vinaigrette, for dipping
- Stir together butter and garlic powder. Brush the outside of the bread with the butter.
- Place butter side of bread down on a preheated 350 degree griddle.
- Top one side of each "sandwich" with a slice of mozzarella, cherry tomatoes, and fresh basil.
- Once cheese has melted, top each melted cheese side with a blank piece of bread.
- Serve with balsamic vinaigrette for dipping.
I also adore BLTs and could make only this Roasted Tomato BLT with Basil Mayo recipe for the rest of my life. I think this Bacon Double Cheeseburger Grilled Cheese from Closet Cooking looks like it would be the best of both worlds.
